asparagus, Crispy prosCiutto and Brie grilled Cheese
Heat a grill/grill pan to med heat. Reserve 2 tbsp olive oil. Oil both sides of each piece of bread with the rest.Grill bread on both sides until lightly golden and toasted, set aside. In a heavy skillet, fry prosciutto over med-high heat until fat has rendered and prosciutto is crispy. Set aside. Cook asparagus in prosciutto pan. Sprinkle with salt, grill until tender, ~3-4 min.Layer 2 oz cheese on each slice of bread. Cook in same pan for ~1 min or JUST until cheese has begun to melt.
4 large slices rustic bread1/8 cup olive oil8 ounces brie cheese
16 spears asparaguskosher salt8 slices prosciutto
goat gouda, roasted MushrooMs and onions grilled Cheese8 oz mushrooms, sliced1 med sweet onion, sliced2 tbsp olive oilsalt and pepper
4 tbsp butter4 slices bread of choice1 cup goat gouda, shredded
Preheat oven to 400°F. On a baking sheet, toss mushrooms and onion in oil. Sprinkle with salt and pepper. Bake in oven ~20 min, or until desired In a skillet stove top, melt butter over medium heat. On one slice of bread, layer shredded goat gouda, roasted mushrooms and onions, then more gouda. Close the sandwich and grill!
