i’ve always been influenced by the idea of Tivoli Gardens in copenhagen,

which was the inspiration for ultimately all modern amusements parks. i

remember the beautiful theater pavilions with the curtains painted with

peacock feathers that had little ballet performances. at Tivoli, there were rides,

but more important than the rides were the cafes and the refreshments, and

just the sense of being in a children’s garden, a ‘pleasure garden’ for all people

to enjoy – which perhaps is the best phrase to describe what we’re creating

here. This vision was replicated at places on coney island, like luna park, and

George c. Tilyou’s steeplechase park, or palisades park.

These were basically wonderlands, and i thought francis ford coppola winery

could become such a park for the family to go and enjoy, where there are things

for kids to do, so they can be close to their parents who are sampling wines and

foods. i’ve often felt that modern life tends to separate all the ages too much.

in the old days, the children lived with the parents and the grandparents, and

the family unit each gave one another something very valuable. so when we

began to develop the idea for this winery, we thought it should be like a resort,

basically a wine wonderland, a park of pleasure where people of all ages can

enjoy the best things in life – food, wine, music, dancing, games, swimming and

performances of all types. a place to celebrate the love of life.

There’s no other way to describe it: things at francis ford coppola winery are hopping! a virtual whirlwind of activity is taking place on the property inside and out as francis’s exciting vision comes to fruition.

a gleaming new stainless steel kitchen is in place. in the newly named restaurant, RUSTIC, Francis’s Favorites, wide-plank hardwood floors have been swept clean. The fully-stocked rustic Bar, situated just outside the new restaurant, is nearly complete. on the adjacent outdoor terrace, bistro tables are ready to be placed under a graceful wooden pergola, ready to provide both shade and heat during chilly evenings.

movie memorabilia cases, designed to display costumes from Bram Stoker’s Dracula, props from Apocalypse Now and the oscars from The Godfather, the Godfather: Part II and Patton, are being sanded and polished. elsewhere, workers prepare sites for the neon cocktail glass from One from the Heart, the original automobile from Tucker: The Man and His Dream and Don corleone’s desk from The Godfather.

Upstairs, a stunning wooden bar, set with mirrors and displaying antique wooden wine casks, awaits its first guests. future tour activities are planned to begin and end at this spot.

outside at the pool cafe, circular seating and a new bar are being framed. The pool has been poured, and tile is about to be laid. next to the pool, european-style personal changing rooms, called cabines, are being prepped for tiling.

four regulation-size Bocce courts are being readied for play and tournaments, both amateur and professional. cement gaming tables for cards, chess and checkers have been built and are ready to be strategically placed. an outdoor entertainment pavilion, that will include live music from the Big Band/swing era, is nearing completion.

when doors open next month, a guest services desk will be in place and staffed with personnel to provide you with a pool towel, help you book a tour, give you a schedule of options and events and inform you about our children’s activities. so, get ready … the curtain is about to rise on this quintessentially coppola experience… and you are most cordially invited to the party. stay tuned for exciting opening day details and your special first member invitation to the celebrations.

Mammarella’s Meatballs

These classic meatballs are sturdy and yet special enough to pair with Archimedes for a true culinary treat. They also go great with our Director’s Cut Zinfandel or our classic Diamond Claret. This version of the Coppola family recipe was contributed by Stefano

Particelli, Francis’s personal chef, culinary mentor and close family friend. Enjoy!

Add all meatball ingredients to a large mixing bowl. Combine well until mixture spreads out evenly. With a 4 oz ladle, begin to scoop up meat mixture and roll into small, round balls. Pre-heat a sauté pan on high heat with just enough cooking oil to coat the bottom. When oil is hot, begin searing meatballs until they are golden brown on all sides. Remove from pan and set aside. In the same pan, add diced onion and chopped garlic. Sauté until onions are translu-cent. Add torn leaves of basil with onions to extract flavor of the herb. Once on-ions are translucent, deglaze with Rosso. When wine is nearly cooked out, add drained can of tomatoes. Cook for 5-7 minutes, and then begin adding tomato liquid back into the pan to create sauce. When all the liquid has been added, put meatballs back into sauce and simmer for one hour to complete.

Should be served hot with rigatoni or any long cut pasta. Leftovers make great meatball sandwiches for lunch!

1/2 lb ground beef1/4 lb ground veal1/4 lb ground pork1 bunch fresh parsley, chopped2 Tbs diced garlic ½ cup onion, chopped ½ cup Parmesan cheese,shredded 1 cup real bread crumbs Salt & pepper to taste

Tomato Sauce Ingredients

1 large can Italian packed tomatoes1 yellow onion, diced5 cloves garlic, diced1 large bunch fresh basil1 bottle Francis Ford Coppola Rosso

SEASONED CHEF TO OVERSEE NEW RESTAURANTS

nicholas petrilli is no stranger to wine country cooking. fourteen years ago he transplanted himself from long island, new york to the napa Valley and began working at Tra Vigne with michael chiarello, author, winemaker, restaurateur, and food network host. petrilli joined chiarello for nine out of ten seasons on the food network’s “easy entertaining” show. He managed chiarello’s wine release and harvest parties and in his spare time, did private catering. in addition, petrilli helped launch the pere Jeanty restaurant in yountville and recently teamed up again with chiarello to open Bottega restaurant in the napa Valley, which was named Top newcomer last fall by the Zagat san francisco Bay area restaurants Guide.

clearly, new endeavors are part of petrilli’s forte, which is how he met francis ford coppola and why he was subsequently appointed as culinary manager of the two dining facilities about to open at the coppola winery in Geyserville (see related story).

“i was in new york when i got the call that francis wanted to meet me,” petrilli recalls. petrilli was invited to a birthday celebration/cooking extravaganza, which he describes as a “dry run for the menus francis wants to execute” at the new restaurants. “it was great,” petrilli says with a smile. “a big group of us all worked together in the kitchen … everyone was

happy, but there was way too much food. i think we prepared 20 courses and only made it through ten of them.”

petrilli is now eager to inaugurate the new restaurants. “i’m excited about getting into a new kitchen and putting all the pieces and parts together to make it work,” petrilli says. “This is about building menus and building the team that can take francis’s vision and do what needs to be done to get there.” petrilli describes that vision as “unpretentious, but elegant.”

“francis is all about family. He wants people to come every saturday, make it a family day, where you can roll some bocce, have a glass of wine, eat some good food and have fun, a little like in the old country,” petrilli says. “i’m from a big italian family too. we always got together for meals, sometimes whether we liked it or not, even if people had issues with each other. and you know, that (togetherness) was a good thing. it planted the seeds of good food and good times for me in the kitchen.”

COPPOLA CARDS, ANYONE?

Summertime guests create the perfect excuse to break out a good bottle of wine and a deck or two of cards, which is why we included a deck of our Sip-a-Diamond cards in your June shipment. After your next backyard barbecue, round up your friends and try your hand at Machiavelli, one of Eleanor Coppola’s favorite card games. Here’s how it works:

Machiavelli may be played with 2-5 players. 3-4 players is ideal.

Shuffle 2 decks of cards well. Dealer deals to the left (clockwise), giving one card to each player until all have 12 cards. The remainder of the two decks is placed in the middle of the table for all players to draw from. (Tip: orga-nize the cards in hand with the highest to the left and the lowest to the right.) The player to the left of dealer begins.

A play consists of a minimum of three cards in a series or a sequence. Series = all of the same number card but of different suits; for example: a 4 of diamonds, a 4 of clubs and a 4 of hearts. Sequence = a minimum of 3 card of the same suit; example: 4,5,6, of spades

The cards on the table can be played on by the next player, extending a sequence higher or lower or adding a fourth suit to a series of three cards of the same number. Each player must play a minimum of 1 card during his or her turn. If no card is played, the player must draw 2 cards.

If one or more cards are played during a player’s turn, he/she draws one card at the end of their play. (Drawn cards may not be played until the players next turn.)The ace is either high or low. It can be in a sequence such as king, Ace, 2, or Ace, 2, 3.

What makes the game interesting is that during a player’s turn, he/she can use any card on the table to enhance their play as long as they leave a minimum of a three-card play. For instance, a card in the middle of a 7 card sequence can be removed and played, and so can a card from either end of sequence of four or more cards. If there are four cards in a series of a single number such as 4 fours, one can be removed to make a play for the person whose turn it is. As the number of cards in-creases on the table, the possibilities of moving cards to benefit players during their turn become almost infinite.

GAmESJune 2010

A hand ends with the first person to play all of their cards. At this point, the remaining players count the value of the cards left in their hand. Aces = 15 points, face cards (King, Queen, Jack) = 10 points and the remainder equal the value of each card; example: a 7 of diamonds = 7 points. Scores are kept for each person. The first one to reach 150 points ends the game as the grand loser. The winner is the player with the lowest score.

The game gets its name because Machiavelli was a great war strategist. During the game, a player may notice a play possibility, but when it’s actually his/her turn, some-one else may have moved/removed cards in such a way that make the intended play impossible. Hence, a new strategy must be devised.
