Let the singing of Christmas carols and exchanging of gifts begin! We are officially into the holiday season! Whether we’re ready for the holidays or not, they always seem to creep up on us. Here at Geaux Health and Fitness Magazine, we know how important it is for you to keep your sanity during all of the madness of Christmas Parties, church plays, shopping, baking and of course In-Law visits. Here are a few thoughts I have on surviving a very hectic Christmas Season.
First and foremost, remember that Christmas is the birth of Jesus Christ. He is the reason for the season and the reason we celebrate revolves around him and only him. Remembering to keep that in mind will be your oasis through the holiday hustle and bustle. Second and lastly, this is a season for family so enjoy all the relations that come to visit for Christmas. Let your mother in law help out in the kitchen, don’t try and be superwoman and cook the entire meal all by yourself. Also, involve your children by letting them help out and set the table for Christmas dinner, let them help with decorating the tree or give them a special craft symbolic to the season.

for the holidays
Root Vegetable Mash
Sauteed Kale with Garlic
Healthy Recipes
This is the best alternative to the incredibly popular side dish “creamed or mashed potatoes.”
1 Large Celery Root, peeled and diced medium size
3 Medium-sized sweet potatoes/yams (or white yams for classic mashed potato color), peeled and diced medium size
2 Medium-sized Turnip bottoms, peeled and diced medium size
3 Tbsp unsalted butter
1 cup & as needed vegetable (or) chicken broth
Salt & pepper to taste
Tools: Hand mixer or immersion blender
Rinse the diced vegetables to clean off any excess dirt. In a 4-quart soup pot, place all vegetables and add just enough water to cover the vegetables. Bring vegetables to a boil on high, and then reduce to medium-high. Allow the vegetables to simmer. After 20-30minutes, the water should be nearly if not completely reduced. Root veggies should be fork-tender. Add in butter and vegetable broth. Using a hand mixer on low speed, blend these ingredients together. Increase blend speed until completely smooth. If necessary, add more vegetable broth. Adjust seasoning by adding the salt and pepper. Serve hot. Provides 6-8 servings.
5lbs of raw kale, washed and de-stemmed and rough chopped in bite sizes
4oz garlic, minced
¼ cup Extra Virgin Olive Oil
1 cup water
Salt & pepper to taste
In a large sauté pan over medium heat, sauté minced garlic in olive oil. Salt and pepper the garlic and sauté until garlic softens. Add a handful of kale and stir so it gets evenly coated with the garlic and oil. As the kale begins to wilt, add in another layer of kale and season with salt and pepper. Stir. Repeat this action until all kale has been added to the sauté pan. Add water, reduce heat and simmer for 30 minutes or until kale has reached desired texture. Serve hot. Provides 4-6 servings.

FLAB TO FAB“For as long as I can remember, I’ve always been the big boy,” said minister, marriage counselor and DOTD
retiree, Eric Burges Sr. “I’m just not one of those folks
blessed with a high metabolism.”
Beginning from his youth and well into his adult life, exercise and healthy eating were never apriority. “When I was younger I felt invincible. I never worried about what or how much I was eating.”
Burges reminisces back to his 20s and 30s when he worked two jobs just to provide for his young family. There were times when he didn’t feel his best from a health standpoint, but he pushed himself through those rare moments of discomfort to make a better life for his family.
When Burges entered his mid-40s, he began experiencing chest
pains and shortness of breath. “I was probably wearing a size 54 pants back then and I’d started eating an influx of fried foods. More than what I was even used to.”
Burges said he remembers driving home and feeling severe pains in his chest. “The first recommendation that I received from my internist was to get on
blood pressure medicine; NOT to change my diet and NOT to exercise,” Burges
said of his doctor’s appointment which immediately followed this ordeal. “Drugs
were the first and only option that my doctor gave me.”
And while he agreed to start taking blood pressure medicine, Burges
also decided to alter the status of his health through lifestyle changes.
The first change Burges made was to begin walking every day. “I started walking on my lunch breaks at my job. I would walk from the DOTD building to the Governor’s Mansion, and then back.” Burges admits that such a feat was challenging. Having to pack walking shoes everyday as well as an extra shirt was an inconvenience, but his determination for better health helped him stay the course.
Next, Burges changed his eating habits. “I went in my pantry and threw out everything white! Sugar, rice, pasta, bread, salt, and then went out and brought lean meats, brown rice, whole wheat bread and fresh fruits and vegetables,” he explained.
But even with this renewed sense of his future, healthier self, meal preparation wasn’t an easy thing. The first meal he made was a vegetable stir-fry, and after one bite, Burges promptly tossed his plate into the nearest trash can. “It tasted horrible,” he recalled.
“I knew it and so did my family, because they didn’t want to eat it either!”
Eventually, Burges learned new recipes as well as tips for light yet flavorful seasoning options. His meals became tastier and more versatile. He even developed a healthy whole wheat pizza crust recipe that was featured on WAFB News on multiple occasions. And, as for his physical transformation, Burges lost six pants sizes in less than six months from the date of his health scare. “I’m not one to focus on the pounds. My focus is on how my clothes are fitting and how I’m feeling,” he explained.
Currently, Eric Burges Sr. has maintained his weight loss and even has amped up his fitness routine by going to the gym two to three times a week. “I do a mix of weight training and cardio bike work. I feel good and my family has noticed my continued weight loss. I’m wearing a size 46 pants now and I feel proud of the healthier me.” GH&F
