Eddie Huang knows the ins and outs of a cultureclash. The chef and television food-show personal-ity’s Asian-American family lived one in the 1990s,when they relocated from Washington, D.C., to Or-lando – each member dealing with the transitiondifferently, as Huang recounted in his 2013 mem-oir. The book becomes a same-named ABC sitcomwhen “Fresh Off the Boat” premieres with twoepisodes Wednesday, Feb. 4, then settles into itsregular slot the following Tuesday.

Hudson Yang plays the young Huang, whosebrothers are portrayed by Ian Chen and ForrestWheeler. Their American-dream-pursuing, steak-house-running father and cook-at-home mother(Randall Park, Constance Wu) have differing viewsof making the move to a new locale ... but theywon’t hesitate to put up a united front, threateningto sue the school if one of their sons is expelledafter being taunted by a new classmate.

Yang auditioned on tape to play Huang, and theyoung actor says, “It’s been a lot of fun. It’s my firstbig thing, and it’s been a great time hanging outwith Eddie and everybody who’s been in theshow.” Huang considers his on-screen counterpart“awesome. This was the toughest role to cast.What I liked about Hudson is how real he was.

He’s very raw, and he hasn’t been consumed bythis whole process.”

Noting “this is not an easy show to make,” Huangwrote a recent article in which he deemed the se-ries “pasteurized network television” while allowingthat it still reflects that “the feeling of being differentis universal.” ABC Entertainment president PaulLee responds, “We love Eddie. He’s a firebrand.It’s a comedy, and the show is not a documentaryof his book.”

Huang maintains, “I care the most about the con-versation that’s going to happen because of thisshow. It’s important for me that the show stays re-sponsible to the book and the Asian community,and to people of color in general. And I believe theshow is doing that.”

Clearly, Huang’s parents are barometers of that,but he says, “My mom never read the book. Shecould care less. She just wants the checks. Mydad was really proud of me. I showed him the pilot,and he understood what the show was doing. AndI think the show is strategic and smart in how it’seasing the viewer into that.”

Adapted from a hit Israeli program called “TheGordin Cell,” the new series stars Hope Davis(“The Newsroom”) and Scott Cohen (“NecessaryRoughness”) as Katya and Mark O’Connor, whohave spent the past 25 years or so living quietly inNew York and raising their three children afterleaving her native Russia.

Of those children, only the eldest, Natalie (Mar-garita Levieva, “Revenge”), knows the truth abouther parents: Katya, the daughter of a KGB general,and Mark, a businessman, have done covert workfor the Russian intelligence agency. Natalie, infact, has also done her share of spying, muchagainst her parents’ wishes.

The other two O’Connor children – including mid-dle child Alex (newcomer Gavin Stenhouse), whois just starting a career as an analyst for the CIA –have no idea about their parents’ secret past, how-ever. That changes dramatically in the series pre-miere, as Mark and Katya’s KGB handler, Victor(Morgan Spector), unexpectedly resurfaces with astartling demand: The KGB wants Alex turned tobecome an asset for them.

“Alex is new to the CIA, a ‘baby analyst,’ as Katyacalls him,” Davis explains. “I don’t know whetherthe KGB was tracking him previously, but I thinkwhen he is called in for a special assignment, thatis what really puts him on the KGB radar.”

Alex, we quickly learn, falls somewhere on thespectrum for autism, which makes it challengingfor him to perform some mundane tasks yet alsoenables him to notice patterns “normal” colleaguesdon’t see. He also is blessed with eidetic memory,which plays a key role in the first episode.

“Gavin has done a tremendous amount of re-search on the subject (of autism) and was very dili-gent about sending us all sorts of things long

before we started shooting,” Davis says. “There isso much written about this in the press now, aboutchildren with Asperger’s. But in the years whenAlex was a child, that was back before the word‘spectrum’ (in this context) was even part of ournational language. It was a much trickier thing 25years ago. Now there are so many more resourcesfor parents. I think Katya and Mark were verymuch in the dark about what was going on withAlex.”

As the story unfolds, it becomes apparent that theshow’s title has multiple levels of meaning.

“For awhile, we had the title ‘Coercion,’ and wewere casting about for a title we felt was more ableto convey some of the complexity of the show,”says executive producer George Nolfi. “The greatthing about ‘Allegiance’ is that, obviously, it has allof the national connotations, but there’s also alle-giance to your job and to your family. At its core,this show is about the dilemma among these peo-ple in terms of their allegiance to their family ver-sus their country.”

Bayonne Bridge Construction UpdateMayor Jimmy Davis announced that the Port Authority of NewYork and New Jersey has provided new information about the latestdevelopments in the Bayonne Bridge construction project. The gantry has completed its load and performance testing. Thegantry began setting segments on January 28 at the abutment on 5thStreet. The Port Authority updated the City of Bayonne on the work activ-ity that has been completed or is in progress around the various bridgepiers.At Pier N2, south of 1st Street, by the shoreline, footings are underconstruction. At Piers N3, N4, and N5, located south of 1st Street,work has been completed for now. At Piers N6 and N7, between 1st and 2nd Street, drill shaft work,excavation for sixteen footings, and arsenic removal are underway.The Port Authority will be working in this area for several months. At Pier N8, between 2nd Street and Gertrude Street, foundation test-ing is underway. At Pier N9, between Gertrude Street and 3rd Street,work has been completed for now.Pier erection is in progress with the new crane at Pier N10, by 3rdStreet (south side), and at Pier 11, by 3rd Street (north side). Are you a fan of detective shows such as “Backstrom”?I always loved them growing up. I never missed a “RockfordFiles” or a “Columbo,” and I think “Backstrom” is kind of themost messed-up version of “Columbo.” We solve a crime everyweek, but it really is about how the character responds, andthe quirkiness of the whole ensemble.I love Dennis Haysbert, and he’s become such a key part ofthe show; as Det. Sgt. Almond, he’s kind of Backstrom’s con-science and sounding board. He struggles with Backstrom’sirascibility and rule-breaking, but he knows the greater good isbeing done because Backstrom is solving these crimes.What do you think sets Backstrom apart from your “Office” alterego Dwight?This is not Dwight as a police detective. This is a very torturedhuman being with a deep internal life, and he actively breaksthe rules where Dwight was all about the rules.Do you see any creative similarities to working on “Backstrom”and “The Office”?I’ve been very lucky to work with Greg Daniels on “The Office”

and Hart Hanson on “Backstrom,” because the job of a showrunner – as they call them – is one of the mostdifficult on the planet in terms of responsibility. You have to manage a budget and hundreds of people, andyou have to be creative and have a vision for the show, and you have to be able to work with actors and writ-ers, and be collaborative with both the studio and the network and keep things on schedule.Most of all, you have to be a great storyteller, and that’s what Hart Hanson is ... a great, great storyteller.

Take two professional bak-ers and their assistants, caf-feinate them, keep them upwell past midnight, turnthem loose in a kitchen andsee what results. That’s theformula of Duff Goldman’snew Food Network series“Duff Till Dawn,” airingThursdays.

The series, which pre-miered last week, takes place after business hours atGoldman’s Los Angeles bakery, Duff’s Cakemix, inwhich cake decorators do their thing after the sungoes down, with Goldman acting as host and adviser.The rules are few and emphasis is on creativity asthe competition goes on overnight.

“We wanted this to feel very authentic, very, veryreal and like these are real cake decorators going atit head to head,” Goldman explains. “We’re literallystripping away all the rules because cake decoratingis so much different than cooking. Even cake deco-rating is very different from most baking competitions,too. And I think with cake decorating competitions,you really have to do them right, and one of thethings you have to do is you’ve got to remove a lot ofthose guidelines from people to allow them to do

what they do because cake decorators are differentfrom bakers and pastry chefs and cooks becausethey really are truly visual artists and you want to letthem be able to do what they do.”

And the competition ends as the sun comes up – lit-erally.

“We look at like weather.com and it tells you sunriseis at 6:13 a.m.,” Goldman says, “so at 6:13 a.m.hands off your cakes. It’s different every night.”

What book are you currently reading?“I am reading ‘The War of Don Emmanuel’s Nether

Parts’ by Louis de Bernieres. It’s part of a trilogy. ...And basically it’s kind of magical realism ... .”

What did you have for dinner last night?“I’m eating raw right now, just because between

filming shows I eat so much cake and stuff I try tostay healthy. So last night I had a watermelon, agreen apple, celery, half of an avocado and carrotsand I cheated with a little bit of peanut butter.”

What is your next project?“I’m actually writing a book right now that should be

out October 2015, and it’s called ‘Duck Bakes.’ ... Westripped away the stuff that people don’t need toknow and explained in very accessible terms like,‘This is why a good scone is good and this is why abad scone is bad. This is why some pie dough isflaky and this is why some pie dough is mealy.’ ”

“Unwrapped 2.0” something of an ideal assignment.“I am the quintessential American eater,” declares the 43-year-

old former star of “The Fresh Prince of Bel-Air” and Season 19 co-champion (with Witney Carson) of ABC’s “Dancing With the Stars.”“I’m not super fancy. I’m not super creative. I love heartland-of-America-type foods. So I wouldn’t consider myself a full foodie be-cause of just simply the fact that I’m not like a big sushi eater andthe weird foods. I’m not into that. But if you make me some basic,fundamental foods ... I’m into all of that.”The series, which premiered last week, is basically a reboot of

Reinforce healthy eating resolutions with a citrus glaze that gives

big flavor to broiled fishBy Wolfgang Puck

Now is the time that many New Year’s reso-lutions to eat more healthfully begin to fade.And it’s easy to understand why that happensas we approach late January.For decades, psychologists have told us thatit takes at least 21 days of repeated practice toform a new habit; and many more recent stud-ies have concluded that, especially for morecomplicated behaviors, most people need muchlonger than that. Considering that healthy eat-ing involves not just one behavior but many-making the right ingredient choices, cookingthem in ways that maximize flavor while min-imizing fat and calories, avoiding overeating,and so many other practices-it’s no wonder thatresolve can begin to fade as the days andweeks, not to mention months, wear on.That’s why positive reinforcement can besuch an important fac-tor. It could comefrom feeling yourclothing gettinglooser, watching thenumbers go downsteadily on your scale(but don’t weigh your-self more than once aweek!), receiving acompliment from afriend or loved one, orsimply realizing thatyou have more energy.But reinforcementcan and should alsocome directly fromthe food you cook andeat-from the pleasureit brings you withevery bite. After all,the more deliciousyour healthy food is,the more likely you’llbe to slow down andsavor it, feeling moresatisfied with sensibleportions. So I believe it’s important, especiallyat times like now, to keep your eyes open forhealthy new recipes that are, simply put, easyto make and exciting to eat.That’s why I’m so happy to share with youone of my favorite dishes from my book “Wolf-gang Puck Makes It Healthy.” It’s a light yetflavorful recipe for quickly broiled fish filletscoated with a glaze of fresh citrus juice, a dol-lop of sweet-and-tangy marmalade, and livelytouches of rice vinegar, fresh ginger, gratedlemon zest and minced garlic. After no morethan about 10 minutes total under the broiler,the fish is served with a refreshing little saladof watercress sprigs, which provides a crispy,peppery contrast to the tender seafood.Yes, that’s a combination of flavors that looksas beautiful and tastes as exciting as it sounds.And though the flavors are big, the fat and calo-rie levels are low-well under 200 calories perserving, and with less than a quarter of thosecalories coming from fat. Add a serving of yourfavorite whole-grain side for a nicely balancedmain dish.Try the glaze with any other kind of fish filletsyou like, too. And it also produces great resultswith boneless, skinless chicken breasts. The re-sults will fill you with happiness, reinforcing

WITH WATERCRESS GARNISHServes 4

CITRUS-GLAZED HALIBUT:4 halibut fillets, each about 6 ounces (185 g)and 1 inch (2.5 cm) thickFreshly ground black pepper1/4 cup (60 ml) rice vinegar1/4 cup (60 ml) fresh orange juice1/4 cup (60 ml) fresh lemon juiceGrated zest of 1/2 lemon1/4 cup (60 ml) thin-shred orange or tangerinemarmalade1 teaspoon minced fresh ginger1 teaspoon minced garlic1 teaspoon minced fresh chile pepper, op-tional1/2 teaspoon freshly ground white pepperKosher salt1 tablespoon peanut oil or vegetable oil

WATERCRESS GARNISH:2 cups (500 ml) small watercress sprigs1 tablespoon rice vinegarPinch kosher salt

Pinch freshly groundwhite pepperPinch sugarPut the fish fillets in adish large enough tohold them side by side.Grind a little black pep-per over both sides ofthe fillets. Cover themwith plastic wrap andrefrigerate until readyto use.In a nonreactivesaucepan, stir togetherthe rice vinegar, orangejuice, lemon juice,lemon zest, marmalade,ginger, garlic, chilepepper (if you want aspicier flavor), whitepepper and salt to taste.Bring the mixture to aboil over medium-highheat; reduce the heatslightly and continueboiling until the mix-ture has reduced to

about 1/2 cup (125 ml), 5 to 7 minutes. Removethe pan from the heat and set it aside, leavingthe mixture to cool.Whisk the oil into the cooled mixture. Re-move the fish fillets from the refrigerator, un-cover them, and spoon all of the glaze over thefillets, turning them to coat them evenly. Coveragain with plastic wrap and refrigerate untilready to cook.Meanwhile, preheat the broiler.When the broiler is hot, transfer the fish filletsto a broiler pan or baking dish large enough tohold them in a single layer. Spoon the citrusglace left behind in the dish over them. Placethe broiler pan or baking dish under the broilerand cook until the fish is nicely browned andbarely cooked through in the center, 3 to 4 min-utes per side depending on thickness, turningthem once, carefully, with a spatula.While the fish is broiling, prepare the water-cress. Put the sprigs in a bowl and sprinkle withthe vinegar, salt, white pepper and sugar. Tosswell. Set aside.As soon as the fish is done, place a fillet oneach heated serving plate. Spoon any glaze leftin the broiler pan or baking dish over the fish.Mound the watercress on top. Serve immedi-ately.
