Between the arid deserts of the north and the glaciers of Tierra del Fuego in the far south, lush green valleys and hillsides provide perfect conditions for planting vines. Simon Milroy, Manager at Majestic Wine Battersea, discusses different styles and varieties of port – and clears up a notorious matter of after-dinner etiquette!

It’s an age-old argument: which way do you pass the port? The answer is simple: to the left. Sticklers for tradition will add that no one but the host should put the bottle down, pointing to traditional round-bottomed port decanters that can only be placed in a special holder kept next to the host.

Formalities aside, here are the basics. Port is wine fortified by adding a neutral spirit that raises the alcohol level to arrest fermentation, giving sweetness through the residual sugar. There are a number of different styles, of which ruby port is the simplest, a blend of young wines and fruity in style. At this level, it’s worth trading up slightly to Late Bottled Vintage port such as Taylor’s LBV 2003, which won’t need decanting, or Fonseca’s unfiltered LBV 2003, which usually will.

By contrast, Fonseca’s Crusted Port is a blend of different years that’s bottled young with no filtration. Richer and fuller-bodied than a LBV, this will

continue to develop in the bottle and must be decanted before serving. A personal favourite is Tawny Port, a paler wine that spends all of its life in casks and shows great finesse and nutty characters. Taylor’s 10 Year Old Tawny is a great example of the style.

Finally we have vintage and vintage’s style ports. Vintage ports are only produced in the very best years and often sold via en primeur. In undeclared vintages, port houses produce what is known as a single Quinta (vineyard) wine which is aged in Oporto until ready for drinking. These vintage style ports often match up to vintage ports but at a reduced price and with no need for further cellaring.

Try Taylor’s Quinta de Vargellas 2001 or Delaforce’s Quinta da Corte 1991 for a superb introduction to the single Quinta style. And remember, next time you have port, pass it to the left!

Christmas Day

Dived scallops from the nearby Dorset coast are a real festive favourite at our home. This dry white has enough body to complement the scallops’ texture, without overpowering their delicate sweetness.

Red or white with the turkey? That’s the big Christmas question for many people. The answer’s simple: keep everyone happy with a bottle of both! I’ve chosen a finely textured white Burgundy and a red that won’t overpower the delicate flavour of the meat but can still handle all the trimmings.

I would suggest a relatively rich white to complement the texture of goose. This stunning Côte de Beaune Chardonnay also has the mineral edge to cut through the fattiness of the bird.

This stunning Gargenega from east of Verona flatters the delicate flavour of the salmon, but has enough weight to deal with the buttery pastry.

Boxing DayHaving been lucky enough to have tasted at this Domaine in September, I couldn’t look past this beautifully crafted, refreshing Burgundy as the perfect partner for rich, fatty duck. If you’re going specifically for wild duck or mallard, I’d go for the ‘Clou d’Orge’, which gains greater depth and structure from older vines and which we stock in small amounts.

The sweetness of a glazed ham needs a fruit-driven wine that’s also fresh enough to deal with the slightly salty character of the meat.

The Boxing Day cold meat platter cries out for a refreshing, light to medium-bodied red with bags of juicy fruit, such as this Gamay from one of the best known Cru villages in Beaujolais.

I recently went to see a comedian who I was at University with. There’s always one, isn’t there? He started off by putting himself in our shoes.“Hope it’s not rubbish,” he thought we might be thinking, “I’ve brought friends, you know, and if it’s rubbish, they’ll all blame me.” It won’t be rubbish, he reassured us, and thankfully it wasn’t. The sentiment strikes a chord now, writing this. Christmas bubbles will most likely be bought and shared with family, friends or colleagues. This is a wonderful tradition but leaves a nagging sense of responsibility hanging over the buyer. “Please, please... don’t let it be rubbish.”

There is so much choice it can seem bewildering. Brand names, styles, vintages. Then there is the little matter of price to factor in, and beyond price, good value. But simplify it down and things seem clearer. There are numerous ways, but I see four sections into which I crowbar nearly everything.

First there is the good quality sparkling wine that doesn’t cost the earth section, or GQSWTDCTES for short. This is what Prosecco and Cava were born for. My choice would be the Prosecco di Conegliano, easy-going, refreshing and eminently drinkable.

Next is the premium sparkling section - or ‘Champagne by any other name’ section. Wines in this group often punch well above their weight. Pound for pound, I rate them as some of the best value sparkling wines available. Green Point NV is a cracking starting point but move onto Cloudy Bay Pelorus ‘05 for a dazzling sparkling wine worth far more than its price tag.

Champagne under £20 has its own section because it is so popular. It has one huge advantage over the premium sparkles - it is the real deal, the true Champagne. Jacquart NV, Canard Duchêne NV (and Nicolas Feuillatte NV) are the standard-bearers in this bracket, the old firm, and they continue to offer the highest quality Champagne at the best prices.

Then there is the brands section, usually starting to battle it out between £20 and £30. To my taste, which has a preference for a weightier flavour experience, Bollinger is in a class of its own. The stylish nature of the finish just lingers on and on. On the lighter, more elegant side of the scale, Taittinger and Perrier-Jouët are the names I look out for.

That is how I see it anyway, but it’s all subjective. As comedians will tell you, every crowd is different. One of the greats, Eric Morecambe had it figured out. “What do you think of it so far? Rubbish.”

As Becky Leach’s career path shows, we’re big on internal promotion. Becky joined the Chichester store team in 2002, moving into IT in 2005 and working her way up through the department – all the while retaining a love of wine that’s seen her excel in her WSET exams and diploma study. Here, Becky explains the ageing process for red wines in Rioja.

Rioja is undeniably one of Spain’s finest wine-producing regions – one of only two to achieve the highest classification within the country’s wine laws. With such high standards to maintain, the minimum ageing requirements are longer in Rioja than other regions.

Crianza wines are aged for no less than 24 months, twelve of which must be in oak barrels. Marques de la Concordia is a fantastic example; the oak shows itself in a warming hint of spice that lingers on the finish, while red berry fruits still shine through.

At the next level, Reserva wines have an extra dimension that comes from at least three years’ ageing, including one in oak barrels. The beautifully balanced CVNE Reserva sees baked red fruits like cherries and plums perfectly interwoven with a hint of vanilla.

The pinnacle of Rioja, Gran Reserva, is only made in exceptional vintages and must be aged for at least five years (two in barrels). For a real treat, try the Monte Real 1978 Gran Reserva. It’s a gorgeous tawny colour with a dried-fruit nose, while on the palate, a subtle smokiness weaves its way through the fruit, leading to a savoury finish just lifted by a trace of cloves. Already into its fourth decade, this elegant wine illustrates to perfection the maxim that patience is a virtue.

Rich savoury notes with sweet spice and a touch of tobacco give a complex long finish.

Contino Reserva Rioja 2004/05 £25.00 £20.00Ripe, juicy blackberry aromas follow through on to the palate, after which come the savoury notes and a flicker of liquorice. Wonderfully moreish, mouth-filling and velvety: perfect with roast lamb.

This sense of excitement should come as no surprise. Pinot Noir is a notoriously fickle grape and there are very few places on earth that can consistently produce the goods – parts of the US West Coast, the cooler regions in Australia and of course its homeland Burgundy. The land of the long white cloud is a welcome and wonderful addition to this exclusive club.

That New Zealand is currently producing some of the most exciting Pinot Noirs in the world is largely a result of two factors. The first is a marginal climate in which the grapes only just ripen, creating all of the finesse and subtlety of great Burgundies. Add to this the growing confidence and maturity of Kiwi winemakers, and you end up with some incredibly complex and interesting wines.

Think of New Zealand wines and the chances are your mind will jump instantly to Marlborough Sauvignon Blanc. And while they’re undoubtedly the stars of the show right now, it’s Kiwi Pinot Noirs that are causing the real stir in the wine world.

Every vineyard has its own individual story, but some are truly unique. In this issue, we hear from two genuine one-offs – a Lebanese legend and the winery voted South Africa’s finest for five consecutive years.

Q. How long has your family been producing wines in the Lebanon? A. My father Gaston Hochar started our winery in Ghazir in 1930. Therefore 2010 will be our 80th year of production – 80 years since the creation of this great adventure.

Q. How do vintages vary at Château Musar? A. Vintage variation is nothing to fear. No two years are the same in nature and we are also changing as we have more experience year after year. As well as varying the proportion of varietals in the blend, each year we use a combination of different vineyards. The assemblage reflects how I perceive the year. My aim is always to show the characteristics of the vintage.

Q. What are your favourite grape varieties? A. I am most fond of Cinsault and Merwah, an ancient indigenous white grape variety to Lebanon.

Q. If you could have a vineyard anywhere else in the world wherewould it be? A. In Mesopotamia.

Q. Can you recommend your favourite food matches with your wines?A. Personally I adore Château Musar White 1969 with foie gras. Our whites should not be chilled and are perfect food wines.

Q. If you were told you could only drink one more glass of wine ever, what would you choose? A. Probably a Tokay from Hungary.

This enticing wine has intense aromas of toasted brioche, almonds, apricots, baked apples, ripe pears, vanilla pods and honey. The palate is opulent with a buttery texture and vibrant flavours of nuts, tarte tatin, vanilla, butterscotch, apples and quince. It is rich and mellow with a very long, honeyed finish.

Q. What are the hardest and most enjoyable things about being a wine producer? A. The hardest is definitely the long hours – both in summer and winter – only to see all that work destroyed by a storm. The most enjoyable is the purity and soul cleansing of honest labour.

Q. What is your favourite grape variety and why? A. Most definitely Cabernet Sauvignon. Most wines need good food to complement them but good Cabernet is a good meal in itself.

Q. How has the South African wine industry changed since the end of the Apartheid era, and how do you envisage the future? A. Firstly, we can now sell our wine anywhere and wine students can work anywhere in the world, which was not possible before the end of apartheid. There is a wider variety of styles and the wines are riper, healthier, better. The Cape is the best place on this planet to grow grapes and with virus-free vineyards – older and better – the future will be absolutely great!

Q. Have you seen the effects of global warming on your wine producing so far? What do you see happening in the future?A. We see changes in rainfall patterns, our summers are definitely not as hot and most disturbingly, winters are warmer. I have also seen Bat Ear foxes on the property; they normally inhabit semi-desert areas, so that is alarming. Whether this can be ascribed to global warming or just a warmer period, I don’t know. But Vergelegen is a sacred place and we need to protect it as much as possible against an uncertain future.

Q. If you had to describe yourself as a wine what would you be?A. Cabernet Sauvignon – great complexity, substance, long aftertaste and incredible potential for further maturation.

Q. What is the most you have ever paid for a bottle of wine?A. About R2,500 (£205) for a 1982 Château Mouton Rothschild.

Since exploding onto the scene 20 years ago, New Zealand Sauvignon Blanc has become one of the most instantly recognisable styles of wine in the world. By harvesting the grapes at a marginally earlier stage of ripeness than in other countries, Kiwi winemakers get immense greenness and bite, with the most fantastic trace of clean acidity and that unmistakable hint of gooseberry.

Of course it helps that New Zealand enjoys the perfect Sauvignon climate and soils – and nowhere has it better than the inimitable Marlborough region. Situated in the north of the South Island, it’s a region that produces characteristically pungent and unashamedly herbaceous wines which stand up to notoriously complex food pairings and are absolutely ready to drink today.

Having made his mark at Majestic, not least through the fantastic articles and blogs he’s written, John Abbott is leaving his role as Trainee Manager at our St. John’s Wood store to become Deputy Editor at Decanter.com. Below this level one tends to find good-quality commercial wines, while above it lies the territory of the renowned producers. Around the Regions - Burgundy 29

Outside of Chablis, all of Burgundy’s Grand Cru vineyards are situated in the Côte d’Or, which runs south from Dijon. In this somewhat confusing part of the region, wines are generally produced in small quantities, with huge variations in style and quality depending on the terroir of the vineyard and the skill of the winemaker. Further south, the Côte Chalonnaise produces less expensive but good quality wines, while the more affordable reds and whites can be found in larger volumes in the Mâconnais region.

In many areas of Burgundy, Napoleonic inheritance laws have subdivided vineyards to the point where many growers now only own one or two rows of vines in any given climat. While some growers produce their own wine under a Domaine label, more often than not they will sell their grapes to a negociant or co-operative, to be blended with other grapes from the same appellation in order to create a larger volume.

The complexity of Burgundy is quite incredible. Growers, negociants and co-operatives all have a very important role to play, with the best all producing good to exceptional quality wines at realistic prices.

In a class of its Rhône

Running between Lyon and Avignon, the Rhône Valley is home to some of France’s oldest and most distinguished vines. The region’s wines enjoy worldwide renown as some of the country’s most diverse and best value for money.

It’s a region divided into two distinct sections. In the north, where Syrah rules, the vines can be seen hugging the steep slopes bordering the river. Here, the cool, dry Mistral winds exert their strongest influence creating a climate which promotes reds with a distinct olive tapenade and smoky bacon character.

Home to Châteauneuf-du-Pape, the southern Rhône has a more Mediterranean climate that sees Grenache assume prominence. The Côtes du Rhône appellation – the standing of which has improved considerably in recent decades - lies within this sub-region, accounting for some 80% of the entire Rhône Valley’s production.

Many of the wines in our range hail from the stellar 2007 vintage - widely regarded as perhaps the best year in the Rhône since 1990, producing outstanding wines right across the appellation and price spectrum.

By volunteering their help on a grape-harvesting – or ‘vendange’ – trip, some of our staff enjoy the distinct pleasure of helping to produce a wine they will go on to sell in-store the next year. Guy Bart-Smith, Assistant Manager at Majestic Glasgow West End, describes the 2009 vendange at Château Guiot, in the heart of the Costières de Nîmes.

Day 1We arrived late afternoon to a warm welcome from our hosts, François and Sylvia, who instantly made us feel part of the family. The conversation soon turned to the business at hand. Much depends on a spell of good weather long enough to complete the harvest and a change was said to be coming and not for the better. That meant working well into the night and the early morning. Luckily we were officially still off-duty!

Day 2After an early start, we made our way to the cellar to be assigned jobs. Mine was to check sugar density and temperature during fermentation. After that, I happily helped Sylvia taste the wines and check the alcohol levels, using a mustimeter and a sip or two to confirm that all was welland the wine on track. It was a fascinating day. The Robert Mondavi StoryKat Barlow, Manager at Majestic Wine Greenwich, looks at the legacy of one of Californian wine’s true pioneers.It may be one of the last wine regions to have developed in California, but Napa Valley is now indisputably the most famous. Its success is as much down to the innovative winemakers attracted to its unique terroir, as the massive investment the region has received. And the late Robert Mondavi was one of the true pioneers.

Mondavi made his name in the wine world when he introduced it to Fumé Blanc in 1968. The story started two years earlier, with a crop of Sauvignon Blanc grapes that Mondavi bought from a local grower and decided to experiment with. The result was a refined and dry wine; reminiscent of the great Loire wines but with a subtle American twist – oak. Fumé Blanc was Mondavi’s great legacy, but he created a rich and acclaimed portfolio of complex and delicious wines based on international grape varieties. His continual experimentation led to joint ventures with many respected winemakers, including the creation of Opus One with Baron Phillipe de Rothschild of Bordeaux.
