INNOVATION | STARBUCKS AND ARAMARK TEST MOBILE TRUCKSON THREE COLLEGE CAMPUSES
Theres certainly a buzz on three Aramark partner campuses this fall with the arrival of a Starbucks mobile truck. The newtruck, being piloted at Arizona State University (ASU), James Madison University and Coastal Carolina University, offers a
menu of drinks and food nearly identical to what customers would find in their neighborhood Starbucks stores.
People are surprised to see it, and then theyre excited,
said Ike Van Skike, district manager for Starbucks licensed stores. ASU faculty and staff tell
me this is great for them because its an area of the campus that doesnt have a lot
of food service.
The Starbucks mobile truck can move to various locations on campus throughout the day, making it convenient for stude
and faculty to grab a snack or beverage. While hours will vary on each
campus, trucks are able to adjust business hours to suit the needs of their
customers, in some cases staying open later than a dining hall.
The mobile truck, which complements Starbucks cafes currently located
across campus, is a licensed store operated through Aramark and is a
natural extension of the long-standing partnership between the two
companies.

IMPACT | ARAMARK AND CHOP PARTNERTO FIGHT CHILDHOOD OBESITY
Aramark and the Childrens Hospital of Philadelphia (CHOP) announced a new partnership to combat obesity
in low-income families with young children. Aramark is investing $750,000 over three years in this innovative,
community-based research study, Home Plate, which is part of the hospitals Healthy Weight initiative to
improve the health and well-being of children and families.
Working with an esteemed organization such as CHOP on the fight against childhood obesity aligns the
interests of our respective organizations to help children and families, said President and CEO Eric Foss,
who made the announcement during a media event with CHOP, a longstanding Aramark Healthcare client.
The partnership aligns with Aramark Healthy For Life, our commitment to educate and empower people to
make healthy lifestyle choices. The Home Plate study will teach parents the necessary skills to cook healthy
meals at home with the goal of developing a low-cost model that can be replicated in communities across
the country.

Tuna Tartar RecipePREP TIME: 15 minutesYIELD: Makes a little over one cup of salsa
INGREDIENTS 1 cups of fresh or frozen cranberries
an apple, peeled, cored, roughly chopped
jalapeo (or serrano) chile, seeds
removed, roughly chopped (less or more totaste, depending on how hot the chile is andhow hot you would like your salsa to be)
2 green onions (scallions), chopped,
including light green parts (about 1/4 cup)
4 Tbsp sugar 2 Tbsp chopped fresh cilantro
1 Tbsp peeled chopped ginger
1 Tbsp lime or lemon juice
Dash of salt
METHOD1. Place the cranberries, apple, chile, green onions, sugar,
cilantro, ginger, lime juice and salt (all of the ingredients)in the bowl of a food processor. Pulse several times untileverything is finely chopped and well blended.
2. Let the salsa sit for at least 15 minutes for the sugar in thesalsa to soften the chopped cranberries. Store chilled in anairtight container until ready to serve. Serve with chips or asa side to pork, chicken, turkey, or steak. You can also place
a dollop over a cracker that has been spread with creamcheese for an appetizer.

INSIGHTS | GLUTEN SOLUTIONS
Serving the changing needs of our customers with special dietary restrictions especially
the top eight allergens and gluten continues to be an area of increasing
importance. Aramark recently launched a Gluten Solutions
program for implementation in our residential dining facilities.
The program delivers against our commitment to health and
wellness and supports those with specific dietary needs.
Additionally, Gluten Solutions accommodates the consumer
who prefers to avoid gluten for the perceived dietary benefits
and those who must avoid gluten due to their celiac disease or
gluten sensitivity.
OurJust Asksignage invites customers to seek out information
on the made-without-gluten recipes that we serve. For anyone
who must avoid gluten due to their celiac disease or gluten
sensitivity, an individually prepared made-without-gluten recipe
or a sealed individually packaged gluten-free lunch or dinner
entre can be provided.
