Ingredients: 8 cups of cooked Sushi rice (sticky rice) 2 cups = 30 pieces (found at the Real Canadian Superstore)
Avocado cut into thin slices
Cucumber cut into thin slices
Carrots cut into thin slices
Mango
Optional:
Seaweed paper (Nori) and Sesame seeds
Soy sauce
Wasabi
Directions: 1. Cook rice according to package directions. 2. Prepare ingredients by slicing all vegetables into thin pieces. 3. Place a sheet of parchment paper or plastic wrap over a hand cloth/towel. Spread cooked
rice in a large rectangular shape over the parchment paper. At the end of one side of the rice rectangle, place a line of vegetables of your choice and slowly begin to roll the towel pulling tightly so that everything holds together. 4. Once done, slice your roll in half and place the two halves next to each other and continue to slice 1/4 of an inch pieces.
5. Top with thinly sliced pieces of avocado, and serve with soy sauce.
