hen January rolls around, I’m just startingto crawl out of a turkey haze when I’m hit withthe stark realization that the festive sparkle ofthe holidays has given way to three moremonths of cold, dark winter. “Isn’t it spring yet?” Iusually ask myself sometime around mid-February, desperately willing the blustery snowto give way to fresh flowers and just-mowedlawns. I find this stretch of winter to be thelongest and gloomiest of the year, so what betterway to find some respite than treating yourself toa delicious meal?

For me, cooking has always been an escape. Anexciting way to stretch my creativity andexperiment, “travel” somewhere new to try adifferent cuisine, or return to comfortingfavourites. At my house, one of the simplest andmost versatile dishes I turn to at this time of yearis pasta. With an endless combination of recipesand ingredients, from stick-to-your-ribs comfortto light and healthy, pasta is literally the perfectmeal for every occasion. Here are three of myfavourite go-to dishes to enjoy this winter. Oh,and the best part? You can find all these recipes(and more) at Red Deer Public Library.

This recipe can also be mealprepped and refrigerated or frozen ahead oftime, so you have a meal in a flash later on.When I made this, I had enough for two pans ofpasta - one for dinner, plus one for the freezerto pull out later. And that makes the extra timeneeded to stuff the pasta shells totally worth it.Bonus points come from being a totallyversatile starting point for your own creativity…you can change things up by using an alfredosauce instead of a tomato sauce, subbing inother veggies (kale and spinach, sauteedchopped mushrooms), or adding in somecooked ground meat (crumbled Italian sausagewould be amazing if you’re not concernedabout keeping it vegetarian).
