Cristal Union is the 1st worldwide producer of Grape-seeds for extraction of poly-phenols and actives, 1st European producer of Bioethanol, 2nd European sugar Cie – and is highly specialized on high technologies.
2. A new, innovative and dedicated
plant in France The completion of our recent investments in terms of extra capacity of extrac-
tion, extra chromatography columns, drying, clean rooms, etc…. gives Burgundy a innovative facility, totally automated and computerized, for the highest traceability (from the fields to your product) and the best performances. In the respect of the
strictest European or US norms for all steps from collect to packing (and of most-ly all countries), in addition to the ISO 22 000 standards and in GMPc plant.
The improved process and the selective access and control of the seeds lead
Burgundy to offer the most complete range, from the typical 95% Polyphenols by folin to up to 50% monomeric and dimeric fractions, only with food solvents. Choose one of our most famous ‘Key Products’ beside the range of 50 different
extracts, such as the Grapemax™ Extra Pure, a pure water extract, soluble, brin-ging min. 95% Polyphenols (Folin Ciocalteu), a minimum of 8% OPC (monomeric + dimeric OPC) and a high ORAC Value, or our 50% OPC (mono+dimeric).
On a general base, the raw materials come from areas under
the full control of our shareholder Cristal Union, through its subsidiaries Bourgogne Alcool and Distillery Goyard (in Cham-pagne).
The quality of the raw materials is strictly defined in a strict specification, fixing all the physical and chemical parameters needed for the assurance of organoleptic and physico-chemical
compliance, as well as microbiological data. Nevertheless, the collected materials transcribe the soil and area from which they come. This allows Burgundy Botanical
Extracts to highly select the in-coming materials to guarantee a constant quality on our extracts in terms of :
chemical composition : grape seeds from Champagne for instance brings more monomeric OPC when grape seeds
from Burgundy area provides a higher content in dimeric OPC.
organoleptic : raw materials collected in Burgundy area
provide rounder and more mature feeling, with notes of nuts, while the grape seeds from Champagne brings greener and tangy notes
and that, in identical processes. Collect & Separat ion
The collect and transport are organized so that it does not flow over 24 hours between harvest and complete processing of the marc in our dedicated facility in Burgundy. The seeds are separated from the skins and stems before any other process.
Crush & De-stem After the grapes arrive at the winery, they are mechanically
crushed and de-stemmed. This releases some free run juice, and separates the fruit from the stems, which can impart bitter tannins to the juice. Some wineries forgot the crush & destem
step and send the grapes immediately to tank presses, which squeeze the juice from the skins and minimize the extraction from skins and seeds. In general, the fine wine objective is to
maintain the integrity of the free run juice, minimizing the ex-traction of bitter phenolic compounds from the skins, stems and seeds.
Drying and storage
Seeds are then immediately dried under a gentle temperature (low temperature dryers), to preserve the integrity of polyphe-nolic compounds of non-fermented seeds. A residual moisture
below 7% ensures stability against oxidation and enzymatic degradation of polyphenolic actives.
