sponsor a free program on Kentucky’s 225th
Birthday Celebration as presented by the
Kentucky Historical Society on Thursday,
March 23, 2017 at 7:00 p.m. in the
Middlesborough-Bell County Public Library’s
Beverly Green Community Room. Come and
learn what makes the Bluegrass State unique.
During February, “The Itsy Bitsy Spider” Program
was featured at Day Care Centers for children. We
read and sang the classic poem and the children
made and decorated a friendly spider out of paper
plates and pipe cleaners! PCH 1st South Residents
made Valentine-themed door decorations.

the Library District’s
Newsletter and the 2016 “By
the Numbers” data sheet
which gives some local
statistics. I gave them a brief
overview of our library programs and patron’s needs,
and thanked them for their support of our libraries.
Library supporters were given
bright yellow stickers to wear,
“LIBRARIES have FRIENDS,” and
most of us were wearing yellow
articles of clothing (my scarf!) so
we were highly visible throughout
the day at the Capitol!
The Places I Go…
Currently the Bookmobile route includes
visits to 5 Day Care Centers for children, 2 Adult Day
Care Centers, Middlesboro Health and Rehabilitation,
Mountain View Health and Rehabilitation, Pineville
Community Hospital 1st South Extended Care, Bell
County Senior Citizens, Wilderness Trail Manor,
Ferndale Apts., Schultz Heights, West End Homes,
Rennie Gayle Apts., Page School Center, Bell County
Forestry Camp, Henderson Settlement Community
Center, and the Arjay, Cubbage and Stoney Fork
Communities. Additional visits are scheduled for
homebound patrons.
Expanded Bookmobile services will be
available during the Summer (non-school) months for
families who want to participate during this time. For
more information or to be added to the schedule,

awared a $3,000 grant from the Lois Lenski Covey foundation for children’s books for the Bookmobile. Hundreds of
wonderful new children’s books have been ordered and are being processed! These books will enhance Bookmobile
services to many of our children, young adults and families.

A Farewell message from Miss Christina: “When I started as the part-time Reference Librarian in Middlesboro nearly nine years ago, I had no idea of the wonderful journey I was embarking on working for the Bell County Public Library System. I have made so many friends from patrons throughout the county. As the Youth Services Librarian in Pineville for the past nearly six years, I have watched little children grow into teens and teens grow into young adults, all with such bright futures ahead of them. My kind and talented co-workers have become like family to me. The connections I have made throughout this community have made me a better person and I am forever grateful for every individual who has crossed my path in my time with the Library. That is why it is so incredibly hard to say goodbye as I start a new journey in my life. While I am looking forward to working in a new area on projects related to improving literacy, something I am obviously very passionate about, I am also saddened to be leaving this community that will always hold a very large and very special place in my heart. Even as I say farewell, I wish for the continued success of the library system as an important resource for our citizens and as a center for life-long learning, imagination, and creation!”

Hot Reuben Dip
It’s March, and that means it’s time for a favorite dip of
the Time for Tea & Thee book club! Enjoy!
Ingredients
1 (16 ounce) jar sauerkraut, drained
1 (8 ounce) package cream cheese,
softened
1 cup (8 ounces) sour cream
2 cups shredded Swiss cheese
4 packages (2 ounces each) thinly sliced corned
beef, finely chopped
1⁄4 cup thousand island dressing
Rye bread or crackers
Directions
Combine all ingredients and heat thoroughly, stirring
often. Serve with rye bread or crackers.
Contest-Winning Taco Casserole
Do you want to spice up your weekly menu? Try this
recipe that Michele Lawson found in a Taste of Home
magazine, and is a favorite among the staff.
Ingredients
3 cups uncooked bow tie pasta
1 pound ground beef
1/4 cup chopped onion
2 cups (8 ounces) shredded cheddar cheese
1 jar (16 ounces) salsa
1 can (14-1/2 ounces) diced tomatoes, undrained
1 envelope taco seasoning
2 cups nacho tortilla chips, crushed
Directions
1. Cook pasta according to package directions.
Meanwhile, in a large skillet, cook beef and onion
over medium heat until meat is no longer pink; drain.
Add the cheese, salsa, tomatoes and taco seasoning.
Drain pasta; stir into beef mixture.
2. Transfer to a greased 11-in. x 7-in. baking dish. Cover
and bake at 350° for 20 minutes. Uncover; sprinkle
with tortilla chips. Bake 10 minutes longer or until
heated through. Yield: 7 servings.

Piddles’s Chicken Vegetable Casserole
She not only drives the Bookmobile all over Bell
County, but she also is a great cook! She has shared
with recipe with both libraries, and it is now a favorite!
“This recipe is very easy to double and triple for a
larger baking dish.”
Preheat oven to 350º.
Casserole
3 cups cooked chicken (canned is ok)
1 can French style green beans, drained
22 oz. shoe peg corn (canned or frozen),
1 sm. can sliced water chestnuts
1 can cream of chicken soup
8 oz. sour cream
1 c. shredded cheddar cheese
Mix all ingredients together in a large bowl. Pour into a
9 x 9 casserole dish.
Topping
Melt 1 stick of butter in skillet. Crumble one sleeve of
Ritz crackers and ½ cup slivered almonds (optional) and
stir into butter. Spread over casserole.
Bake for 30 to 40 minutes. Serves 10-12.

Reuben Casserole
Does the Reuben Dip look good, but you were really
looking for a casserole instead? The Fultz Family
provided this recipe on page 82 in their 2002
“Recipes and Remembrances:”
1can corned beef 1 jar or can sauerkraut
½ c. onion, chopped 1 loaf rye bread, cubed
8 oz. sour cream ¼ c. butter, melted
8 oz. Swiss cheese, shredded
Mix corned beef, onion, sour cream, cheese and
sauerkraut together. Put into a greased casserole
dish. Cover with rye bread, after tossing with butter.
Bake at 350º for 25-30 minutes.
