Recipe of the Week Fruit Cocktail Cake Mix together:

1 and 1/2 cups Sugar

2 cups Flour

1 & 1/2 tsp Baking Soda

Add:

1 large can of Fruit Cocktail with juice

2 well beaten eggs

Mix by hand

Pour into ungreased 9 x 13 pan

Bake @ 325 for 38 minutes

Topping ** Have ready for hot cake** In medium pot, add:

1/4 lb butter

1 cup sugar (wht or brn)

1/2 cup Carnation Evaporated milk

Stir and bring to a boil, for 3 minutes

Cool & add:

1 tsp Vanilla 1/2 cup Pecans (chopped)

1/2 cup Coconut Serve warm. Enjoy!
