    As autumn's rust-colored leaves fall, the air snaps with a crisp chill revealing the coming winter. One delicious way to stave off the dropping temperatures is autumn's bounty of apples, freshly squeezed into juice to sweeten your favorite coffee. The sweet-tart flavor is satisfying and delicious. Adjust spices as you desire. This recipe makes 2 cups and easily doubles.

    Ingredients: 1 cup (8 ounces) freshly brewed coffee 1 cup (8 ounces) pure apple juice 2 cinnamon sticks 2 thin slices of orange, rind intact 2 whole cloves 1 kernel allspice or ¼ teaspoon ground allspice 2 teaspoons brown sugar or wildflower honeyDirections: Brew the coffee. Heat some water to boiling and pour into two cups (or mugs); cover with saucers while you

    prepare the drink.In a medium size heat-resistant glass or stainless steel saucepan, simmer the coffee and apple juice with all the spices, orange slices and sweetener. Warm over low heat for three to four minutes, stirring occasionally. Empty the cups of the hot water, then strain the coffee-apple mixture through a fine-meshed sieve into the cups. Serve immediately with ginger snaps or graham crackers for a toasty-warm afternoon treat.

    The Teditor has heard many testimonials and kudos from the ‘Garden Party’ last week, but the Chatham Artillery Punch apparently stood on its own merits. So, as the holiday entertaining season dawns, here’s the ingredients for this new treat. The ingredients may be reduced in volume, if you wish...there’s an app for that.2 gallons of black or green tea (steeped overnight) Juice of 30 lemons 5 pound bag of brown sugar 2 gallons of dark rum 1 gallon of good brandy 1 gallon gin1 gallon rye (or Canadian) whiskey 2 gallons Madeira wine 2 quarts crushed fresh cherries, soaked overnight in brandy 2 quarts pineapple chunks, frozen 10 quarts of champagne

    Mix all of the ingredients except the pineapple and champagne and store, covered, in glass containers for up to two months*. The longer the mellowing period, the smoother the punch will be. When ready to serve, pour the punch into a large punch bowl and add frozen pineapple chunks. Pour champagne over top.     Pork Chopswith Beer and Bacon Gravy Ingredients4 bone-in pork chops, just over 1-inch thickSalt and freshly ground black pepper1 tablespoon extra-virgin olive oil, plus a drizzle2 thick slices smoky bacon from deli counter, diced 1/4-inch1 medium onion, diced 1/4-inch1 rounded tablespoon all-purpose flour1 bottle amber to dark German beer1/2 cup stockChopped parsley, for garnish DirectionsSeason the chops liberally with salt and pepper. Heat the extra-virgin olive oil in a skillet over medium-high heat. When the oil smokes, add the chops and cook, turning once, until caramelized and the meat is just turning firm, about 10 to 12 minutes. Remove to a platter and cover with foil, reserve.Add a drizzle more oil to the pan, add bacon and brown for 2 to 3 minutes. Stir in the onions and sauté over medium heat with the bacon until soft, 6 to 7 minutes. Sprinkle in flour, stir for 1 minute, then add the beer. Cook until reduced by half, 1 to 2 minutes more, then whisk in the stock. Remove from the heat and season with pepper.   • Cobblestones learned of Operation Christmas Child at Thanksgiving dinner last year. Discovering what a worthwhile opportunity this was to do something for children who have little or nothing, I felt this giving experience needed to be shared. Operation Christmas Child distributes ‘shoe boxes’ that you or your organization pack and send to Samaritan’s Purse to distribute around the world. Last year 8 million children received shoe boxes. Over 130 countries have received shoe boxes since 1993. Samaritan’s Purse is an international relief organization, headed by Franklin Graham, that provides immediate, no-red-tape response to the physical and spiritual needs of individuals in crisis situations.!
