SENSORY ANALYSIS

• Used during design of products-trying out prototypes
• Used to test against a specification
• Used to monitor products that are manufactured-ongoing and regular
• Used for research purposes-rival products from other manufacturers –to see what consumers like or want
Testers/Tasters• May be trained testers - looking at specific
qualities
• May be staff – product development, product monitoring
• May be members of the public – to find out their preferences
How testing is carried out
• Conditions are identical for each tester-lighting, heating, sample size, serving dish etc
• Quiet, no talking to each other• Drink of water of plain cracker given to
‘cleanse the palate’• Hygiene matters-clean cutlery etc• Charts, tables to record results etc are
ready and easy to follow
