RECIPE

Add all of the ingredients to a blender or food processor. Blend until completely smooth and well-combined. Heat a non-stick pan or pancake griddle to medium-high heat and spray with cooking spray. Once hot, measure ¼ cup of pancake batter and pour into the hot surface. Allow batter to cook on one side and pancakes turn a deeper red, about 2-3 minutes. Carefully flip and continue cooking until cooked through, about 2-3 minutes. Repeat for the remaining batter. Serve pancakes with maple syrup or homemade whipped cream.

RECIPE

Crush cereal in a food processor until coarsely chopped. Dissolve sugar in warm water then whisk beaten eggs in sugar and water. Dip Texas toast in egg mixture then in crushed cereal, then egg mixture again then directly onto hot and oiled griddle. Cook until golden brown on both sides and transfer to plate. Garnish with fruit and warm maple syrup. Dust with powdered sugar and serve.

St. Patrick’s Day How Corned Beef Became

Synonymous with St. Patrick’s DayIreland was a major producer of salted meat, going back all the way to the Middle Ages and lasting through the 19th century. It wasn’t always called corned beef, though. That didn’t come until the 17th century when the English coined the term.While Ireland produced large amounts of corned beef, it was nearly all for trade. Corned beef was considered a luxury, and largely much too expen-sive for the Irish to consume. Instead, they relied on dairy and pork, especially salt pork, a relative to bacon.Our association with corned beef as traditional Irish fare can be traced back to the 19th century and the Irish immigration to the U.S. While the newly im-migrated Irish were used to eating salt pork back at home, its nearest counterpart, bacon, was prohibi-tively expensive in the U.S.Their best option for a lower-cost meat was, you guessed it: corned beef. What was once a luxury item became a food that was now inexpensive and readily available. So it was the Irish-American con-sumption of corned beef that initiated its associa-tion with Ireland and the holiday of St. Patrick’s Day.And as for pairing cabbage with corned beef, it was simply one of the cheapest vegetables available to Irish immigrants, so it was a side dish that stuck.

Meanwhile, place stock, wine, bay leaf, and saffron in another pot and bring to a boil. Add mussels, shrimp, and clams and cook until all the clams and mussels have opened and shrimp is opaque, 4 to 6 minutes. Transfer mussels, shrimp, and clams to a large bowl and set aside. Add shellfish cooking liquid and fideos to tomato sauce. Cook, stirring frequently, until the pasta absorbed a lot of the liquid and are soft, 10 to 15 minutes. Add mussels, shrimp, and clams and simmer until just heated through. Serve immediately.

Trim beef tenderloin of any sliver skin. Season with salt & pepper. Smoke until an internal temperature is 120-degrees. Remove from smoker and allow to rest 20 minutes before refrigerating. Place wild mushrooms on a skillet and roast for 5-7 minutes in a 350-degree convection oven. Combine lemon juice, Dijon and green onions in a stainless steel bowl. Whisk in olive oil. Toss roasted mushrooms with 2/3 of the dressing and reserve 1/3. To plate, slice two 2 oz slices of smoked tenderloin and shingle them over mushroom salad. Drizzle remaining dressing over beef. Accompany with toasted mini Naan bread.
