Baking The Biscuits

To cut out and bake the shaped cookies, follow the instructions on the Sattina vanilla biscuit mix – one tub will make between 12 and 15 cookies depending on how thick you roll out the dough.

To make the bunny, cut out two small oval shapes for the bunny’s cheeks and two large circular bases, one for the body and use the other one to cut out the two leaf shaped ears. Any excess dough can be rolled out and used again.

How To MakeEaster Bunny Cookies

In this tutorial we show you step by step how to create an Easter bunny cookie using our Sattina vanilla biscuit mix and the Wilton set of large round and small oval cutters. With lots of handy tips from the Cake Craft creative team, let your imagination run wild and see how many Easter themed cookies you can create!

Handy Hint: Add the butter to the biscuit mix at room tempera-ture or, if using straight from the fridge, use a cheese grater to grate the butter into the mix. Before rolling out the biscuit dough, pop it into a food bag and chill in the fridge for 30 minutes - this will make the dough easier to roll and cut out before placing your shapes onto the cookie sheet.

Decorating The Bunny Biscuit

To decorate the base of the bunny biscuit, colour some sugarpaste green and roll out to between 3-5mm in thickness on a sprinkling of icing sugar.

Use the same cutters to cut out exactly the same shapes as the biscuits – one large circle for the body, two ovals for the cheeks and two leaf shapes for the ears.

Spread a thin layer of jam over the biscuits and carefully position the icing on top. Add two extra white features cut out using the oval cutter on the cheeks, emboss a couple of lines with a cocktail stick and attach with edible glue.

Adding The Features

Add eyes, cheeks, a nose and extra features in coloured icing cut out using the small oval cutter and the set of small round plunger cutters.

Extra features in white and pink can be added to the ears and a deep line embossed with a cocktail stick under the nose creates a mouth.

Finishing TouchesA scattering of sprinkles attached with edible glue adds a colourful finishing touch.

Handy Hint: Wrap any un-used icing in clingfilm and place in an airtight food bag or container to keep soft for future use.

Handy Hint: When spreading jam over a biscuit, leave a gap all the way around the edge so it does not squeeze out when decorated with icing. Paste food colourings are highly concentrated, so use a cocktail stick to add the colouring to icing, knead well and remember you can always add more!
