By the end of today’s lesson, you should be able to demonstrate how to avoid being overcome by a foodborne illness
An Illness caused by consuming foods or beverages that have been contaminated with pathogens or toxins.
Pathogen - a germ that causes disease.
Toxin - a poisonous substance
1. Check cans carefully.
2. Check to see that hamburger, pork or chicken is cooked thoroughly.
3. Be on the lookout for food that contains uncooked eggs.
4. Give foods and beverages the smell test
Tips for grocery shopping
Do not buy can with dents or bulges.
Do not buy cracked or dirty eggs.
Buy milk that is pasteurized.Pick up cold and frozen foods
last.
Place cold & frozen food in refrigerator and freezer ASAP.
Refrigerator temperature (34*F &40*F)Freezer (0*F).Thaw food in the refrigerator or
microwave.Eat or freeze leftovers within 2 days
Wash hands with soap & water for at least 20 seconds.
Cover up open sores or cuts on your hands with rubber or plastic gloves.
Do not prepare food for others if you have a cold, flu or symptoms of illness.
Cook meat until it is no longer red or pink.
Salmonellosis is a foodborne Illness caused by consuming food contaminated by Salmonella bacteria.
Campylobacteriosis is a foodborne Illness caused by consuming food contaminated by Campylobacter bacteria.
Salmonella and Campylobacter live in the intestines of animals.
The bacteria enters the body when people consume contaminated meat, poultry or eggs that are raw or undercooked
Symptoms:Fever Diarrhea Cramps Vomiting
Treatment: Drink plenty of fluids Antibiotics are sometimes prescribed
Tips for Microwaving FoodsCover food to allow steam to cook food all the way through.
Do not use foam, plastic wrap or aluminum foil in the Microwave.
Stir or rotate food once or twice so food cooks evenly
Tips for Eating at a Buffet
Do not eat food that is suppose to be cold if it is not on ice.
Do not eat food that is suppose to be hot if it is at room temperature
Do not eat undercooked meat or poultry
