What is included: Accommodation in a trullo, breakfast and lunch or dinner every day (see below) with local wine, transfers from railway station/airport (Bari/Brindisi) at beginning and end of stay, excursions and tuition fees.

What is not: Travel to and from Italy. One meal a day, and medical and other insurance.

The concept

In a group of ten or so, learn the basics of the traditional cookery of the Puglia region, which draws heavily on fresh local ingredients, notably olive oil.

A taster:

get hands-on with pasta, especially the traditional • oriecchietetackle fresh fish, caught that day in the Adriatic Sea, twenty •minutes’ drive awayvisit Alberobello’s Thursday market and cook up a • ragù for lunch, the meat sauce traditionally eaten on that daylearn about the • cucina povera, the original ways with pulses, bread dough and tomatoes

The chef

A true character, and chef at the nearby Masseria San Marco in Fasano, Peppino Palmisano will guide you through the above, delighting you with his enthusiastic and experienced approach.

The classes

Peppino speaks Italian and we provide translation into English, French or German (depending on class).

4.30 pm: Guided tour of the historical centre of Alberobello, the famous “Trulli capital”. The town was recognized in 1996 as a UNESCO World Heritage Site.

Dinner (individual programme)

Day 3 (Tuesday)Breakfast Morning: Cookery class - fish Shopping for ingredients , if possible directly from the fishing boats bringing in the catch of the day, followed by class and lunch.

4 pm: Guided tour of Grotte di Castellana (caves)

A spectacular one-kilometre walk along an ancient river •winding between stalactites and stalagmites carved from the rock (50 minutes).

Day 4 (Wednesday)Breakfast Morning: Cookery class - locally grown vegetables (cauliflower, potatoes, peppers, courgettes, aubergines, tomatoes) Class and lunch.

4.30 pm: Excursion to Martina Franca, beautiful white hilltop village near Alberobello, with its charming crooked alleyways and flowery balconies.

Excursion to the seaside

5 pm: Cookery class - mediterranean-style dinner (shellfish, swordfish, calamari, mussels, anchovies) Shopping for ingredients, followed by class and dinner/end-of-week party: music and dancing; souvenir of your stay
