Member in the Spotlight: Jennifer TiffanyJennifer Tiffany, 44, was tired of watching her 4-year-old son run around without her. She wanted to participate in the fun too!
Jennifer has worked out for more than 20 years but was never able to get a handle on her fluctuating weight. After undergoing gastric sleeve surgery, and committing herself to “me time” working out five days a week, she is finally seeing the weight drop off and her energy levels increase.
Jennifer rotates her workouts to include cardio, weight-lifting, yoga and pilates five days a week at HealthPlex. She touts consistency as key and says it's ok to cheat on your diet or have an off day, but always make sure you get back on track the next day. She makes exercise a priority and encourages others to do so as well.
As temperatures rise and the summer party season gears up, look for ways to lighten up your recipes. Weekend barbecues, amusement parks and waterside food vendors often tempt us with not-so-healthy foods during the summer months. Smarter food choices can keep you slim and healthy all summer long.
Take advantage of the best summer has to offer. Eat smart with lean meats and fish, plenty of produce, whole grains, refreshing sides and fruit desserts. Here are some ideas for your healthy, summertime meals:
Appetizers: make use of brightly colored vegetables (peppers, sugar snap peas and carrots); season grilled eggplant with cayenne pepper
Salads: mix fresh corn, tomatoes and jalapenos into a whole-grain pasta salad; toss cilantro and fresh mint into a cucumber salad; mix a variety of berries into a fruit salad
Meals: top salmon or swordfish with mangoes; sprinkle fresh herbs on lean meats; add roasted tomatoes and zucchinis to pizzas; forgo the tortilla and make a burrito bowl
Sides: grill corn-on-the-cob; stack veggies (zucchini, squash, bell peppers) on skewers; prepare salsa with fresh garden veggies
Summer Desserts: add fresh fruit to smoothies, shakes and homemade popsicles; serve sorbet instead of ice cream; create a watermelon fruit basket

Camp is available at HealthPlex for children who completed kindergarten through rising 6th graders. Daily activities include fitness activities, games, crafts and swimming.
Camp runs Monday – Friday, June 11 – Aug. 10, from 7:30 a.m. – 5:30 p.m.
