Mincemeat Tarts While there is no definitive explanation as to how mincement came to be a holiday tradition, it is most likely that its association with Christmas is linked to its trinity of spices: cinnamon, cloves and nutmeg.

Mincemeat originated in the 13th century when Crusaders returning to Europe brought exotic spices back with them from the Holy Land. Due to insufficient refrigeration at the time, the spices were a welcome pre-servative for households: they used spices with fruit and meat to make their supply of protein last longer. The spices’ geographical origins in the Holy Land lent them a religious connotation, but when the Church began teaching that the three spices in the popular dish also signified the gifts of the three wise men to the infant Jesus, mincemeat seemed to be-come a mandatory Christmas tradition.

Recipe: Empty out one large jar of mincemeat into a bowl. Add brandy. Taste. Add more brandy. Taste again. Sit down and finish the bottle of brandy. Now, spoon the mincemeat into the tarts. Slow down if you’re feeling a little tipsy. Top each tart with a little bit of pastry, shaped like a

star. Pop the tarts into the oven and open up a bottle of rum. . .

Chaplain’s Corner

Albert Camus was a French author, philosopher and a well-known

journalist. He was also the Nobel prize winner for literature in 1957.

Here are some of his quotes that teach us something about living life

well.

On companionship: Don’t walk in front of me; I may not follow. Don’t walk behind me; I may

not lead. Walk beside me; just be my friend. … Blessed are the hearts

that can bend; they shall never be broken. … A loveless world is a dead

world.

On happiness: You will never be happy if you continue to search for what happiness

consists of. You will never live if you are looking for the meaning of life.

… To be happy we must not be too concerned with others. … Find

your happiness in yourself. Where there is no hope, it is incumbent on

us to invent it.

On living life fully: You cannot create experience. You must experience it. Real generos-

ity towards the future lies in giving all to the present.

And a closing thought on attitude: Autumn is a second spring when every leaf is a flower.
