Meet Beverly Gant

Beverly grew up on a farm in Walbundrie near Albury In Southern NSW with her parents Annie and Tom Hall and sister Sylvia. She loves animals and had 17 cats as a young girl living on the farm, as well as a pet sheep. Beverley moved to Sydney in her late teens and trained as a dental nurse, where she later met and married Graham Gant and had two children David and Robyn. Beverley spent her married life living in Normanhurst, where she created and nurtured a beautiful garden and cared for her family. Beverley moved to Neutral Bay in 2002 after her husband died.

Beverley thrived with her move to Neutral Bay. She became a guide at Nutcote, the home of May Gibbs, the creator of “Sugglepot and Cuddlepie”, which is close by Lansdowne Gardens. She greatly enjoyed this role, receiving compliments for her entertaining stories about May Gibbs’s life and work. She particularly enjoyed meeting country folk and delighting in the children, families and pets who visited. She became close friends with Yvonne Hyde OAM who was instrumental in saving Nutcote in the 1970’s. Yvonne lives in Dee Why and has Parkinson’s disease, making visits challenging, however they speak on the phone regularly.

Beverly is a positive, kind, friendly, tolerant and resilient woman who has overcome many health and personal challenges and enjoys a good laugh. She especially enjoys being in the garden and listening to the birds.

Mother's Day We may not have been able to spend time with our beloved Grandmothers, Grannies, Nanna or mothers this Mother's Day but the very much-loved ladies at Lansdowne Gardens certainly enjoyed well deserved attention.

The Leisure & Lifestyle team ensured that the mothers in our midst were not overlooked and organised some fun activities with craft making and afternoon tea.

Our ladies were showered with flowers, cards and special thoughtful gifts sent in by their families. A special shout out to all our staff and to Mitchell and Pasang who were able to continue a few Skype calls using their mobile phones when we experienced some technical difficulties with our devices.

with Ashley, Group Executive Chef

Lamb Kofta

The last 2-3 months have literally turned our world upside down. Not to mention the catering operations in our facilities. I would like to take this opportunity to commend and thank all the foodservices staff that have continued to work through this very challenging period. Our Suppliers have worked very hard to ensure we've continued to receive our regular orders.

For those of you that have been stuck at home, I hope you've had a chance to get into the kitchen and try some new and different recipes.

Although overseas travel is currently banned, it doesn't stop us from cooking international cuisine. I've chosen a Mediterranean favourite that is easy to prepare. Lamb Kofta is originally from Lebanon, however most Middle Eastern & Mediterranean countries have very similar mince dishes, flavoured with spices and herbs.

I hope you enjoy preparing and cooking this dish

What’s Cooking

Ingredients:

2 kg lamb mince 1 large red onion, grated or finely chopped ½ cup chopped parsley 1 tablespoon dried mint (fresh is fine too) 4 cloves of garlic, peeled & finely chopped. 2 teaspoon ground cumin 2 teaspoon ground coriander 1 teaspoon ground cinnamon 1 tablespoon tomato paste 1 cup fresh breadcrumbs 3 eggs, lightly whisked 1 tablespoon Salt Pepper optional 2 tablespoons olive oil Method: • Place lamb mince in a large bowl

and add all the ingredients, except eggs & olive oil.

• Combine thoroughly.

• Add the eggs and continue mix well, until fully incorporated.

• At this point, the mix can be refrigerated for 2 days.

• Make the patties, by dividing up the mix into 60-70 gram patties.

• (Doesn't have to be perfect).

• Use your hands to form the patties into egg shaped balls.

• (Can be done the day before).

• At this stage the Kofta's can be skewered, for cooking on a BBQ; entirely up to you!

• For oven cooked; Place on a greased baking tray and bake @ 165°C for 15 minutes.

• Alternatively, flour and pan fry in olive oil, then finish in the oven for 10-12 minutes.

• Serve with tzatziki, fried or baked potatoes or pita bread and a mixed salad with mint, olives & tomatoes.

Meet Sally Rule

Hello, I am Sally and I am the Wellness and Community Co-ordinator for Cranbrook Care. I have been with the company for 10 years. I grew up on the North Shore in Wahroonga. I studied music at the Conservatorium of Music (Piano) and Entomology. It is one of the most prestigious music schools in Australia. I loved music intensely and for a time, put that passion on hold completing a marketing and public relations diploma went into advertising working on Winfield, Dunhill and Meadow Lee margarine commercials and presentations. After some years I joined the mining company, Denison Mines and was involved setting up of a project in the northern territory. Very exciting. I married the engineer on the project, was mother to four children, three boys and a girl, and travelled extensively. We formed our own engineering company and specialised in mining projects both in Australia and overseas. I lived in Queensland for 22 years and returned to Sydney in the year 2000.

Upon return to Sydney I worked at Anglicare and later specialised in Dementia which allowed me to implement Psychology and Music to assist with understanding memory which I had studied in conjunction with music. This was very successful and resulted in setting up the Dementia Specific program and Day Care Centre in the Hills District. After accepting a position with Cranbrook Care, I quickly settled into the position of Client Relations Manager. I remember in the early days having only two residents. I started the “Lansdowne Lions” choir, still in the early days of recognition, but the resident and family’s participation ensured our success and fame. There is nothing more satisfying than seeing and hearing 35 residents and some families, singing Que Sera Sera not to mention ‘The Battle Hymn of the Republic’ with full “Spotify” orchestral backing.
