Fishermans Tale Cod
This weeks fish is the ever-popular Atlantic Cod. Atlantic cod is found on both sides of the
Atlantic Ocean. In U.S. waters, cod is most common on Georges Bank and the western Gulf
of Maine. Adult cod live near the ocean floor along rocky slopes and ledges. They prefer to
ive in cold water at depths of around 30 to 500 feet on bottoms with coarse sediments,
rather than on finer mud and silt.
Adult Atlantic cod are heavy-bodied and have a large head, blunt snout, and a distinctbarbel (a whisker-like organ, like on a catfish) under their lower jaw. Their coloring varies,
often changing depending on bottom habitats, but they usually have many small spots and a
pale lateral line (the faint line that runs lengthwise down each side of the fish, from around
the gill covers to the base of the tail).
Atlantic cod has a mild, clean flavor and large flakes. Its less firm than haddock and
sweeter than Pacific cod. When raw, the meat is translucent, ranging from white to pinkish
in color; when cooked, it is opaque white.

Cod is an excellent source of protein and selenium. It is also a very good source of vitamin
B6 and phosphorus. In addition, cod is a good source of omega-3 fatty acids, vitamin B12,
potassium, and niacin.
Rather than frying up this delicious and mild fish, try ahealthier version of the
traditional Fish & Chips. (Or even better, try out the Beet & Sweet Potato Fries in the
recipe below to punch up the nutrition even more).
Nutritionist Note Beets
The wild beet, the ancestor of the beet we are used to eating today, existed since prehistoric
times in North Africa. Although people were only eating the stems and leaves then, it was
the ancient Romans who began cultivating beets for their roots. With color ranging from
yellow to crimson red and dark purple, these colorful root vegetables contain powerful
nutrients that help protect us against heart disease, birth defects and colon cancer.

When choosing beets, look for small or medium-sized beets with firm, smooth-skinned and
deep in color roots. Signs indicating spoiled beets include spots, bruises or soft, wet areas.
Remember do not wash beets before storing. Place in a plastic bag and wrap the bag tightly
around the beets, squeezing out as much of the air from the bag as possible, and place in
refrigerator where they will keep for up to 3 weeks.
