How to Store Peaches

To ripen firm peaches, store between 65-70 degrees (high humidity). Peaches will ripen in 2-4 days depending on firmness. Ripe peaches can be stored for 3-4 days in single layer in refrigerator at 40 degrees. If stored more than 3 days, place in plastic bag to prevent dehydration.

How to Store Strawberries

Pick during cool morning to prolong shelf life. Pick fully ripe; berries will not ripen after harvest. Refrigerate. Soft or damp berries should be used as soon as possible. Don’t wash until just before use. Can be stored 2-6 days at 33-34 degrees (high humidity).

Bubblin’ Hot Peach Cobbler

1 cup sugar1 cup all-purpose flour2 cups cut-up peaches with juice1 stick butter1 teaspoon cinnamon1 cup milk1 teaspoon vanilla

Combine sugar, butter and vanilla. Add flour then cinnamon. Grease baking pan with butter and place peaches on bottom. Cover with mixture of sugar, butter, flour, and milk. Sprinkle cinnamon on top. Bake 25 minutes at 350 degrees until brown. Serve with vanilla ice cream. Yum!

Spicy Peach Jam

4 1⁄2 pounds ripe peaches peeled1 teaspoon cinnamon1 teaspoon nutmeg1 teaspoon cloves2 pounds sugar

Tie spices in bag. Mix everything well and boil until the consistency of jelly. Remove spice bag. Pack in hot jars to top and seal tightly. Makes 4 pints.Strawberry Preserves

1 quart strawberries1 quart sugar2 tablespoons vinegar or lemon juiceBoil berries with vinegar or lemon juice for 2 minutes. Add sugar and boil 8 minutes. Let stand overnight or until cold. Put in glasses or jars.

Peachy Sweet Potatoes

2 cups peaches peeled and halved3 tablespoons margarine, softened2 1⁄2 cups sweet potatoes, cooked and mashed2 tablespoons brown sugar1 1⁄2 teaspoons grated orange peel1⁄4 teaspoon salt2 tablespoons orange juice3 tablespoons peach juice3⁄4 cup chopped pecans3 tablespoons brown sugar

Arrange peach halves with cut side up in lightly buttered baking dish. Cream butter until very soft. Add mashed sweet potatoes. Add 2 tablespoons brown sugar, orange peel, salt, orange juice and peach juice. Whip all together. Spoon mixture into peach halves. Sprinkle with chopped pecans and brown sugar. Bake at 350 degrees for 20 minutes. Serves 8. May be assembled ahead and then baked right before serving.

Peaches and Cream Pie

1 unbaked 8-inch pie shell5-6 fresh South Carolina peaches, peeled and sliced1 cup sugar5 tablespoons flour1 cup whipping cream1 teaspoon vanilla¼ cup slivered almonds

Arrange peach slices in pie shell. Mix sugar, flour, whipping cream and vanilla together. Pour over peaches. Sprinkle almonds over mixture. Bake 1 ½ hours at 350 degrees.

Peach Casserole

3 ½ cups fresh peaches½ cup sugar5 tablespoons flour2 cups grated cheese1 stick melted margarine1 (1/4 pound) package Ritz crackers, crushed

Put peaches in bottom of casserole dish coated with non-stick cooking spray. Mix sugar and flour; put on top of peaches. Add grated cheese. Mix crushed crackers and melted margarine together and add to top. Bake at 350 degrees until bubbly.

Low-Cal Thick Strawberry Shake

1⁄2 cup fresh strawberries3 ice cubes1⁄2 cup skim milk3 packets artificial sweetener1 teaspoon lemon juice

Combine all ingredients in a blender. Blend at high speed until smooth, about 1 minute. Serve immediately. Makes approximately one 12-ounce serving.

Glazed Fresh Strawberry Pie and Easy Rich Crust

1 baked 9 inch pie shell1 c. sugar2 tbsp. cornstarchPinch salt1 3/4 c. cold water1 tsp. vanilla1 box strawberry Jello2 box whole strawberries

Mix together sugar, cornstarch, water and salt. Cook until clear, stirring constantly. Add vanilla and strawberry Jello. Cool until it begins to thicken. Fill baked pie shell with berries. Pour cornstarch-gelatin glaze over berries and place pie in refrigerator. Top each serving with whipped cream. Fresh peaches and orange Jello - another idea! Also, raspberries with raspberry Jello!

Strawberry Cake

18 oz. yellow cake mix 4 large eggs 1/4 cup sugar 1/4 cup water 1/3 cup canola oil 8 oz. sour cream 16 oz. powdered sugar 16 oz. sour cream 16 oz. cool whip 3 cups strawberries (fresh, coarsely chopped)

Combine cake mix, eggs, sugar, water, canola oil, and 8 oz sour cream. Bake in three layers at 350 degrees for 20-25 minutes, or until done.

Combine powdered sugar and 16 oz. sour cream. (Do not use mixer.) Fold in Cool Whip, then strawberries.

Use strawberry mixture as both filling and frosting.

Store in refrigerator.
