No room to pack a handbag for a special evening? Or forgot it? Never fear. The luxury All-Inclusive Casa Velas Boutique Hotel and Ocean Club has the solution: a “handbag bar”. Guests can choose among seven different handbags from designers ranging from Carolina Herrera and Tory Burch to Michael Kors and Pineda Covalin, often called the Hermes of Mexico. They’re available on loan, complimentary for the evening. Guests can reserve their pick once at the resort.

He is passionate about Mexican and Iberian cuisine as well as new culinary trends. He has been named Corporate Chef of Cicero Centenario Group, 1st place in Ritos and Retos of the Centro Histórico in 1997. Personal Chef for actress, Sra. María Felix in Polanco, Mexico City. TV Azteca Veracruz for the program Matutino Veracruz with Xavier Moranchel from 2003 to 2005.

Corporate Chef of OHG (Operators Harmonization Group) in charge of 32 industrial dining areas, with responsibility for over 700 kitchen employees and over 38,000 meals daily (2005). Recognized during Mexico’s 1st Muestra Gastronómica in Warsaw, Poland by the IHG (International Hotel Group) in 2008.

Executive Chef of Restaurante Antiguo San Ángel Inn, obtaining the Star Diamond Award in 2002. Participated as Chef during the presentation of the Star Diamond Award 2011 held at Casa Velas Boutique Hotel.

Ingredients

• Cooked black beans• Cooked corn kernels• Chopped tomatoes• Chopped onion• Jalapeño chilis• Lime juice• Chopped cilantro• Salt and pepper• Olive oil

Preparation

1. Place chopped tomato in the bowl. You can use as much as you like, according to how many guests you’ll be serving.2. Add chopped onion to taste.3. Cut off the ends of the jalapeño and remove the veins and seeds. Then, very slowly and carefully slice the sides of the jalapeño as thinly as possible and cut it in half. Add as much as you like; because you removed the veins and seeds the chilies will add a nice flavor without much heat.4. Add the lime juice and chopped cilantro.5. Season the mixture with salt and pepper. For this, the chef recommends using your hands, as it can be easier to gauge how much you are adding.6. Add about 2 tablespoons of olive oil.7. Add the cooked black beans and corn.8. Time to plate! You can serve the salsa with fresh crispy chips made from either corn or flour tortillas.
