Total Time: 40 min Servings: 4Ingredients: 2 large baking potatoes (about ¾ lb total) peeled, shredded½ medium onion, peeled, finely grated (about ½ cup)1 garlic clove, peeled, chopped ½ tsp chopped fresh thyme Gefen Kosher Salt and Gefen Pepper 5 Tbsp vegetable oil or clarified butter, divided¼ cup Wegmans Cream Cheese,softened2 oz Wegmans New York Style Smoked Nova Salmon

Potato Latkes with Salmon & Cream CheeseDirections:1. Rinse potatoes in large bowl of cold tap water, changing water 3-4 times until water runs clear. Drain. Combine drained potatoes with onion, garlic, and thyme; season with salt and pepper. 2. Heat oil in large skillet on MEDIUM, until oil faintly smokes. Divide potato/onion mixture into 2 portions and place in oil, flattening each with spatula to a 6-inch circle. Cook 3-4 min on each side, pressing down on pancakes with spatula as they cook to maintain their shape, until crisp and golden brown.3. Transfer pancakes to paper towels to drain. Spread one side of one pancake with cream cheese; top with salmon Top with remaining pancake to complete. Cut in half, making 2 servings, or into 8 wedges as an appetizer.

Asian Chicken Noodle SoupYou’ll need: Large stockpotDirections:1. Heat oil in pan on HIGH until oil faintly smokes. (If oil smokes too much, pan is too hot.). 2. Add garlic and carrots; stir fry 2 min.3. Add ginger and consomme; bring to simmer.4. Add mushrooms and baby bok choy; simmer 3 min, until vegetables are tender.5. Add noodles; boil 6-8 min. Season to taste with salt and pepper. Mix in green onions, chicken, and cilantro. Bring to simmer.

Directions: 1. Add whitefish, celery, peppers, onions, mayonnaise, horseradish, dill, pepper, egg, lemon juice, and matzo to bowl; stir to combine. Form into cakes about 4 oz each. Place on baking sheet; refrigerate 45 min.2. Mix mayo, horseradish, dill, lemon juice, and pepper in

small bowl. Cover and refrigerate until ready to serve.4. Heat 2 Tbsp oil in large skillet on MED. Add half of the

cakes to skillet. Cook 4-5 min until golden brown; turn. Cook 4-5 min until golden brown; transfer to serving dish. Add remaining 2 Tbsp oil to pan. Cook 2nd batch of cakes; transfer to serving dish. Serve with horseradish dill sauce.
