For roughly 1,300 years, the descendents of Fujiwara Mahito – all 52 generations of them – have operated the inn, which was founded in 705AD – some 300 years before the Vikings came toAmerica and 225 years before the founding of the kingdom of England. That was the 2nd year of the Keiun era, which led to thehotel’s “Keiunkan” name.
With that sort of longevity, it’s not too surprising the hotel was named the world’s oldest by the Guinness Book of World Records.(Fun fact: the world’s second oldest hotel – the Hoshi Ryokan, which opened 13 years later – is also in Japan, roughly a six hourdrive from the Keiunkan and set near the Sea of Japan.)

Chickpea flour (Besan) – 1 cup
Turmeric powder – ½ tsp
Red chili powder – ½ tsp
Ajwain seeds – ¼ tsp
Rice – 2 cups
Salt – to taste
Ghee – to taste
1. Make a dough of besan, ajwain and salt. Steam it2. When cool, cut into roundels. Can also be fried.3. Prepare rice by absorption method4. Temper the rice and mix the gatte with the pulao5. Great combination with gatte ki subji

Step 1Combine cornflour, salt and pepper in a large bowl. Add half the prawns. Toss to coat, shaking off excess.Step 2Heat half the oil in a large, non-stick frying pan over high heat. Cook prawns, stirring, for 3 to 4 minutes or until pink. Repeat with remaining cornflour mixture,prawns and oil.Step 3Place prawns on a plate. Top with coriander, chilli and onion. Sprinkle salt and pepper.presentation with puree of carrot,beetroot,peas.

1. Mound coarse sugar and orange zest on a small plate. Mix with your two fingers, gently pressing on it so the sugar absorbs the color and flavor of the zest. Rub around the rim of the martini glass with a lemon orange wedge to moisten it. And roll the rim of the glass on the zesty sugar. Set aside.2.
