Gregg Scarlett
Executive Vice President, President of Outback Steakhouse
Gregg Scarlett is the President of Outback Steakhouse and responsible for leading
the operations and development of more than 700 Outback restaurants across the
United States.
With more than 25 years in the hospitality industry, Mr. Scarlett has extensive
knowledge and experience in restaurant operations. Since joining Bloomin’ Brands in
1996, he has held several leadership positions across the company’s portfolio of
casual-dining brands, including most recently as President of Bonefish Grill. Under his
leadership, the brand focused on simplifying operations and providing an exceptional
guest experience, which resulted in a significant improvement in customer
satisfaction, as well as a steady increase in sales and traffic.
Prior to becoming President of Bonefish in early 2015, Mr. Scarlett was Senior Vice
President of Casual Dining Restaurant (CDR) Operations for Bloomin’ Brands, where
he was responsible for capturing and implementing operational best practices across
the brands. His other roles included Vice President of Operations for Outback
Steakhouse, Carrabba’s Italian Grill and Bonefish Grill, Joint Venture Partner for
Bonefish Grill (NY/NJ and South Florida markets) and Managing Partner of the
Wappingers Falls, NY Outback Steakhouse.
Mr. Scarlett is a past recipient of the prestigious “Parker” and “Outbacker of the Year”
awards, which acknowledged his contributions in strengthening operations and
building talented teams at Bonefish Grill and Outback Steakhouse, respectively.
