Chocolate Chip Cookie Recipes• Ingredients: • 3/4 cup sugar • 2 1/4 cups all-purpose flour

• 3/4 cup packed brown sugar • 1 teaspoon baking soda • 1 cup butter, softened • 3/4 teaspoon salt • 2 large eggs, beaten • 2 cups semisweet chocolate chips • 1 teaspoon vanilla extract • if desired, 1 cup chopped pecans

Chocolate Chip Cookie Recipe Directions

• Preheat oven to 375 degrees.  • Mix sugar, brown sugar, butter, vanilla and eggs in a large bowl by hand.  • Stir in flour, baking soda, and salt.  The dough will be very stiff.  • Stir in chocolate chips and pecans if desired.  • Drop dough by rounded tablespoonfuls 2 inches apart onto ungreased cookie sheet.  • Bake 8 to 10 minutes or until light brown.  The centers will be soft.  • Let cool completely then remove from cookie sheet.

Apple Coffee CakeIngredients for Filling:

1/3 cup sugar

1 Tablespoon cinnamon

2 ¼ apples

Ingredients for Cake:

4 cups flour

2 cups sugar

2 teaspoons baking powder

1 teaspoon salt

5 eggs, lightly beaten

1 teaspoon vanilla

confectioners sugar for dusting

• Preheat oven to 350 degrees. Lightly grease a ring cake pan. • Toss sugar, cinnamon, and apples. Set aside.• In a bowl with an electric mixer, combine flour, sugar, baking powder, and salt. Add eggs,

oil, orange juice, and vanilla; beat at low speed for 1 minute. Spoon 1/3 of batter into pan. Add 1/2 the apple mixture. Add another third of the batter, layer the rest of the apples, and top with remaining batter.

• Bake at 350 degrees for 65 to 70 minutes. Let cool before removing from pan. A long, thin knife or spatula may be needed to pull cake from sides of pan. Back to the third page

New York Cheese Cake• Ingredients: 2 vanilla beans 1 cup all-purpose flour 1/4 cup granulated sugar

• 1 teaspoon grated lemon peel 1 large egg yolk 1/2 cup butter

• 1/4 teaspoon salt 5 (8-ounce) packages cream cheese 1 3/4 cups granulated sugar

• 3 tablespoons all-purpose flour 1 1/2 teaspoons grated orange peel 1 1/2 teaspoons grated lemon peel

• 1/2 teaspoon vanilla extract 5 large eggs 2 large egg yolks 1/4 cup heavy cream

Split 2 vanilla beans lengthwise; scrape the seeds into a medium bowl, and stir in 1 cup flour, 1/4 cup sugar, and 1

teaspoon grated lemon peel. Add in one egg yolk, diced butter, and salt. Knead the mixture until it just forms dough.

Flatten the dough into a round and chill, wrapped in wax paper, for 1 hour.

• Remove the sides of a 9-inch spring form pan, and lightly oil the bottom of the pan. Press two-thirds of the dough, about

1/8-inch thick, onto the bottom of the pan. Bake in a 400°F (205°C) oven for 10 to 12 minutes, or until golden brown;

remove from oven and chill.

• Meanwhile butter the sides of the pan, attach to the bottom, and press the remaining dough, 1/8-inch thick, to the side,

sealing to the bottom crust. Set aside.

• In a large bowl, cream together cream cheese with 1 3/4 cup sugar, slowly add in 3 tablespoons flour, grated orange peel.

1 1/2 teaspoon grated lemon peel, and vanilla until the mixture is smooth. Gradually add in eggs and 2 additional egg

yolks, one at a time, beating lightly after each addition. Stir in cream. Pour the filling into the prepared crust and bake in a

500°F (260°C) oven for 12 minutes. Reduce temperature to 200°F (95°C) and bake for 60 minutes more. Cool in the pan

on a rack. Chill, and then remove the sides.

Chocolates WafflesMakes about 10 waffles

 Ingredients: 4 tablespoons butter 1 tablespoon plus 2 teaspoon sugar

2 oz, semisweet chocolate 2 eggs, separated

1 1/2 cups all- purpose flour 1 1/4 cups milk

1 tablespoon baking powder Melted butter 

To serve:• Whipped cream, ground cinnamon, strawberries•  Melt butter and chocolate; cool• Sift flour and baking powder into a large bowl. Stir in sugar. Make a well in center; add egg

yolks and mix thoroughly. Gradually add milk, alternating with chocolate and butter mixture. Beat thoroughly.

• In a bowl, whisk egg whites until stiff but not dry. Fold egg whites gently into chocolate batter.• Brush a waffle iron with melted butter and set on medium heat. Pour in a small amount of

batter and close waffle iron.• Cook about 1 minute on each side or until both sides of the waffle are crisp and golden

brown.• Top with whipped cream, sprinkle with cinnamon, and serve hot with strawberries if desired.
