Our list stems from the emotions wines transmitted to us during trips, tastings, and meetings with producers.

We think that grapes and wines should represent the territory they come from. The producers’ ethics, often small producers,

must resonate with our own ethics and values.

Ideally, we would want our list to be able to satisfy all - or almost all - tastes and pockets, while never disregarding quality.

We think it’s definitely possible to drink well while spending less.

Thanks to these wines, we would love to take you on a journey through the places they are produced in, as to share with you the mastery

and the history behind each and every one of them.

You will find a focus on wines coming from the region of Apulia. That’s because they tell the story at the foundation of our Restaurant’s cuisine and so we think it’s worth giving them the space they deserve.

Organic Grapes are grown without fertilizers, herbicides or fungicides. This is a wine made with certified organically grown grapes using a small amount (100 ppm) of added sulfites as a preservative.

Biodynamic Biodynamic farming uses a holistic approach to agriculture which focuses on supporting the health of the entire ecosystem of the vineyards considering the soil beneath them a living organism. Crops are often planted, pruned and harvested according to lunar cycles. Certified biodynamic wines may contain sulfites up to 100 ppm.

Sustainable Winemakers may use all or some organic farming practices, but do not adhere to a specific philosophy certification. Winemakers may, because of extreme weather or other environmental factors, use non-organic treatment to help a particularly difficult vintage. At minimum, winemakers using sustainable farming practices, hold the idea of respecting the environment at the forefront of their process.

FRIULI 220 Friulano 2016 Prepotto area Colli Orientali del Friuli DOC - Colli di Poianis $50 100% Friulano. White flower and golden apple. The mouth is velvety with a light almond finish. Round and balanced. 225 Klin Riserva 2011 Collio - Primosic $90 Sauvignon blanc, Friulano, Chardonnay, Ribolla gialla, 24 months wood aging, then bottled without sterile filtration. The wine is aged in bottle for a further 12 months. Golden yellow, complex and elegant on the nose, exotic fruits and spices. Full bodied with balanced acidity and in harmony with refined and toasted undertones. Pair with happiness. LOMBARDIA 230 Gli Orti Riesling 2015 Oltrepò - Az. Agr. Fresh aromas of apple, pear and almond balance clean minerality. Crisp and refreshing. 245 Lugana Riserva Sergio Zenato DOC 2014 - Zenato $72 100% Trebbiano di Lugana. Fermented and aged in barrels and 12 months in bottle before being put on the market. The color is clear gold, elegant hints of flowers, citrus and exotic fruit, good depth and balance, with persistent aromatic sensations. TOSCANA 270 Terre di Tufi 2016, Teruzzi & Puthod $45 Vernaccia di San Gimignano, Chardonnay and Sauvignon, intense white wine at once full bodied and velvety. 275 Palistorti Bianco 2016 - Tenuta di Valgiano $59 Vermentino 50%, Trebbiano 16%, Malvasia 16%, Grechetto 16%. Intense and fruity aroma with a hint of pink grapefruit. It is fresh on the palate and the acidity is balanced by considerable body, warm but harmonious with ample aftertaste. 277 Montecarlo Bianco 2017 – Fattoria del Teso $50 Trebbiano, Vermentino, Pinot Bianco, Sauvignon. Intense on the nose, fresh and floral, with tropical fruits. Crispy, fruity, with persistent mineral finish. Concrete vats. LAZIO 280 Ferentano Lazio IGT 2013 - Falesco $55

100% Roscetto, ancient indigenous grapes. The nose is rich of aromatic sensations ranging from banana to pineapple, aromas which range from the herbaceous to vanilla. The flavors are rich, soft and full with a superior, long and lingering finish. MARCHE 285 Pecorino Villa Angela 2017 Offida DOCG, Velenosi $48 100% Pecorino, straw yellow, lots of exotic fruits on the nose, pineapple, passion fruit, mango and white peach, saline. 290 Verdicchio dei Castelli di Jesi Classico Superiore DOCG 2016, Pievalta $48 100% Verdicchio. Made with grapes grown in clay and limestone-rich soils. This Verdicchio is fresh, with citrus notes and a rich finish. 292 Verdicchio dei Castelli di Jesi Riserva San Paolo DOCG 2004, Pievalta $130

100% Verdicchio, beautiful amber color with maceration in stainless steel. Ageing for more than 24 months in stainless steel. Candied fruits and herbs, subtle saffron notes, mineral and fresh notes still alive. A real gem.

UMBRIA 295 Grechetto Assisi DOC 2017, Sportoletti $42 100% Grechetto, golden yellow, on the nose white peach and Golden Apple, mineral and minty finish. 300 Bramìto Umbria IGT 2016 - Castello della Sala $55 100% Chardonnay. Matures in barrique and stainless steel. A clean and fruity nose, with notes of white peach, fresh almond. Lively on the palate, excellent acidity that counterbalances its weight. Long finish.

CAMPANIA

305 Bonea Falanghina del Sannio DOP 2016, Masseria Frattasi $52

100% Falanghina, hight altitude and volcanic soil give a full-bodied wine with exotic fruit on the nose and mineral, salty and long finish. Bonea is the Sannio’s most ancient Cru vineyard, below which the oldest Samnites Necropolis was discovered. 310 Greco di Tufo ORO 2015 DOCG, De Conciliis $54

100% Greco, aromas of citrus and pine nuts, medium-bodied on the palate. Complex great finish. 315 Radici Fiano di Avellino DOCG 2015, Mastroberardino $58

100% Fiano di Avellino, straw yellow, on the nose hints of pears, pineapple, acacia, citrus and hawthorn, good acidity but soft. Long dry fruit finish.

Greco Mascolino, Greco, Malvasia, a distinctive cru wine produced from the grapes of a single vineyard, located in an ecologically pristine area. Deep yellow, aromas of apple, peach and melon; aromatic well balanced with acidity. Steel.

SARDEGNA 350 Funtanaliras Vermentino di Gallura ORO 2017 DOCG - Monti $50 100% Vermentino, Straw yellow, thyme, citrus and hints of almond on the nose, fresh on the palate. SICILIA 360 Grillo Cavallo delle Fate 2016 DOC - Tasca D’Almerita $48 100% Grillo, brilliant straw yellow, offers a broad range of bright fruit aromas from crisp citrus to white peach, tangy apricots, and exotic tropical fruit like pineapple, a backbone of minerality leads into a balanced finish. 365 Eruzione 1614 Etna 2015 DOC, Planeta $79 90% Carricante, 10% Riesling, the 1614 volcanic eruption lasted for more than 10 years and stopped just next to the vineyard Feudo di Mezzo where this wine is produced. Elegant nose of orange flowers and lime zest with a light mineral touch. In the mouth is crisp, good fresh acidity and briny. Elegant and long finish. Stainless steel.

ORANGE WINES 400 Ribolla di Oslavia Riserva 2009 Collio, Primosic - FRIULI VENEZIA GIULIA $98

100% Ribolla Gialla, the aging on fine lees lasts 8 months in toasted oak tonneau, during which the wine almost completes malolactic fermentation. Further aging in bottle continues after bottling, without sterile filtration, over 12 months. Intense golden-yellow color. Characteristic and dry, the fragrance evokes acacia flowers, with undertones of bitter orange rind with pervasive mineral sensation. The finish is reminiscent of apricot stone and chestnut pulp. 405 Ramí Bianco 2015 - COS SICILIA $80

50% Grecanico, 50% Insolia. Spontaneous long fermentation on the skins with indigenous yeasts. Aged in concrete tanks and bottle. 410 Ribolla di Oslavia Riserva 2012 Collio, Primosic - FRIULI VENEZIA GIULIA $90

100% Ribolla Gialla, Golden Color. Fresh figs, Mediterranean herbs, orange tree flowers, plum, apricot and white chocolate. The palate is fresh and long lasting.

Delicate hints of cherry on the nose, harmonious and elegant due to mild acidity and tannin with a pleasant bitter almond flavor on the finish. An elegant, fruity red wine with good lengths. Stainless steel. 610 Pinot Noir Riserva Trattman Sud Tirol A.A. Mazon 2012 - Girlan $96

A selection of 100% Pinot Noir sourced from the slopes of the ‘Trattmann’ farm in Mazon, by many regarded as one of the best sites for Pinot Noir in Italy. Intense and complex nose with hints of ripe fruit, cherry and maraschino, soft and delicate palate with a good fruity tannic structure and elegant finish. 15 months in French barriques and large oak casks (12 hl). 7 months in bottle. TRENTINO 615 Teroldego Rotaliano Selezione Marco Donati 2015 DOC, Marco Donati $55 100% Teroldego. Marco Donati is the 5th generation of wine producers. The Rotaliano vineyard is the oldest site. Intense, brilliant, rich bouquet pleasantly fruity. Stainless steel and bottle. 616 San Leonardo 1999 Vigneti delle Dolomiti Igt – San Leonardo $380 617 San Leonardo 2000 Vigneti delle Dolomiti Igt – San Leonardo $270 618 San Leonardo 2003 Vigneti delle Dolomiti Igt – San Leonardo $210 60% Cabernet Sauvignon, 30% Carmenère, 10% Merlot. 24 Months in french Barriques 24 months in bottle. Noble and full of history, made only in best vintages, every sip tells you that wine, really is earth’s poetry. 619 Terre 2014 Cabernet Sauvignon, Merlot, Carmenère – San Leonardo TRENTINO $56 Fruit rich aromas, ripe plum fruit layered over faintly grassy notes. Dry soft and well balanced on the palate with a pleasant bitterish twist on the finish. 18 m. in big oak casks, 6 m. in barriques and 6 m. in bottle FRIULI 620 Ronco dei Moreri Refosco 2013 IGT, Marco Felluga $50 100% Refosco dal Peduncolo rosso, very old variety has been documented as growing in Venezia Giulia since 1467. Deep red color, nose intense fresh and fruity, ripe raspberries; robust in the mouth and a long finish. 12 months small and large barrels, 6 months bottle. 625 Merlot Collio 2011 DOC, Primosic $58 100% Merlot, brilliant ruby-red in color, full bouquet, fragrant with hints of rose. Soft flavors of small red fruits, dry, savory, which tends to become more refined and harmonious with age, deliciously velvety . 24 months in big barrells, 6 month bottle.

LOMBARDIA

630 Efesto Valtellina Superiore Inferno 2012 DOCG, Pietro Nera $56

100% Nebbiolo (Chiavennasca), bright ruby red color that becomes garnet with the aging. Intense scent of spices with a taste of violet. Armonic, sapid, elegant and persistent flavor. 24 months aging; 12 months in oak barrels, then in stainless steel tanks and in concrete tanks. 635 Sfursat di Valtellina Classico 2015 DOCG, Aldo Rainoldi $95

100% Nebbiolo (Chiavennasca) Its main feature comes from the peculiar way it is produced. It is the result of the vinification of grapes left to dry in stackable plastic boxes until December-January so that it develops a high concentration in sugar and a peculiar aroma. It is a full, round wine with a pronounced, complex aroma. 20 months in big barrels and 12 months in bottle.

VENETO

640 Grotta del Ninfeo Valpolicella 2014 DOC - Domenico Fraccaroli $52 70% Corvina, Corvinone, 20% Rondinella, 10 Molinara,vivid ruby red colour with purplish tinges; on the nose red fruit scent; on the palate it is fine and elegant, with a slightly acidulous and dry mouthfeel, characteristic of this vintage. 6 months steel tank. 645 Secco Bertani Original Vintage Verona IGT 2014 - Bertani $74

80% Corvina, 20% Sangiovese, Syrah and Cabernet Sauvignon, intense ruby red, clean and woody on the nose with hints of black cherry and tobacco. Elegant and youthful taste, good tannins, juicy and very persistent. 12 months in chestnut and cherry big barrels. 650 Monte Ca’ Bianca Amarone della Valpolicella Classico 2013 DOCG - Begali $190

40% Corvina, 35% Corvinone 20% Rondinella, 5% Oseleta, garnet red, on the nose is intense, ethereal and spicy; soft, warm, solid and robust on the palate. Grapes are dried for 4/5 months in well ventilated fruithouses. 48 months in barriques and large casks, 8 months in bottle. 655 Amarone della Valpolicella Classico 2007 DOCG (Bottled in Dec. 2012), Bertani $230

80% Corvina Veronese, 20% Rondinella, red color with garnet nuances, this Amarone is surprisingly intense on the nose; notes of dried fruits and plum, intense aromas of berries fruit compote, liquorice and chocolate; full in the mouth with velvety and round tannins which are enhanced by the sapidity and the acidity. Grapes are dried for 4 months in well ventilated fruithouses. 72 months in big barrels and 12 months in bottle. 11

Dolcetto

660 Dolcetto d’Alba 2017 Bussia, Giacomo Fenocchio $40

100% Dolcetto, red ruby color with nice violets reflexes. Its aroma is winey, fresh and pleasantly fruity. Its taste is dry, pleasantly bitter and harmonic. 6 months stainless steel tank and 4 months bottle. 665 Dolcetto di Dogliani Pianezzo 2015 DOCG, Francesco Boschis $45

100% Dolcetto, very deep ruby, rich nose of wild berries and sour cherries; supple, elegant flavor with barely present tannins made lively by acidity. 10 months in Fiberglass lined cement and steel.

Barbera 670 Per Alessandra Barbera d’Alba 2015 DOC, Hilberg-Pasquero $50

100% Barbera. A fruit-driven, nice, with loads of raspberries, strawberries and a bright lively activity. 672 Camp du Rouss Barbera d’Asti 2014 DOCG - Coppo $55

100% Barbera. A wine with plums and nectarines on the nose and palate. Medium body with bright acidity and a clean, fresh finish. Always a top Barbera maker in Piedmont. J. Suckling. 12 months in french oak barrels. 675 Pairolero Barbera d’Alba Superiore 2016, Sottimano $60

100% Barbera, dark, inky red; with loads of red fruits, minerals and a touch of graphite on the nose with a long, rich taste in which the fruity components and the spicy notes are well balanced by a good acidity. 16 months in barriques, 2 months in bottle. 676 Il Clumbè Barbera d'Asti 2007, Vivalda $70

100% Barbera. The Vivaldi family is a Barbera expert, producing this varietal in its birthplace. Clumbe' is produced in traditonal oak botte. The 2007 is a great vintage retaining its bright fruit with interesting tertiary notes from age.

Barbaresco

Complex nose of ripe red fruit and spicy overtones, and a warm, mouth-filling flavor with soft tannins, great elegance and an excellent finish. 24 months in french oak casks and stainless steel. 680 Barbaresco Pajoré 2014 DOCG, Sottimano $150 681 Barbaresco Pajoré 2015 DOCG, Sottimano $145 100% Nebbiolo, The Pajorè vineyard is located in Treiso, between Barbaresco and Alba, a few miles away from our other crus.
