Dear Bidder,We welcome you to our auction house. Please note the points below to assist you with the registration, bidding and payment at our auctions.

REGISTRATION FOR BIDDING:If you are registering with us for the first time or have not bid successfully in the past, we require a deposit of HK$50,000. If you intend to bid more than HK$200,000 the deposit may be higher. The deposit will be deducted from your invoice should your bid be successful. If you are unsuccessful, your deposit will be returned by the same means by which it was paid. In addition we will ask for your bank and trade references.

We encourage new clients to register for bidding at least 48 hours prior to the commencement of the sale to allow sufficient time to process the registration.

Prior to the auction, some lots may be designated as “Premium Lots”, which means a deposit may be required before placing a bid on the item for sale. Information will be posted on our website in such an event.

Spink have the right at our own discretion to refuse admission to our premises, attendance at an auction and decline submitted bids.

BIDDING METHODS:In person You will be given a registration form that you will need to fill in providing your up to date address and contact details. Please always have your photo ID with you and, if you are bidding on behalf of a company, your business regis-tration. EXTENSIONS (STAMPS ONLY):Prospective buyers, who wish to obtain an expert opinion on any lot other than a mixed lot or lot containing un-described stamps, are requested to notify Spink in writing no less than 48 hours before the commencement of the sale. Reason why such opinion is required must be stated together with the identity of an expert for Spink to consider such a request.

Extensions requested on account of condition will not be accepted for expert opinions.

PAYMENT METHODS:Payments should be made by the registered buyer and not by third parties, unless it has been agreed upon at the time of registration that you are acting as an agent on behalf of a third party.

Payments are due within seven days after the date of the sale unless it has been confirmed to you in writing since July 2013 that you are an approved credit client. If payment is not received by Day 35, the sale will be cancelled. If you are also a vendor in the sale, please note offsets are not available.

Bankers draft/cashier’s cheque: If you provide suitable proof of identity and we are able to make checks that satisfy ourselves as to the genuineness of the draft or cheque then you may collect your purchases immediately.

Cash: You may pay for lots purchased by cash in the currency of the sale. We may accept small amounts in GBP, US$ and EUR.

COLLECTION OF LOTS AND SHIPPING:All lots have to be paid for in full before they can be collected or shipped. If an invoice is partly paid no lots will be released from that invoice.

It is the responsibility of the buyer to be aware of any import duties or import restrictions in the final destination. Spink will not accept return of any package in order to avoid these duties.

Please be aware that your purchased lots will be at your risk in all respects from the time of collection or the expiry of seven days from the date of sale, whichever is sooner.

If you require sending your lots to an address different from the address on the invoice, this will be carried out at the discretion of Spink.

Dear Connoisseurs,

What better season to sip a nice dram or cognac in Hong

Kong than the three months in front of us? And so it is

actually in many places in the North hemisphere at the

moment…

At SPINK, we have kicked off the season with a

number of partnerships to bring exciting wine &

spirits tastings to our customers. After Rémy Martin

and LOUIS XIII, we were happy to host a Glenfiddich

tasting in our premises as well as a beautiful wine

dinner with "the ultimate cult winery “ Harlan Estate.

There is much more to come this season, and we shall

keep you informed about our next events.

The truth, though, is that there is no season for a good

drink. What matters the most is to be with the right

people in the right atmosphere, whatever the time of the

year or the time of the day and provided you have the

right bottle too!

There are actually three kinds of bottles in the market:

the ones you open, the ones you collect and the ones you

invest in. This time again at SPINK, we have strived to

come up with a selection of fine and rare spirits which

should fulfill all three objectives!

We will start the auction with an exciting series of

Japanese whiskies, including some beautiful Hibiki

21 year old in finely decorated ceramic decanters, a

very rare Karuizawa 1972, 39 year old and, last but

not least, for all rock music buffs, one of the few 150

decanters of the fancy Rolling Stone 50th Anniversary

Limited Edition released by Suntory in 2012!

Scottish whiskies are well represented too. We always

like to introduce in each catalogue a particular producer

or bottler to you; this time we would like you to discover

the labels The First Editions by Andrew Laing.

Andrew is not new in the business though. Selecting

the best casks and bottling single cask single malts are

in his blood as he is a third generation whisky man

and part of the family behind the renown Hunter Laing

bottlings. His Glen Scotia, Linkwood, Teaninich and

Macallan bottlings are a must try this season!

Along with old collectable bottlings from the most

well-known distilleries of the four whisky regions

of Scotland, we have put the focus this time on The

Macallan through a broad selection of distillery bottled

and independent bottlings, from 1958 onwards, the

highlight being a decanter of The Macallan 55 Year

Old, Six Pillars Collection, a very rare limited edition

released in Japan in 2008 by Suntory (100 bottles only).

Finally, following our successful auction in Singapore

in September in partnership with LOUIS XIII de Remy

Martin, we have selected again for you a few collectable

decanters of cognacs, as well as some old valuable

bottlings of the most renown producers. The rumour has

it cognacs were of better quality “in good ol’ days”; it’s

the opportunity to prove this right (or wrong)!

tasting opportunities & other moments of conviviality!

7The Rolling Stones 50th Anniversary Limited Edition, by Suntory

The WhiskyThis whisky is a blend of carefully selected malts distilled and casked in milestone years throughout the band’s 50 year history, including a Yamazaki malt from the year the band formed (1962) that has been long-aged in mizunara (Japanese oak) casks. Some Rolling Stones milestones and corresponding malts used:

1962: The Rolling Stones formed - Yamazaki malt 1971: Lips and tongue logo completed - Yamazaki malt 1972: Exile on Main St., the album including “Rocks Off,” used in Suntory TV commercials is released- Yamazaki malt1981: Signature song “Start Me Up” released - Yamazaki malt 1990: First performance in Japan’s Tokyo Dome - Hakushu malt, Chita grain

Tasting NotesIts weighty, complex aroma calls to mind both dried and ripened fruits, and even cacao and espresso, and its rich heaviness and slight bitterness expand in the mouth with a velvety smoothness. The aftertaste is a pleasant and expansive woodiness akin to the fragrance of the finest aloes wood, and a soft smokiness.

The BottleThis commemorative whisky is bottled in a crystal bottle designed around the iconic lips and tongue logo. The bottle features the logo cut in relief on the front of the bottle, and a diamond-shaped decorative stopper. The bottle comes in a stylish box modeled after a black sofa.

The First Editions is the flagship range from Edition Spirits based in Glasgow. The proprietor, Andrew Laing, is a third generation whisky man and part of the family behind Hunter Laing Ltd. Just like his father Stewart Laing, Andrew has grown up and spent his whole life in the industry.

The First Editions range is best characterized by elegant, complex malts from the Speyside region. “We are particularly fond of distilleries such as Cragganmore as well as the lesser-known Linkwood, Longmorn, Mortlach and Miltonduff; names which command huge respect within the whisky industry. Linkwood, Speyside – located near Elgin. Building started in 1821 with full production of whisky in 1825. In 1872/1873 the distillery was rebuilt on the site of the original with the help of architect Cathcart Methven. The distillery takes its water from the springs of Millbuies Loch. There are two still houses, Linkwood A and Linkwood B which was built in 1971. The distillery is currently in the ownership of Diageo. The majority of its product goes into blending for the notable labels of Johnnie Walker and White Horse.

Tasting Notes*: Nose - Floral, rich, some fruits with smoke and honey. Taste - Complex and very punchy attack, with plenty of spices (ginger, white pepper). Finish - malty/biscuit notes on the finish. Takes a little splash of water quite well.

Glen Scotia, Campbeltown –one of only three distilleries in Campbeltown. Glen Scotia has had an intermittent production history and generally is an under-utilized distillery. Built in 1832 by the Galbraith family, it passed into West Highland Malt Distillers in 1924. Unfortunately that company went bankrupt due to the implementation of the Prohibition Law in USA. Production resumed in 1933 after which it passed hands again a couple more times until its present owners Glen Catrine Bonded Warehouse Ltd took it over in 1994. Production has been stop/go with only approximately 130,000 litres produced per year, 20% of its capacity, making it one of the smallest outputs in Scotland.

Tasting Notes*: Nose - Fragrant, fruity and floral. There is some honey and butterscotch, citrus notes of lemon peel and some vanilla syrup. Taste - Quite syrupy, with toffee sweetness, creamy with oak. Finish - Medium long, sweet and spicy at the same time. Vanilla and spicy notes of ground ginger at the end.

Teaninich, Highland – A Highland distillery an hour drive up along the North East coast from Inverness. The distillery was founded in 1817 and was part of the Teaninich Estate. In 1970 the distillery was expand-ed from 4 stills to 6. The old side of the distillery was mothballed in 1984 and then completely demolished in 199 leaving just the ‘new’ side in operation. There will be another renovation of the distillery as announced in 2013 by Diageo. The distillery’s is used for generic fillings with single malt expressions from the distillery’s own bottling being uncommon. Currently the distillery is owned by Diageo with much of the distillery’s output going to the Johnnie Walker blends, Haig, and VAT 69.

Tasting Notes*: Nose - Fruity and spicy, candied apple, brown sugar, spicy ginger, dark fruit and dried raisins. Taste - At first sweet, followed by a spicy explosion of ginger and cinnamon. Complemented by dried fruits like raisins and dates, as well as well-mouth tannins. Finish - Lingering, delicate spicy dried with the fruit notes. Does very well with a good splash of water to round it out.

Macallan, Speyside – Founded in 1824. the distillery is in the Craigellechie district which lies on the border of the Speyside whisky region. Macallan has the smallest stills in Speyside, 21 of them. Up to 1980 the distillery itself was named Elchies distillery but this was changed to The Macallan although the product of the distillery has always been known as Macallan. At this time the decision was made to concentrate only on the single malt market which was very small but this turned out to be a very good decision as nowadays more and more single malt is being produced across the industry.

Tasting Notes*: Nose - A malty fragrance, there is vanilla toffee some heather honey, then a spice grip of cinnamon with butterscotch. Taste - Rich, velvety and mouth coating, a lovely barley sugar edge, runny honey, vanilla yogurt and some ginger and cinnamon spices. Finish - Lingering and luscious, sweet and spicy at the same time.

Did you know? The Macallan Replica Edition 1861 – a rare discontinued bottling, not available anymore.The Macallan Replica Edition 1861 is the second of Macallan's famous 'Replica' series.

In 1998 The Macallan acquired a very rare bottle of 1861 from the private collection of John McWilliam, a shopkeeper established in Speyside during the middle of the 19th Century who used to offer a list of fine wines and spirits which he bought by the cask and bottled himself. The Macallan distillery located close by on the opposite bank of the river Spey was John McWilliam’s favourite.

The Macallan presented Bob Dalgarno, Macallan Chief Whisky Maker, with the formidable challenge of replicating it.

"I drew a tiny sample from the bottle with a hypodermic syringe inserted through the long driven cork. It was surprisingly fresh and vibrant, clearly The Macallan, but full of youthful vitality. Of course, we do not know the age at which it had been bottled, but judging from its golden colour and relative robustness in character, we suspect the whisky was matured in oak sherry casks from Spain. Together with my team of expert nosers, I began to comb through our warehouses of maturing casks searching for whisky which matched the profile. The problem was that every time we went back to the original it seemed to be revealing new layers of complexity.”

In the end Bod Dalgarno and his team vatted together twenty-eight casks, at different ages, to achieve a balanced profile which reflects the true character, aroma and flavour of this 1861 whisky.As well as replicating the whisky, Macallan were determined to recreate the 1861 bottle and label. The original bottle had been hand blown and closed with a driven cork and lead capsule - all characteristic features of its age and provenance. Master glassmakers, Stölzle Flaconnage of Nottingly, West Yorkshire, fabricated a new mould and carefully added colour to the molten glass until it matched the original. Even the flaws in the 1860s bottle were replicated.

Tasting Notes:"The nose displays citrus, dried fruits with spice and is lightly floral with hints of toffee, wood smoke, apple, light oil and malt. The palate reveals spice, light lemon-citrus, resin and lightly smoked oak flavours with hints of toffee re-emerging. Lingering slightly sweet aftertaste of spice, subtle smoked wood and malt.” Bob Dalgarno, Macallan Chief Whisky Maker.

Did you know? CadenheadEstablished as early as 1842, Cadenhead is the oldest independent bottler of spirits. It rapidly became well recognized for its bottlings of single malt Scotch whisky and Demerara Rum, however, it really caught the spotlight in 1972 when it sold its entire stock in a 2-day auction in London, by far the largest sale of wines and spirits ever held in Great Britain at that time.

The name of Cadenhead is now a household name in the whisky world. It is now owned by J & A Mitchell & Co Ltd., proprietors of the Springbank Distillery.

Blended Whiskies & Grain WhiskiesWhile single malt whiskies (i.e. made from malted barley only and coming from a single distillery) have been the center of attention for the last few years, whisky aficionados are rediscovering – notably with the recent rise in popularity of Japanese whiskies – the quality, smoothness and flavor profile of blended whiskies. Grain whiskies have a distinct character of their own (toffee, butterscotch, toast aromas, velvety texture) which shall not miss piquing the interest of the true whisky enthusiasts!

Grain whisky refers to any whisky made partially from grains other than malted barley, like corn, wheat or rye. Grain whiskies can contain some malted barley. The vast majority of grain whisky goes into blends - in fact, grain whiskies are critical for the production of blended whiskies as they knit together the real flavor from the single malts - , but there are a small and growing number of specialist grain bottlings, either by established grain distilleries such as Girvan or by acclaimed independent bottlers such as Moon Import, Signatory, Sovereign, etc.

Exciting times – at last – for grain whisky!

Caledonian is another ‘lost’ distillery of Scotland. Established in Edinburgh, Lowlands, in 1885, it was one of Scotland’s biggest distilleries, however, it was finally closed down in 1988.

North British is one of Scotland’s largest and most emblematic Scotch Grain Whisky distillery. The North British does not market a brand of its own as almost their production goes into famous blends such as The Famous Grouse, J&B Rare, Johnnie Walker Black Label and Cutty Sark.

9 Remedies for non-payment or failure to collect purchasesIf any lot is not paid for in full and taken away in accordancewith Condi tions 4 and 7. or if there is any other breach ofeither of those Condi tions, Spink Fine Wines as agent of theseller shall, at its absolute discre tion and without prejudice toany other rights they may have, be entitled to exercise one ormore of the following rights and remedies:-(a) to proceed against the buyer for damages for breach ofcontract;

(b) to rescind the sale of that or any other lots sold to thedefaulting buyer at the same or any other auction;

(c) to re-sell the lot or cause it to be re-sold by public auctionor private sale and the defaulting buyer shall pay to Spink FineWines any resulting deficiency in the ‘total amount duel (afterdeduction of any part payment and addition of re-sale costs)and any surplus shall belong to the seller.

(d) to remove, store and insure the lot at the expense of thedefault ing buyer and, in the case of storage, either at SpinkFine Wines or elsewhere;

(e) to charge interest at a rate of not exceeding 2% per monthon the ‘total amount due’ to the extent it remains unpaid formore than 7 working days after the day of the auction;

(f) to retain that or any other lot sold to the same buyer at thesame or any other auction and release it only after payment ofthe ‘total amount duel;

(g) to reject or ignore any bids made by or behalf of thedefaulting buyer at any future auctions or obtain a depositbefore accepting any bids in future;

(h) to apply any proceeds of sale then due or at any timethereafter becoming due to the defaulting buyer towardssettlement of the ‘total amount due’ and to exercise a lien onany property of the defaulting buyer which is in Spink FineWines’ possession for any purpose.

18 Any notice by Spink Fine Wines to a seller, consignor,prospective bidder or buyer may be given by pre-paid mail inHong Kong or Macau or airmail outside Hong Kong andMacau and if so given shall be deemed to have been dulyreceived by the addressee one week after posting.

19 These Conditions shall be governed by and construed inaccordance with Hong Kong law. All transactions to whichthese Conditions apply and all matters connected therewithshall also be governed by Hong Kong law. Spink Fine Wineshereby submits to the exclusive jurisdiction of the Hong Kongcourts and all other parties concerned hereby submit to thenon-exclusive jurisdiction of the Hong Kong courts.
