Roasted chickpeas with poached eggs and greensA hearty meat-free meal.
2 cans (400g each) chickpeas, drainedOlive oil2 tsp (10ml) each ground cumin, coriander and smoked paprikaPinch each cinnamon and PnP dried chilli fl akesSalt and milled pepper
Salad:1 butter lettuce, torn1 bunch spring onions, fi nely sliced2 avocados, slicedHandful fresh corianderJuice (60ml) of 2 limes
8 eggs, poachedSour cream, for serving
SERVES 4
Preheat oven to 220°C.Toss chickpeas with a glug of olive oil and spices and spread out onto a baking tray. Roast for 15 minutes.Toss salad ingredients together and dress with lime juice and olive oil.Pile salad onto plates, top with chickpeas, eggs and a dollop of sour cream.
