Effective Dec 1, 2016, calories and specific statements regarding calories must be posted for all menu and beverage items for any served or self-service stations, vending, and/or catering on all printed signage, menu boards, and menus
Additional written nutritional information must be available upon customer request including the following nutrients: calories, calories from fat, total fat, saturated fat, trans fat, cholesterol, sodium, carbs, fiber, sugar, and protein
NML will not affect K-12, patient, or correctional food service programs, as these are regulated by other organizations
Compliance will be monitored by state or local health inspectors, with noncompliance resulting in enforcement ranging from warning letters to monetary fines. Health inspector enforcement is expected to start in May 2017
The Big 3
1. Replace Menu Boards
Log on to the NML Portal in The Market (www.aramark.net/themarket)
Edit menu templates, order, and install
2. Print & Place Menu Signage
Edit menu templates in The Market, print, and place in serving areas at each served or self-service station
3. Maintain Written Nutrition Information On-Site
Print nutrition information for all menu items in The Market
Maintain on-site, assuring it’s readily available to all associates
Provide information upon customer request

Calories and consumer information statements on menus and menu boards and
calories visible prior to purchase for products sold in vending machines.

Types of locations and foods covered by the law::

Covered by the NML law - Calorie Labels Required
Standard Menu Items routinely included on a menu
Combination Meals consisting of multiple food items e.g. Sandwich, chips and a beverage
Variable Menu Items that come in multiple flavors e.g. ice-cream
Self-Service Food at a salad bar or buffet where customers serve themselves
Self-Service Beverages at a soda fountain for example where customers serve themselves
Food on Display that is visible to the consumer before ordering and no further preparation is needed
Alcoholic Beverages on the menu
Not covered by the NML law – No Calorie Labels Required
Custom Orders that are prepared as customer requests
Daily Specials that are not routinely listed on the menu
Temporary Menu Items that appear on a menu for less than 60 days per calendar year
Part of a Customary Market Test designed to test consumer acceptance for fewer than 90 consecutive days
Condiments Available for General Use that every customer has access to
Ready to Eat Foods for later consumption such as grocery items that can be consumed immediately at a later time
