Bacon, egg and spinach salad with roasted tomatoes

Serves 2Preparation Time Less than 30 minsCooking Time Less than 10 mins

Ingredients

2 slices good-quality wholemeal breaddrizzle olive oil6 ripe baby plum tomatoes, halved1 garlic clove, finely sliced2 rashers back bacon, fat removed2 very fresh free-range eggs1 tsp vinegar (such as white wine vinegar)250g/9oz baby spinach, washed3 sprigs fresh basil, leaves tornsea salt and freshly ground black pepperFor the dressing2 tbsp extra virgin olive oil½ tbsp sherry vinegar1 tbsp wholegrain mustard

1. Preheat the oven to 200C/400F/Gas 6.2. Tear the bread into bite-sized pieces and scatter in an even layer over a baking tray.

Drizzle with a little olive oil.3. Place the tomatoes onto a separate tray, scatter with the sliced garlic, placing slices

on top of the tomatoes and season with pepper. Place both trays in the oven for 8-10 minutes, or until the bread is golden-brown and crisp. Set aside and leave to cool.

4. Heat a griddle pan over a high heat until hot. Fry the bacon until charred on both sides and cooked through. Once cooked, chop into small pieces.

5. For the dressing, place all the ingredients into a clean jam jar or a small watertight tub. Add two tablespoons of water and seal. Shake until emulsified. Season with salt and pepper to taste. (The dressing can be stored and used in other dishes as it will make more than you need for this salad.)

6. Bring a large pan of water to a simmer and add the white wine vinegar (don’t be tempted to add salt as this will cause the egg whites to disintegrate and will ruin your poached eggs). Crack the eggs into a small ramekin or dish. Briefly whisk the water to create a vortex before gently pouring the cracked eggs into the centre of the slowly spinning water. Poach for four minutes in gently simmering water, or until cooked to your liking. Remove from the pan and drain

Book Review Too! by Buck Verm

private down under (private 4)By James patterson

P.I. Craig Gisto, head of the latest branch of Private, is enjoying the glamorous launch party with his new team when their celebrations are interrupted by the bloodied arrival of a boy with his eyes gouged out.

The boy is the kidnapped son of one of Australia’s richest men - but investigating his death isn’t their only pressing case. The rock star Micky Stevens is convinced someone’s trying to kill him, and believes Private are the only ones who can help.

As if that wasn’t enough, someone is murdering the wealthy wives of the Eastern Suburbs, in the most brutal way imaginable. And if they don’t catch the killer soon, the next victim could be someone close to Private.

James Patterson is one of the best-known and biggest-selling writers of all time. He is the author of some of the most popular series of the past decade - the Alex Cross, Women’s Murder Club and Detective Michael Bennett novels - and he has written many other number one bestsellers including romance novels and stand-alone thrillers. He lives in Florida with his wife and son.

Spiced mackerel with horseradish potatoesServes 4Preparation Time Less than 30 minsCooking Time10 to 30 mins

IngredientsFor the horseradish potatoes500g/1lb 2oz new potatoes, cooked in their skins2 tbsp olive oilsea salt and freshly ground black pepper2 shallots, finely sliced2 tbsp soured cream2 tbsp creamed horseradish2 tbsp finely chopped fresh chivesolive oilwatercress leaves, to serveFor the spiced mackerel8 mackerel fillets100g/4oz butter, softened to room temperature1 tsp cayenne pepper2 tsp sweet smoked paprika1 tsp ground coriander1 tbsp golden caster sugar½ tsp English mustardfew drops Tabasco2 tsp red wine vinegarsea salt and freshly ground black pepper

1. For the horseradish potatoes, bring a large pan of salted water to the boil and boil the potatoes, in their skins, for 10-15 minutes, or until tender. Drain and, when cool enough to handle, cut into quarters.

2. Heat the olive oil in a large frying pan over a medium heat, then add the potatoes and season, to taste, with sea salt and freshly ground black pepper. Fry the potatoes for 7-8 minutes, turning occasionally, until crisp and golden-brown. Remove the fried potatoes from the pan and set aside to drain on kitchen paper.

3. Meanwhile, for the spiced mackerel, preheat the grill to its highest setting. Score the skin of each mackerel three times on each side using a sharp knife.

4. Preheat the grill to high. Mix all of the remaining spiced mackerel ingredients together in a bowl to form a thick, spiced butter and season well with sea salt and freshly ground black pepper. Rub the butter over the mackerel fillets, then grill for 4-5 minutes, turning once, or until just cooked through.

5. To finish the horseradish potatoes, transfer them to a mixing bowl. Stir in the shallots, soured cream and creamed horseradish and season, to taste, with salt and freshly ground black pepper. Stir in the chives.

6. As soon as the mackerel are cooked, transfer to serving plates and spoon the horseradish potatoes alongside.

Sticky BBQ chicken wings and drumsticks

Makes 12Prep Time: OvernightCooking Time: 10 to 30 mins

Ingredients6 chicken drumsticks, preferably free-range 6 chicken wings, preferably free-rangeFor the marinade: 2 tbsp clear honey3cm/1¼in piece of fresh ginger, peeled and grated1 garlic clove, crushed1½ tsp Chinese five spice 2 tsp soy sauce3 tbsp orange marmalade½ tsp grated orange zest1 tbsp sesame oil

1. Slash the chicken drumsticks three to four times each with a sharp knife and place in a non-metallic bowl with the chicken wings. Mix together all of the marinade ingredients and pour over the chicken. Leave to marinate for at least 2 hours, or overnight if you can, turning occasionally.

2. Once it has marinated, place the chicken on the barbecue over medium-hot coals and cook for about 20 minutes, brushing with any marinade left in the dish as it cooks. If it’s colouring too quickly, move to a cooler part of the barbecue to cook more gently. It’s important you cook the chicken all the way through.

3. If you’re unsure, pierce a drumstick with a skewer: if the juices are still pink, carry on cooking. Eat as soon as they’re cool enough to handle, with the sticky sauce all around your mouth and fingers. Isn’t that what barbecues are all about?

4. The chicken can also be cooked in the oven for perfect picnic food. Preheat the oven to 200C/400F/Gas 6.

5. Transfer the chicken into a roasting tray with a couple of spoonfuls of marinade. Place in the oven for about 50 minutes, turning occasionally and basting with the marinade and juices until thoroughly sticky and golden, adding extra marinade to the tray if necessary. Once the chicken pieces are cooked, eat them when fresh and hot, or leave to cool before packing up for a picnic or packed lunch.

Get your fill of Vitamin D

It’s that time of year again, the sun is shining brightly (hopefully!) in the sky (hopefully), and flowers turn their heads to absorb as much of the sunlight as they possibly can. Seasonal fruits are at their best, ripe and tasty and kids are playing out later as the nights are longer. Summer time, what a wonderful time of year, everyone feel better when the sun is shining, we smile more, greet people we see with a happy face and comment on how lovely the weather is. In the air there is the aroma of barbeques slowly cooking the meats and the clink of glasses as the wine bottle is opened. Laughter, picnics and days out is what summer is all about.

But why do we feel much happier when the sun is shining? Why do we want to go out, smile, do all those little jobs around the house and garden that we put off all winter? Well the answer is Vitamin D. It is an essential vitamin to ensure healthy bones as it absorbs calcium and phosphorus from our diet. We get the most of our Vitamin D from sunlight however; it is also available through some foods that we eat so an

abundance of healthy, fresh foods is essential.

The foods that contain Vitamin D are: cod liver oil, oily fish especially mackerel, oysters, ham and other meats, eggs and mushrooms. It is added to margarines, breakfast cereals, dairy and soya products. So eat cereal for breakfast, have a ham and mushroom omelette for lunch and eat as much oily fish as you can.

When we are out in the sunshine we feel happier, our mood is lifted and life doesn’t seem quite as hard. The warmth of the sun on our bodies reduces those aches and pains that have been niggling over the

wet, cold months. We socialise more, walk around more and generally feel better. Vitamin D aids in bone and tooth formation and supports muscle and nerve function, and studies have shown that vitamin D helps to prevent osteoporosis.

Don’t however, rush out to buy huge doses of Vitamin D supplement, taking too much can be toxic, so if you feel that you have a deficiency it is important to speak to your doctor. On average, eating the correct foods and getting out when the sun is shining is all you will need. But remember not to be out too long in the sun’s rays.

WORTHY WINES FRANCE

Beautiful and wonderful places await all who visit France. Fabulous coastlines, glamorous resorts and bustling cities are amongst the different aspects, of France, to be enjoyed. Quaint villages and a wealth of customs give pleasure to many. France is also well-known for excellent wine productions which include superb reds and whites. As the French say, “To love France, is to love life”.

Château Roumanières is located in the Languedoc region and grows several grape varieties, for the productions of their exceptional wines. The history of the buildings can be traced back to the 13th century. The climate and sunshine hours play a huge part, along with the soils, plus expertise and love, in the production of the wines, which are the end product of growing vines in this much sought-after area.

Château Roumanières en Blanc, IGP Pay’s d’Oc, is very popular, having a good bouquet and being easy and most pleasant for everyday drinking. En Rosé, IGP Pay’s d’Oc, is in the same range and likewise is also most popular and, for some, adds that little ‘extra something’ to al fresco dining. These are refreshing wines and most agreeable on the palate. L’instant, Coteaux Du Languedoc, is again, favoured by many, has plenty of fruits in the pleasant bouquet and on the palate. Les Garrics, Coteaux

Du Languedoc, has a wonderful garnet-red colour and a superb bouquet. This wine exudes fruits on the nose and in the excellent mouth-feel. A well-balanced and elegant production. Le Chant des Pierres, Coteaux Du Languedoc, is another superb wine, from the same producer. Intense and well-balanced, this is very impressive palate-wise, which leads enticingly to a long finish. Lastly, my surprise-Pampl’Ice. This production is made using a blend of light red wine and grapefruit extracts and is most worthy of a place in the stock of wines. Pampl’Ice, is a favourite with me. I find this wine refreshing, great as an apéritif and very good to accompany starters, plus other dishes.

I am most pleased to have located Château Roumanières’ excellent wines.

These are just a selection from their ranges, which have something for everyone and every occasion.

Smoked haddock chowder with leeks and sweetcorn

Serves - 4Prep Time Less than 30 minsCooking Time 10 to 30 mins

Ingredients1 good slice butter3-4 medium leeks, roughly sliced1 small handful tender fresh thyme sprigs1 corn on the coba couple of handfuls of new potatoes, cut into bite-sized chunksa couple of undyed smoked haddock filletsmilk, enough to cover the fish2-3 fresh bay leavesa sprinkling of black peppercornsa good handful fresh flatleaf parsley, roughly chopped

1. In a deep pan, heat the butter until melted, add the leeks with the thyme and cover with a circle of greaseproof paper big enough to tuck down a little over the leeks. Cover with a lid so no steam escapes, and cook gently for about ten minutes. Run a sharp knife down the sides of the corn to remove the kernels and add them to the pot with the potatoes, which will add some body to the chowder. Replace the greaseproof paper and the lid and continue to cook for a further ten minutes.

2. Meanwhile, place the smoked haddock fillets in another shallow pan and pour in the milk, enough to just cover the fish. Add a bay leaf or two and a sprinkling of peppercorns. Bring to a gentle simmer and cook the fish for eight minutes or so, being careful not to overcook it.

3. Lift the lid of the pan containing the leeks and remove the greaseproof paper, and ladle in the poaching milk of the fish without the bay leaves or peppercorns, followed by large chunks of haddock, removing any bones as you go. Bring to a simmer and finish with a good sprinkling of chopped parsley before taking the pan to the table for the food to be served into bowls.

Harlan Coben, the master of domestic suspense, returns with a standalone thriller—in the vein of his number1 bestsellers Hold Tight, Caught, and Stay Close—that explores the depth and passion of a lost love . . . and the secrets and lies at its heart.

Six years have passed since Jake Sanders watched Natalie, the love of his life, marry another man. Six years of hiding a broken heart by throwing himself into his career as a college professor. Six years of keeping his promise to leave Natalie alone, and six years of tortured dreams of her life with her new husband, Todd.

But six years haven’t come close to extinguishing his feelings, and when Jake comes across Todd’s obituary, he can’t keep himself away from the funeral. There he gets the glimpse of Todd’s wife he’s hoping for . . . but she is not Natalie. Whoever the mourning widow is, she’s been married to Todd for more than a decade, and with that fact everything Jake thought he knew about the best time of his life—a time he has never gotten over—is turned completely inside out.

As Jake searches for the truth, his picture-perfect memories of Natalie begin to unravel. Mutual friends of the couple either can’t be found or don’t remember Jake. No one has seen Natalie in years. Jake’s search for the woman who broke his heart—and who lied to him—soon puts his very life at risk as it dawns on him that the man he has become may be based on carefully constructed fiction.

Harlan Coben once again delivers a shocking page-turner that deftly explores the power of past love and the secrets and lies that such love can hide.

Hopefully, temperatures are rising and your garden should be just about ready to bloom. Here we outline those key jobs for June to keep your garden at its very best...Its vital to keep you garden hydrated during the summer months, particularly in hot spells. Focus on the areas that need it such as young plants and vegetables and make sure they get a thorough soaking. Mulching will help maintain the moisture around plants but be sure the soil is moist before you mulch as it keeps water out as well as in.Keep on top of weeding regularly, pull out annual weeds making sure you remove from the root to avoid regrowth. Mow the lawn regularly, keeping the blades at the lowest setting, and trim the edges for a neat finish. If your lawn is looking a little tired use a liquid fertiliser to perk it up.This is another job that should become routine to extend the life of the flowering period in your garden. Removing fading flowers on perennials as soon as possible ensures new growth and flowers later into the season.Use secateurs to trim the plant back to just above the strongest buds. This will ensure new growth from the lower half of the plant and give it a healthy bushy shape.Theres little chance of frost now so you can fill your borders with some fantastic bedding plants. Remove any spring bedding and keep the fertiliser to a minimum. Water plants well an hour before planting and give them a soaking afterwards too. Its really important to keep on top of the watering throughout the summer.Check roses for signs of blackspot, aphids and leaf-rolling sawfly damage. Dead head, Remove weeds, water during dry spells. Control weeds to prevent them competing for moisture and nutrients. Keep an eye out for early aphid attacks, and deal with them appropriately, either by squashing small colonies, or by using pesticides on larger infestations.Bulbs and Herbaceous Plants. Stake tall or floppy plants. Plant out summer bedding and seed-raised plants, if not already done so. Make sure they are well watered in and keep moist during dry weather. Thin out direct sowings of hardy annuals. This is best done in two or three stages at fortnightly intervals. Final spacing should be between 10-20cm (4-8in). It is not too late to direct sow a few fast growing, late-flowering hardy annuals such as Calendula, Godetia and Clarkia. Perennials such as Actaea (hollyhock). Stake tall perennials to prevent wind damage to flower spikes. Cut back dead bulb foliage if not done already. It is important to wait until the foliage dies down naturally, as cutting back too early can lead to a no flowering plant next year. Gaps in herbaceous borders are best filled with annual bedding. Cut back clumps of spring-flowering perennials such as Helleborus, Pulmonaria and Doronicum . Plants will stay more compact and will flower better next year.On the Lawn. Regularly mow lawns to keep them in shape - removing ‘little and often’ is the key to a good quality sward. Add grass clippings to the compost heap in thin layers. Apply a high nitrogen summer lawn fertiliser if not done last month to encourage a healthy-looking lawn. Move garden furniture and other objects regularly to allow grass to recover and prevent yellow patches.

After Earth (2013)

One thousand years after cataclysmic events forced h u m a n i t y ’ s escape from Earth, Nova Prime has b e c o m e mankind’s new home.

L e g e n d a r y General Cypher Raige returns from an extended tour of duty to his estranged family, ready to be a father to his 13-year-old son, Kitai. When an asteroid storm damages Cypher and Kitai’s craft, they crash-land on a now unfamiliar and dangerous Earth. As his father lies dying in the cockpit, Kitai must trek across the hostile terrain to recover their rescue beacon. His whole life, Kitai has wanted nothing more than to be a soldier like his father. Today, he gets his chance. Stars Will Smith and his son Jaden Smith.

I give it a Year 2013 (DVD & Blue Ray)

I Give It A Year is a brand new comedy from the writer of Borat and Bruno that lifts the veil on the realities of the first

year of marriage.

Starting where other romantic comedies finish, I Give It A Year asks what happens after the epic romance and the fairy-tale wedding? When the confetti has been recycled and the presents packed away.

Since they met at a party, ambitious high-flyer Nat and struggling novelist Josh have been deliriously happy despite their differences. As those luminary philosophers DJ Kool Kat and Paula Abdul once decreed, it appears that opposites attract, Josh is a thinker, Nat’s a doer, he’s laissez faire and she’s quite anal….but the spark between them is undeniable.

Their wedding is a dream come true, but not everyone shares their excitement. Family, friends and even the minister who marries them aren’t convinced that they can last.

As they settle into real life together, their apparent incompatibility only makes Nat and Josh more determined to make it work, but soon the absurdities and flaws they once found so endearing are irritating the hell out of each other. Chloe, Josh’s ex-girlfriend, and Guy, Nat’s handsome American client, could offer attractive alternatives…….. With their first anniversary approaching, neither wants to be the first to give up, but will they make it?

Your Stars for the Month 2013 by Dan WorthausAries - March 20th - April 20thThe month of June can be especially hectic for you, dear Aries, but it can also be extreme-ly rewarding if you can manage to pace yourself. You can be pulled in many different directions, and you’ll need to be both flexible and quick. Income should be good, although the inclination to spend is strong as well. This is a long-term influence that will be with you for a year. Some of you could be taking courses to better your skills. Your powers of per-suasion run high this month, and you can very effectively “sell” your ideas. Taurus - April 21st - May 21stWhile June is a month of opportunity, dear Taurus, avoid trying to “do it all” too soon and too quickly. Instead, focus on one or two opportunities and projects. It should be a strong month for money matters. You are likely to do some shuffling around with finances, and June is good for little windfalls, reducing debt, and the ability to borrow at favorable rates, if necessary. Changes in financial arrangements may be part of the picture now, such as dealings with a different bank or setting up a different payment schedule. Emotionally, you’re definitely moving forward this month! Gemini - May 22nd - June 21stJune can be a personally powerful month for most Geminis. Many of you will be reinventing yourself in some significant manner, with a new look or a new way of approaching the world. You’re a self-starter this month, especially from the 21st forward. Friendships can be especially rewarding and helpful this month. Mid-month, close personal relationships come into strong focus and require special attention. Tend to the needs of a partner now. Love and social opportunities tend to emerge when you least expect them and are plentiful in June. Cancer - June 22nd - July 23rdWhile you can continue to find yourself in high demand at the beginning of June, dear Cancer, you’re likely to have an increased need for time to yourself and for extra rest as the month progresses. You tend to naturally withdraw from more competitive or demanding situations. You definitely need a break from a hectic pace and from the critical eyes of others. Even so, your job may undergo a number of little changes that require you to be adaptable and flexible. Friendships that allow you the freedom to be yourself and group associations can be especially pleasant and refreshing.Leo - July 24th - August 23rdRecognition for what you do and how well you do it is forthcoming this month, dear Leo. In fact, you’re now entering a year-long cycle in which this kind of positive professional attention comes naturally, readily, and heartily! While career matters remain a strong focus, you’re also branching out and networking. Friendships assume more importance in your life in June, and both friends and associates can be especially helpful. You’re brimming with ideas about where you want your life to go, and your enthusiasm is infectious. Virgo - August 23rd - September 22ndYour professional life is picking up speed this month, dear Virgo, and you might often find yourself smack in the middle of situations that require you to be on top of your game. Fortunately, you possess just the right attitude to meet challenges confidently. Be flexible in your expectations of others and treat any changes as chances to grow and improve. You are likely to want to improve your domestic life this month, making changes that allow for more space, whether that involves an actual move to a larger place, eliminating unnecessary furniture and accumulated possessions, or reorganizing in order to create the illusion of more space.

Your Stars

Libra - September 23rd - October 23rdJune is a considerably more outgoing month for you, dear Libra. You’ve been focusing on darker and deeper matters recently, and perhaps feeling a little out of step. This is changing rapidly this month as you seek new experiences and are exposed to broader ideas. While you can feel a tad restless at times, and possibly even hemmed in, you are bound to find ways to expand your mind. Students tend to fare well this month, even if it can be a little hectic. It’s a strong month for travel as well. Energy levels increase and less resistance is encountered from others and from circumstances.Scorpio - October 24th - November 22ndThis month, you’re entering a year-long cycle in which the way you relate to others on a one-to-one level changes and expands, dear Scorpio. You are likely to derive much pleasure from partnership, and people you meet can be most helpful at enlivening your life. By giving more freedom to a special someone in your life, you’ll enjoy a stronger sense of personal fulfillment. June does require some adjustments, especially on a financial level, and particularly around the 15th. New budgets or payment plans may be necessary now. Sagittarius - November 23rd - December 21stJune is a strong month for relationships, dear Sagittarius. Your willingness to listen to and support a partner is key. Socially, people are seeing you in a positive light. There is likely to be much going on inside this month, especially around the 15th, when you can arrive at a personal revelation or epiphany. Emotions tend to run high and there can be some level of drama in your relationships. Work matters are improving dramatically this month, and will continue to do so for many months to come. The only caution here is to avoid taking on too much at once. Your ability to make more out of whatever you have can greatly improve your situation, but if problems arise, these can be exaggerated as well. Capricorn - December 22nd - January 20thYour major focus begins to turn to work and health matters in June, dear Capricorn, and while there can be an especially hectic pace and changes to contend with, it’s likely to be a successful month overall. One reason is a wonderful shift in attitude that has you feeling particularly hopeful and confident. Resolving conflicts with others is favored, as you come across in a more favorable light than usual. You could experience some ego-boosting situations now. New visions of the future and new inspirations are likely to come along, and these can come through the people you meet this month. Aquarius - January 21st - February 19thYou are coming out of your “shell” this month, dear Aquarius, and you’re ready to have some fun. Fortunately, cosmic energy is ripe for providing you with the right circumstances under which to really enjoy and express yourself. Your romantic life can take center stage in June, and while there can be some social drama in your life now, for the most part you’re likely to have a good time. It’s a favorable month for announcing or showing your creative work. You are also entering a long-term cycle that brings more joy and pleasure to your domestic life. Problems are easier to work through with family members, and opportunities to improve living conditions can emerge.

Pisces - February 20th - March 20thWhile June can begin at a hectic pace, dear Pisces, you’re likely to find much solace in home and family as the month progresses. Efforts to make improvements to your home life should be very successful this month, and you’re likely to want to entertain from home or do some redecorating. This month, Jupiter moves to a favorable position in relation to your sign, boosting not only your confidence but also both motivation and ability to communicate effectively with others. New opportunities to learn and new intellectual interests are likely to round out your days well, bringing more satisfaction to your life.
