Apple Crumble Pie"In my house it's not Christmas without a warm apple pie, this apple

pie to be specific! This recipe is a great spin on the traditional applepie…try is with a scoop of vanilla ice cream on top."

1 Honey Maid Graham Cracker Pie Crust 6 oz.1 egg white, lightly beaten1 21 oz can of apple pie filling 1/2 cup of flour1/4 cup granulated sugar1 1/2 tsp ground cinnamon1/4 stick of butter3/4 cup Planters chopped pecans 1 Tbsp powdered sugar

Preheat oven to 375 degrees. Brush pie crust with lightly beaten eggwhite. Bake 5 min and cool. Spoon pie filling into crust. Mix flour,granulated sugar and cinnamon in a medium bowl. Cut in butter untilmixture resembles coarse crumbs, stir in pecans, sprinkle over pie filling. Bake 25 to 30 minutes or until topping is golden brown. Coolslightly on wire rack. Sprinkle pie with powdered sugar.

But candycanes weren't alwaysthe curved and color-ful treats they aretoday. In the 1700s,candy canes werenothing more thanstraight white sticks ofsugar candy used todecorate Christmastrees. A choirmaster atCologne Cathedraldecided that havingthe ends bent to depicta shepherd's crook andpassing them out dur-

ing church serviceswould help keep chil-dren quiet. It was notuntil roughly the 20thcentury that candycanes acquired theirred stripes. Some sur-mise that the candycane is shaped like ashepherd's crook torepresent Jesus Christ,who tended to hisflock of supporters.Others say that it's a"J" for Jesus.Regardless of theirshape, hundreds ofthousands of candycanes are now manu-factured and shippedfor the holiday seasoneach year.

1 lb. Jimmy Dean regular pork sausage2 C grated medium or sharp cheddar (the bags of pre-great-ed come in 2-cup bags)7 eggs, beatensalt and pepper1/2 cup milk1 can Pillsbury refrigerator biscuits (original)A 9x13 oven safe casserole dishSpray Pam

Spray bottom of casserole dish lightly with no-stick spray; roll doughinto the bottom and push together perforations to make a seamlesspiece. Cook sausage, breaking it up so it is crumbly. Sprinkle thecooked sausage evenly over the dough.

Beat eggs, milk, salt and pepper together. Pour over sausage.Sprinkle cheese over top. Cook at 350 for about 45 minutes. Whencenter rises it should be done.

Cranberry Salad“When I was a kid, we grew our own cranberries in a cranberry bog

so I picked them out of the freezing water and prepared the salad withmy mom. Making it always reminds me of growing up and our bigholiday gatherings.”

2 C ground raw cranberries 2 C sugar 1 sm pkg lemon flavored jello 1 C hot water1 C pineapple syrup 1 can crushed pineapple drained 1/2 C broken walnuts 1 C chopped celery

Dissolve jello in 1 cup boiled water. Drain pineapple and add 1 cupjuice to jello. Chill until just starting to thicken and set. Crush cranberries in food processor. Add sugar to cranberries, mix well. Add cranberry mixture, pineapple, walnuts and celery (after choppingin food processor). Chill until firm and serve.

Homemade Peppermint Oreos“This is a fun recipe to send to school with the kids!”

2 boxes Devil's food cake mix4 eggs2/3 C vegetable oilFrosting:1 (8 ounce) package cream cheese, softened1/2 C (1 stick) butter, softened4 C powdered sugar1 tsp peppermint extractsprinkles or crushed candy cane for decoratinggreen or red food coloring (optional)

Preheat oven to 350 degrees. Line cookie sheets with parchmentpaper.

In a large bowl combine the cake mix, eggs, and oil with a mixer. Thebatter will be very stiff. Pinch pieces of batter and roll into 1 inch balls.Place 1 inch apart on prepared cookie sheets and flatten slightly withfingertips. Bake for 8 to 10 minutes. Remove immediately from thecookie sheets with a spatula and cool on a wire rack.In a small glass bowl, combine the cream cheese and butter untilcompletely blended. Gradually add in the powdered sugar and pepper-mint extract and mix until the icing is smooth. Color frosting green orred if desired. Spread half of the cookies with icing and top withremaining cookies.Roll in sprinkles, crushed candy canes, or just leave them plain.Store in the refrigerator in an airtight containers or resealable plasticbags. Makes 2 dozen cookies.

Nanny’s Sweet Potato Casserole“ My mother-in-law shared this recipe with me. My family loves

for me to cook it on Thanksgiving & Christmas.”

About 8 Sweet Potatoes from Mr. K’s (recipe calls for 3 Cmashed, but I don’t think that is enough)1 C of Sugar2 eggs well beaten1/2 tsp of salt1/3 C of milk2/3 C melted butter 1 tsp of vanilla

Boil the sweet potatoes and remove the skins when they begin tocool. My mother in law strains the sweet potatoes, but if you mix well,there won’t be any strings. Combine the above ingredients until wellmixed. Consistency should be smooth and not too soupy. Spread ina rectangular casserole dish and set aside.

Topping1/3 C self-rising flour1 C brown sugar2/3 C butter1 C chopped pecans or walnuts

Cream the butter and sugar. Add flour and nuts and set aside. Bake the casserole for about 1/2 hour at 350 degrees until heatedthrough. Add the topping and continue to bake about 10-15 minutesmore until potatoes are bubbly and topping is slightly melted.

Russian Tea“On cold winter mornings my grandmother would always fix us

a hot cup of Russian tea. It tastes like Christmas!”

1 C instant tea2 C Tang2 C white sugar3 oz package powdered lemonade mix2 tsp ground cinnamon1/2 tsp ground cloves

In a large bowl, combine all ingredients and mixthoroughly. Store in a sealed jar.To use, mix 3-4 teaspoons with a cup of hot water and enjoy!

3 Cans Buttermilk Biscuits, Quartered1 1/2 Sticks Melted Butter1 1/2 C Brown Sugar1 tsp Cinnamon1/2 tsp Nutmeg1 C Chopped Pecans

Layer 1/2 of cut biscuits in bottom of well greased bundt pan. Pour1/2 of sauce mixture over biscuits. Layer other 1/2 of biscuits andthen rest of sauce. Bake at 300 degrees for 40-45 minutes.
