The height of the BVI sailing season is here…
…and with this welcome news, come a host of regattas for avid sailors and spectators to enjoy; one such race falls in
line with February’s etched celebration Valentine’s Day with the annual Sweetheart’s of the Caribbean Regatta – a
widely popular event. In this issue, Geoffrey Brooks, curator of the Virgin Islands Maritime Museum reveals that
Endeavour II—the traditional styled sloop that had its grand christening at the end of 2013—will be making its
debut in this particular ‘lovers’ race’. This is a greatly anticipated time for the boat, which was the project of the Jost
Van Dyke Preservation Society who intend to educate the youth of JVD with the vessel among other motivations.

There is little doubt that catamarans are among the fastest growing trends in the cruising industry today. If you look out on the water, you will observe that the majority of bare boats plying the BVI briny are sailing catamarans, where 20 years ago there was only a handful. In the year 2000, the BVI Boat Show for crewed yachts had 59% of the fleet composed of multihulls and in 2013 it was 89%. This steady growth is mirrored in the bareboat fleet and we can measure the increased interest in catamarans by simply counting cats to monos at the docks of our numerous charter companies. Dream Yacht Charters, only five years in business now in the BVI, started with four monohulls and one catamaran. Today, their fleet has swelled to 40 vessels and an overwhelming 85% of those are now cats. The key ingredients to their popularity are space and a non-heeling sail. The huge sleeping quarters and the comfort of one-level living, provide sailors with the sensation of being on a super yacht, despite the boat being only 45’ long. Even the people who prefer monohulls have moved to using catamarans on vacation and once visitors have chartered a cat, it’s unlikely they will return to a mono. Certainly this is the perfect vessel for family vacations as she sails flat and safe. The kids have room to play on the trampolines, imbibing while underway is smooth, the boat is incredibly easy to manoeuvre in close quarters, and all are equipped with generators to power the air conditioning. The lure is tremendous and this remains a lifestyle choice with attractive aesthetics, arguably superior to monohulls. Sales figures show production multihulls remain at a high and this is obvious as we see more and more cats delivered each season to the BVI charter bases. Robertson & Caine who manufacture for The Moorings, are said to be increasing their per annum production by 40% next year. The French ‘Lagoon’ production cats are the third biggest yacht manufacturer worldwide. But there are more than a few designs of catamaran available to charter in the BVI from the high performance Catana to Fountaine Pajot, Voyage and Privilège.

Still, among the most popular cats out there today are the Moorings 4800 and the Lagoon 450, both comparable, but with different advantages. Nominated as ‘Boat of the Year’ in 2013 by yachting World, the new Moorings 4800 has a vastly different layout from its genetic forebears, where a large forward cockpit with access from the main saloon completely opens up the shaded living quarters. This unimpeded passage fore to aft, wide side decks with flush hatches, and a broad cross deck from hull to hull, well aft of the main cockpit, lends so much room that no one should feel cramped on board. Another significant improvement is that the helm station now has access from both sides, which is important for the flow of passengers. The Lagoon is recognised for the very social walk through fly bridge and vertical windows that give more view, more room, and better shade. It is also fair to identify the Lagoon 450 because of the quality of the interior. All the mod-cons of contemporary living are available with microwave, hideaway 36” flat screen TV, and space for a washing machine. The light wood veneer throughout softens the ambience of each cabin, and on some models the ‘owner’s hull’ offers a sizable space with a study area, changing room, separate head and shower up forward – one would be hard pressed to find such expansive living quarters in a New York apartment. Like all cat families, there are measured improvements on their predecessors; lessons are learned and designs adjusted – for example, the Lagoon 450 introduces a new broad hatch over the cockpit, which serves to provide airflow to the guests beneath and a better view of the port quarter when parking. These tweaks to design are industry driven and constructive feedback and advice from charter companies keeps catamaran design evolving fast. As the popularity of sailing and power catamarans has soared, we have seen changes in the construction of docks and size of travel lifts on island. Where previously two monohulls lived, now one catamaran is accommodated so new docks are built to accommodate two cats side by side. We know we have the easiest cruising waters in the world: steady trade winds, flat waters, minimal current and tide, plenty mooring buoys, bigger docks, and cruising room for us all. All bases are at an easy distance to call out a chase boat (unless you’re in Anegada), so there is no stress for the bareboat captains. Bareboat captains are even allowed to get behind the wheel of a 58’ catamaran these days, which was unheard of years ago. But here we have a vessel type so easy to manoeuvre, that even part-time captains are enabled, empowered and emboldened. So, if you want to flaunt your skills to your friends and family, colleagues or lovers, take this tip – charter a catamaran.

On Saturday November 30, 2013 between heavy
squalls of rain, the sun shone through the clouds over Great Harbour, Jost Van Dyke, just long enough
to witness the christening ceremony of the 32 ft sloop Endeavour II.
After over nine years of construction and fundraising, the perseverance of the Jost Van Dyke
Preservation Society and a host of volunteer supporters finally paid off with the launching of the
traditional styled sloop; a boat which is to become an educational platform for the youth of Jost Van
Dyke and a welcome addition to the Virgin Islands’ fleet of traditional wooden sloops.
Susan Zaluski director of the Jost Van Dyke Preservation Society chaired the event, which featured

major sponsor of the sloop.
Among those breaking a bottle of local rum on the bow to christen
Endeavour in a tradition as old as boats that have sailed the seas, was Mrs
Luce Hodge-Smith the director of culture for the Ministry of Education and
Culture. Supporters and well-wishers came from many neighbouring
islands of the BVI, USVI, mainland US and Canada.
The Jost Van Dyke Preservation Society is the
brainchild of local musical legend and restaurateur
Foxy Callwood, whose goal is to preserve the
culture, natural resources of Jost Van Dyke and
its surrounding islands. After several years
of discussion as to how best to proceed
with these motives, the BVI non-profit
organisation was registered in 2003 with
Foxy serving as board chairman joined by
members Tessa Callwood, Beverly Martin and
Bruce Donath. Ms Susan Zaluski was hired as
director and the society has been actively involved
with environmental programs, youth awareness and
training ever since.
They have partnered with the National Parks to help manage
Sandy Cay and Great Tobago, initiated a youth diving program which
also monitors the health of local reef life, and in 2008 created the Jost
Van Dyke Environmental Profile. This landmark document lists the entire
flora, fauna, fish and underwater assets of the area and is used as a way to
identify threats to the environment, gauging successes in its preservation.
Endeavour II is their latest and most ambitious project.
The vessel is named after a former local Jost Van Dyke sloop which
belonged to the Maddox family. It is a traditionally designed Virgin
Islands’ sloop complete with the distinctive dead rise called ‘Moon
Sheer’, but is built with modern materials and the use of
contemporary techniques.
Nine years ago, Foxy presented the idea of
building a traditional sloop. The plan was to
construct it in a way that would provide training
for the youth of the island. The project would
both support the Maritime Heritage of the
Virgin Islands while simultaneously teaching
young people a valuable trade that could
provide a livelihood in the future. Local
Captain Kevin Gray got on-board and the
project was underway. Funding was sourced and
a set of plans drawn up in Canada based on local
traditional designs. The plans were then lofted onto
plywood and patterns for the hull shape were created.
Endeavour was built completely in the modern way using a
method called ‘cold molding’. The hull was constructed upside down and the
frames were made with laminated plywood. The hull was covered with thin
strips of wood and then covered with fiberglass.

Although a traditional design and a wooden sloop, she is at the same time
a modern fiberglass boat – the best of both worlds. The Territory is benefited
by locally trained talent that can walk onto any shipyard and work at a
highly skilled level.
After the launching and christening, Endeavour II has been fitted out at
Nanny Cay Marina and completed her sea trials. She is now ready to take her
place with other traditional Virgin Island sloops Moon Beam, sea Moon, youth
instructor and intrepid to participate in local regattas and cultural events.
As the coordinator of the Maritime Heritage Program at HLSCC and
Curator of the Virgin Islands Maritime Museum, I am delighted to welcome
Endeavour II to the fold. She provides amenities that the other sloops don’t
possess. She is larger, has a head, a galley, sleeping berths and an engine.
We are hoping that she will provide ‘Mother-ship’ capabilities that will
allow us to move and display our sloops throughout the Territory and further,
the region. Just having an engine provides a much needed safety factor.
The 2014 regatta season is just getting under way and Endeavour’s debut
in the first big race will be this month – The Sweethearts of the Caribbean
Regatta, held at Soper’s Hole over Valentine’s Day weekend.
Other regattas approaching will be the BVI Spring Regatta, which will
feature a traditional sloop race, The 40th Annual Foxy’s Wooden Boat
Regatta at the end of May and The Great Festival Sloop Shoot-Out and
Heritage Regatta held during August Festival.
We are eagerly looking forward to Endeavour II’s participation, especially
at Foxy’s Wooden Boat Regatta.
For the past several years, there has been an effort by both Government
and the private sector to increase the number of traditional sloops in the
Territory and to also base them in different locations around the BVI.
This is hoped to increase awareness of our maritime heritage and boost
local support for our programs. Endeavour II, through the work of the Jost
Van Dyke Preservation Society, fulfils both of these goals. While being based
in Jost Van Dyke, she will be used to carry tourists on day sails, which will
provide revenue to support upkeep and a youth diving program which is
already in place. She already is a high profile resident of Great Harbour,
being the first thing that catches your eye as you approach the anchorage.
With her distinctive rig and unique hull shape, she immediately brings forth
memories of an older, simpler time. It was a time when these traditional
local sloops ruled the waves and carried our local produce, livestock and
people throughout the region.
She is now ready to take her place with other traditional
Virgin Island sloops Moon Beam, Sea Moon, Youth
Instructor and Intrepid to participate in local regattas
and cultural events.

Many have seen the splendid yacht Cuan Law. Whether stationed on CSY dock, Roadtown Harbour or at sea, the vessel is an unforgettable vision.
With a 105 feet length on deck,
a 44 foot beam, a mast height of 103 feet and a working sail area of 5,200 square
feet, Cuan Law is an incredible sight. In addition to its size, space and ability to
comfortably accommodate 20 guests with seven crew members, Cuan Law has
acquired a stellar reputation.
Owners and designers Annie and Duncan Muirhead have a wealth of sailing
experience having clocked approximately two-hundred thousand miles in the
seventies and eighties. Pioneers of the liveaboard-diving field since 1971, they are
avid marine enthusiasts and placed their vast experience into building Cuan Law as
the ideal vessel for BVI waters.
In June 1987, building of Cuan Law commenced in a small fishing town on the
shores of Lake Eerie in Wheatley, Ontario – a boat that in the present day is received
with awe and fascination in the BVI.

Speaking to Duncan about the colossal boat that he has used to serve the BVI holiday-maker demographic for 24 years, the accomplished entrepreneur has worked in the industry for considerably longer. “…Trimarine/Muirheads have been operating dive/sail/charters since 1971,” said the enthusiastic boat owner. “We have been pioneers of so much in our field – the second live aboard scuba diving boat in the world with Misty Law. The first to offer weekend to weekend trips. The first to accept credit cards,” he added, further exemplifying the length of time he’s invested in the industry. Conducting business in the BVI for 43 years, Annie and Duncan are figureheads for possessing the longest, successful operations in the marine trade. Cuan Law is one of the oldest boats in the Territory and with numerous and varied achievements, their title as ‘pioneers in the field’ is no exaggeration. “We discovered more than 20 dive sites in the BVI that are now established,” he continued. “We were the first to offer ‘by the cabin’ bookings. The first with your choice of convertible twin or double beds. The first with accommodation and public areas all on one level, so wheelchair friendly.” Founding members of the Charter Yacht Society—a non-profit organisation that represents the voice of individual yachts and their crew—is also a crowning feat. Indeed, this has meant that Duncan and Annie have had a huge impact on the sailing industry in the BVI – a location often classified as the sailing Mecca of the world. Duncan’s impending plans are to expand the charter market network. “We are really working hard to open up the South American market and have had several large family groups from there,” he commented. “Large extended family groups are where we are expanding and our record so far is four generations spanning 93 years.”

Keeping their itinerary as diverse as possible while pursuing the goal of growing into different markets, Duncan said, “We do ‘Down Island’ trips to St Maarten, Saba, Sombrero, and the BVI a couple of times a year. These tend to be longer than a week.” With a magical career behind them and a brighter future, there is even something majestic about the name ‘Cuan Law’ – the Scottish Gaelic word
for ‘Ocean Mountain’.

1: Curb appeal is very important - when the buyer arrives, be sure there is no clutter, garbage or weeds in sight and that their first and last view of the property leaves a positive impression.
2: Be aware that some form of entry gate raises the perceived value and increases security. The gate establishes the stage and it’s much like gift wrapping on a present.
3: Views are important – trim the trees and clear the view below the balcony of any unwanted plants or rubbish.
4: Replace Guinea grass (Megathyrsus maximus) also known as “green panic grass” and other weeds with ground cover such as bromeliads (Bromeliaceae) and woolies.
5: Fruit trees are always attractive to buyers. Just the thought of picking their own juicy mango or papaya can sometimes help to sway a buying decision.
6: Due to our tropical climate, it is best the property shows adequate drainage to prevent mudslides and flooding.
7: Special and unique architectural features such as bridges, brick courtyards with water features, vine covered pergolas, etc… all help to enhance the charm and character of a Caribbean home.
8: There are some clients that prefer all natural, endemic vegetation, but we have found that most buyers like to see colour in the garden. Flowers demand more attention from the gardener, requiring pesticides and fertiliser, and needs more commitment, time and money from the owner. Natural vegetation requires less attention and care. This is important to think about when planning the extent of how much of the garden to landscape.

The BVI is privy to multiple cultural diversions—some more exclusive and challenging to discover—that form its universal image as a location offering varied activities.
In collaboration with H. Lavity Stoutt Community College (HLSCC), Appleby Global offshore law firm commenced screenings of fantastic British dramas through the National Theatre Live series in the final quarter of 2013. The set of plays showcase award-winning performances across the globe from the UK’s National Theatre and has been enjoyed by 1.5 million people worldwide. The inspiration to screen these performances globally is part of the National Theatre’s 50th anniversary celebrations. Discussing the success of the series since its inception in the BVI, Nadia Menezes, organiser and lawyer at Appleby—who are the sponsors—and Harriet Robertson, associate director in setting up the series, both agreed

that their desire to increase cultural activity in the Territory, motivated their pursuit of this initiative. With their efforts to make this activity a reality spanning more than a year, Harriet said, “I’m a general culture-vulture and theatre lover. Some time ago, Nadia and I separately stumbled across National Theatre Live productions [in New York and in Sydney respectively] and we both realised what an amazing way it was to open up theatre to wider audiences and to more remote locations. Perfect for the BVI.” Nadia, who shares Harriet’s passion for theatre agreed: “I…was determined to see how we could introduce more cultural entertainment activities and a regular theatre programme in the BVI. This project makes internationally renowned theatre performances and the arts accessible for the BVI community, and combines education with entertainment.” The first four performances—Frankenstein, the thrilling gothic classic, Macbeth, which invites viewers to a movie-style presentation of a Shakespearian play about deceit, betrayal and murder, habit of art, a comedy with the late Richard Griffiths, and hamlet, a renowned Shakespearian play exploring the depths of the human condition—have achieved success. Harriet and Nadia anticipated a novel spectacle in provision of this activity for the BVI and acted on their mutual aspiration: “…It was very exciting for me to learn that Nadia had similar ambitions to bring world class theatre to the island,” commented Harriet. “Thanks to support from Appleby and a lot of perseverance, we are very happy to say the first events have been a huge success and exceeded our expectations.” A crowded auditorium was entertained at the powerful performance of Frankenstein on Halloween night of 2013 and this enthusiasm funnelled

Tickets were donated to HLSCC English students and BVI High School Drama Club pupils for separate performances, in alignment with Harriet and Nadia’s admirable goal of providing education in synchrony with entertainment. Nadia perceptively noted that although there are cultural pursuits on the island, they can be difficult to find and on many occasions remain entirely invisible. To combat this challenge, Nadia said, “We have been very proactive in marketing the events and spreading the word about this exciting new project.” With the reasonable price of NTL tickets fixed at a similar rate to visiting the cinema, the BVI audience is granted a fantastic opportunity – London costs would be substantially more expensive. Nadia and Harriet noted that arguably the performances surpass the experience of live theatre – close up camera angles present all the drama and emotion, whilst wider shots and some cleverly mastered 360 degree views reveal the splendour of the sets, providing ‘Godlike’ perspectives and views from stalls’ seats simultaneously. Concluding, Harriet revealed her optimism in growing the audience attendance of the younger generation commenting that, “the BVI is a community of people from all around the world, with different backgrounds and cultures. Theatre offers a way to unite and connect through the universal themes of love, loss, revenge and sadness.” In discussing the task of gathering sponsorship, Nadia said: “I was able to get the support of my employer, Appleby, in order to sponsor this initiative.” Appleby’s philanthropic motion in this enterprise provided all the equipment, content for the theatre screenings and administration assistance. There is also discussion of donating ticket sale proceeds to theatre and art scholarships for HLSCC. This month, a new production of William Shakespeare’s celebrated play othello will be presented on Saturday 22 (at date of print) telling the story of the destructive power of jealousy. With an impending bright future, the National Theatre’s original stage production of War horse and King lear by William Shakespeare are impending performances to revere with great anticipation. Though the dates are still to be confirmed, March 22 and April 5 are possible dates for National Theatre Live’s adaptation of War horse and May 24 for King lear.

North Sound has always been known as a yachting centre, but now the location is going through a change as land and marina based developments seek to rebrand North Sound’s identity as a luxury locale, competing with the best in the region. While the rest of the Caribbean was reeling from the impact of the recession in 2008, discussions were underway between resort developer, Victor International, and the owners of the 400 acre Oil Nut Bay Estate with the sale of the property eventually concluding at the end of 2008, just a couple of months after the collapse of Lehman Brothers. Two years earlier in 2006, David V. Johnson of Victor International, had taken a long term lease over Biras Creek Resort, upgrading the hotel and keeping the resort operational, which in turn facilitated the on-going development of Oil Nut Bay.

A Day of Discovery with the Service You Want
Recognising the importance of North Sound as a yachting destination, David V. Johnson also acquired a dormant marina development project located in North Sound adjacent to Biras Creek, transforming this into the North Sound Yacht Club with the development of a 900 foot long super yacht dock, a yacht club and Harbour master’s building. In 2010, Mr Johnson entered into negotiations with the Sardinian based Yacht Club Costa Smeralda, who at the time were seeking a Caribbean base for its members. With H.H. the Aga Khan as president, the YCCS Yacht Club and Marina Virgin Gorda has established itself as the leading, event-based regional super yacht facility. At the other end of North Sound, Mosquito Island was quietly firming up plans for a private island development with owner, Sir Richard Branson, offering a limited number of lots for sale through private contacts, all of which are now committed. Based on sustainable development initiatives, the development at Mosquito Island has implemented strict development protocols that limit the carbon foot print of the development. Each owner is required to construct in accordance with the island’s green guidelines which are equivalent to the LEED (Leadership in Energy and Environmental Design) Platinum scheme with renewable energy sources being favoured. Construction began in 2011 with the main communal areas now close to completion. The three year period between 2009 and 2011 saw a number of resort developments in the Caribbean fail through changing economic conditions, with many developments that had relied on bank financing to cover infrastructure development and pre-sales to pay back loans, forced into receivership. Meanwhile, in North Sound, the three major development projects at Oil Nut Bay, YCCS and Mosquito Island, maintained a level of construction not previously seen in the BVI for many years. This helped keep the economy of
Virgin Gorda, and many firms from Tortola, rolling through the worst of the downturn. In contrast to the heavily indebted projects elsewhere in the Caribbean, the Oil Nut Bay and YCCS projects are not externally financed which enabled the developer to ride the economic downturn. While the rest of the Caribbean struggled to find its footing as the downturn continued, North Sound has emerged from the recession as a leading destination and one of the few regional locations where significant investment has taken place in the luxury sector of the market. As we start 2014, North Sound is in a very different position from what it was five years ago, providing both visitors and potential investors a wide range of options. Whether visiting new resorts, marinas and restaurants or even seeking a home site within a resort environment, the area has it all. Superyacht Regatta & Rendezvous in March, which is being preceded by the inaugural Caribbean RC 44 Championship Tour in February – the equivalent to hosting a Formula 1 event on the ocean. These regattas bring not only a completely different scene to North Sound in terms of international yacht racing, but the publicity generated by the events puts North Sound, Virgin Gorda and the BVI as a whole into the international spot light. Oil Nut Bay has matured as a development, with Christmas and New Year 2013 hosting a range of guests in the recently completed villas and community facilities. Recognising the failure of so many regional developments, Victor International have completed the upfront infrastructure for the project together with the public areas of the resort which now include the Beach Club, fitness centre, Nut House (kids club) and Nature Centre, two tennis courts and the resort’s Palm Centre management offices. With eight villas completed, there are a further ten homes under construction with over $56M in contracts being bid locally to contractors from the BVI. The next phase of development includes the completion of the Marina Village by the end of 2014 and completion of additional back of house facilities and a utility distribution centre. Development at Oil Nut Bay is also strictly controlled with an emphasis on energy conservation through the use of renewable energy options – the developer has initiated a Community Stewardship programme whereby each sale at Oil Nut Bay will generate income for a community fund. Recent developments in North South include a small, exclusive estate community only accessible by sea, which commenced construction in the latter half of 2013 after several years in the planning; this included the submission of detailed environmental reports. The project is designed to be ecologically sensitive, with an environmental team headed up by a leading expert in marine biology. Blunder Bay Estates will provide an attractive niche market between its larger neighbours, catering, as it intends, to owners who value the ambience of a retreat and a peaceful place to build a villa of their dreams, close enough to, and yet far enough away from, the busier marinas and resorts at the other end of the Sound. Comprising just 10 estate lots, ranging in size from 1 acre to more than 2.25 acres, Blunder Bay Estates is located opposite Mosquito Island at the entrance to North Sound. The development will focus on a family orientated experience with a range of common facilities, including a Managers Residence, a 12-foot-wide road within a 24-foot-wide easement which will provide access to each lot, fibre optics and high-speed internet access to each villa, beach recreation areas and watersports facilities. Four of the lots will have private docks while the remainder of the lots will have a shared dock facility. While much has changed in terms of new luxury development and exposure to new markets, the overall ambience of North Sound remains

focused on water sports activities taking advantage of the sheltered waters of the Sound. Complementing the new development are the existing resort facilities at Bitter End Yacht Club, Biras Creek, Saba Rock Resort and Leverick Bay Resort and Marina, each of which caters to a different section of the tourist market. At the heart of North Sound is Gun Creek, a charming community adjacent to Leverick Bay which houses many of the local population who staff the resorts and provide many additional services to the guests and tourists who frequent North Sound. Any article on North Sound would not be complete without a mention of Necker Island, Sir Richard Branson’s first base in the BVI, which is now synonymous with luxury island rentals. After a devastating fire destroyed the main house in the summer of 2011, Sir Richard and his family have dedicated the last two years to rebuilding the Great House with the project completed in the summer of 2013. While maintaining the ambience of the original structure, the new Great House combines the attributes of a private home with the necessities of resort living. Necker Island’s impact on North Sound and the BVI cannot be underestimated with many A-List celebrities and wealthy entrepreneurs now familiar with the BVI as a result of a trip to this property. With development, change will inevitably come to North Sound. Increased boat traffic and development of previously untouched hillsides have the potential to change the very fabric of the Sound. However, carefully managed, North Sound can continue to provide tourists with an un-spoilt destination, cater to wealthy investors in the various residential resort projects, and provide the back drop for the international yachting regattas, visiting yachts and super yachts. The stakeholders in the Sound need to manage the resources for the future and ensure that North Sound remains the favoured hotspot in the BVI.

It’s high season in the Virgin Islands, and houses and boats are filled with
seasonal residents and their visitors.
This permits the opportunity to welcome hungry guests with a fragrant
and delicious island-inspired chicken curry.
Curries are great crowd pleasing dishes as they yield a large quantity
and can be prepared in advance.
As a bonus, curries usually taste better the next day, once the flavours
have had a chance to meld. Most curries also fit my guidelines for cooking
on a boat in the Caribbean: the ingredients are readily available and no
complicated techniques or equipment are involved.
‘Curry’ is a widely varying word for dishes that
contain meat, fish or vegetables in a highly
aromatic sauce. To add seasonings to a
curry, the gold standard involves
grinding whole, fresh spices
and hand mixing them.
Although I occasionally
create my own spice
blend, I typically opt
for high quality
commercial
curry powder
for the sake of
convenience and
space constraints
on a boat.
Curry powders
differ significantly
in their ingredients
and degree of
heat, so check labels
carefully when buying
curry powder. For example,
standard British-style curry
powders usually include ample
amounts of turmeric, providing a bright
yellow colour, along with ground chillies for

moderate spiciness. Local supermarkets can meet the majority of your
spice needs. Road Town specialty stores Best of British and Sunny Caribbee
also carry an excellent array of spices, with Sunny Caribbee offering
proprietary curry blends.
A curry can easily be repurposed as a roti, a hugely popular Caribbean
dish consisting of a seasoned tortilla-like flatbread stuffed with curried
meat (often chicken), fish, shellfish or vegetables. Preparation of roti skins
requires time, space and a bit of expertise—generally too much work for
a boat. Instead, look for excellent locally-produced skins in the freezer
section of BVI supermarkets. Top a roti with mango chutney and
serve with a side of rice and a simple salad for a quick
and tasty meal.

Chicken and Potato CurryThis is a very fragrant curry, but not too spicy. Add a few dashes of hot sauce
if you like your curry spicier.
4 Tbs butter
1 c chopped onion
3 garlic cloves, minced
1 Tbs finely minced fresh ginger
3 Tbs curry powder
1 ½ lbs boned chicken pieces, cut in 1” cubes
8 oz plain yogurt
6 oz can tomato paste
1 tsp salt
2 lbs peeled baking potato, cut in ½” pieces
3/4 c coconut milk
1 ½ c water
1 c chopped tomato
Hot sauce – for servingMelt butter in a large pot over medium heat. Cook onion, garlic, and ginger until onion is softened,
about 5 minutes. Add curry powder and cook for 3 minutes, stirring often. Add chicken and sauté until
lightly browned, about 7 minutes. Add yogurt, tomato paste, salt, potato, coconut milk and water to
pan. Bring to a boil, then reduce heat and simmer approximately 1 hour, or until potatoes are tender.
Serve over basmati rice. Top curry mixture with chopped tomato. Makes 6-8 servings.
