A charming wine was brought by a beautiful mistake

More than 200 years ago, a winery in Germany encountered a sudden frost. The farmers used the frozen grapes to make wine as their traditional way in order to reduce their loss. Who would expected this created a special wine with very special taste. This is the born of Icewine.

A charming wine was created under a beautiful mistake.

Nowadays, Icewine is a special product from only Canada, Germany and Austria. It is the Rolls-Royce of wines, and called “Liquid gold”.

Due to the proper climate, Ontario’s Niagara Peninsula and BC’s Okanagan in Canada are best places for making Icewine. Canada is also the only country who can make Icewine every year.

1. History of Icewine

It is believed that the first post-Roman icewine was made in Franconia in Germany in 1794. Better documentation exists for an ice wine harvest in Dromersheim close to Bingen in Rheinhessen in 1830. The grapes were of the 1829 vintage. That winter was harsh and some wine-growers had the idea to leave grapes hanging on the vine for use as animal fodder.

There are indications that frozen grapes were used to make wine in Roman times. Pliny the Elder wrote that certain grape varieties were not harvested before the first frost occurred. The poet Martial recommended that grapes should be left on the vine until November or until they were stiff with frost.

When it was noticed that these grapes yielded very sweet must, they were pressed and an Icewine was produced.

2. Production and Price of Icewine

The story of Icewine sounds very romantic: When grapes are fully ripe, people use a net to wrap them, and wait for the first frost of the year with patient. When the grapes were frozen, people pick them off during night, squeeze these grapes, and prepared to make sweet Icewine.

To guarantee the quality, the real Canadian Icewine has to follow VQA (Vintners Quality Alliance) standards in Canada. One of the most important standard is Icewine must be made naturally, no artificial frozen is allowed. This makes it extremely difficult to make Icewine. Howerver, grapes used to make Icewine is the last group in the tree, people have to think out ways to protect them from stolen by birds and other animals.

The cold winter and warm summer make Ontario the only place where Icewine could be made every year (There is a Icewine year in Germany every 3-4 years.). Special climate and strict standards make Icewine in Ontario the best all over the world. Methods to make Icewine has once become a secret, this also give a price of more than CA$20 for a 200ML icewine. A normal 375ML VQA Icewine would be at more than 600 RMB in China. It is suspected if a price of a bottle of Icewine is lower than 450 RMB.

How to set the price? Timing and temperature are critical for making Icewine. The best temperature should be between -10℃ to -13℃ for the best sugar and taste.

The grapes must be picked off manually with carefulness. A whole tree of grapes may only make one bottle of Icewine, this is also the reason why it is so expensive and normally sold in only 375ML or 200ML.

3. Types of Grapes Used for Making Icewine

Riesling Icewine is in Gold, it has a strong smell of mango. You can taste the sweet of apricot and apple, followed by sour of orange. Riesling is the typical grapes used for making Icewine, considered to be the most noble variety by German winemakers.

Vidal Icewine is in Gold too. It has a combined fragrant of apricot, honey, peach and litchi. Its taste is very mellow with tropical fruits and orange. Vidal is highly popular in Ontario, Canada.

Cabernet Franc Icewine is in rose color, smells like a mixture of strawberry, cranberry and cherry. The taste of pepper balances its sweetness, makes it thicker, richer.

Cabernet Sauvignon Icewine is in ruby red, the color is transparent, has the fragrance of blackberry, black strawberry and raspberry. It tastes strong and complicated, the sour and sweetness reach a perfect balance. It is always treated as aperitif or desert after a meal.
