Chorizo Burger Sliders with Roasted Corn Salsa Verde

Here’s WHat You NeedBurger• 1lb ground beef (80/20)• ½ pound ground Mexican chorizo (or removed from casing)• 12 sweet roll buns, sliced• Salt & Pepper

Roasted Corn Salsa Verde• 2 corn on the cob• 4 tomatillos• 1 jalapeño• ½ large white onion• 2 garlic cloves• ½ cup cilantro• 2 tablespoons vinegar• 2 tablespoons water (optional)• Salt & Pepper to taste

Here’s WHat You do Burgers

Preheat a large cast iron skillet or grill over medium high heat. In a large bowl combine ground beef and ground chorizo evenly. Using about 1/3 cup per burger, form 12 slider patties. Make sure they are all the same thickness and are thinner in the middle. This will help with even cooking. Season with salt and pepper. Cook 3 minutes on each side or until desired temperature. Set aside while you toast the buns and assemble.Roasted Corn Salsa Verde

Preheat oven to 400 degrees. To a non-stick sheet tray, add jalapeño, tomatillos and corn. Roast for 20 minutes, turning every 10 minutes. Remove from the oven and set corn aside. Using a knife, remove the corn from the cob and add to a bowl. Remove the seeds from the jalapeños and add roasted tomatillos garlic cloves, onion, cilantro, water and vinegar to a blender. Season with salt and pepper. Add salsa verde to the roasted corn, mix and serve.

Get creative with your burger! Add avocado, caramelized onions, pico de gallo or a roasted pepper aioli for a sweet a smoky touch.
