Welcome to Dixie Cup XXXI, the Foam Ranger’s excuse to get our Mardi Gras on!

The great philosopher Butt-head said, “The more things change, the more they suck. “ Well, with respect to the Dixie Cup, he’s wrong. While the Dixie Cup is rooted in tradition, we still manage to change it up some every year. We will have a new leader / cat herder for the Beer and Food pairing on Friday night (the “Fred Tasting”). Be nice to Kevin Floyd, he’s a good guy and deserves your attention. We have some visual enhancements in the hos-pitality room. Little changes, but progress nonetheless. The one thing that hasn’t changed is the great attitude of the homebrew-ing community, and the convivial fellowship that is shared during Dixie Cup weekend. We welcome everyone who is kind enough to share their weekend with us celebrating the greatness that is homebrewed beer and the fun that is sharing it with friends old and new.

If you are reading this, then you must not be enjoying Dixie Cup as much as I want you to. So, put this down, grab a brew, and go talk to someone you’ve never met.Dammit. See? No one listens to me! This is why I’ve been crying the blood of two thousand unborn virgins for the last six months. That’s right. It’s your fault. But, hey, c’est la Dixie Cup Mardi Gras!Speaking of that Dixie Cup, all this would not happen without a whole dadgum lot of people. As much as I would love to mention every single person who made this Dixie Cup happen, it cannot be. The fact is that hundreds of individuals crank this wheel, from all the judges and stewards who judge the entries, to all the sweaty folks who sort those entries, to all the office and warehouse staff that give us so much beer and SWAG, to all those drivers who drive hun-dreds of miles to bring entries or beer or what-not to us, to all those blessed minutemen who run out on sixty-seconds’ notice to do the things I forgot about, to all those nurses and other angels that keep us alive for the weekend, to all those . . . every one of you who gave up your time to make sure the rest of us had a great time . . . .There would be no Dixie Cup without you. But, all y’all don’t get too caught up with yourselves. There are a healthy handful of folks that even those above could not have a made a Dixie Cup without, this year. I am talking about:Rolland (“Dr. Scott”) Pate – our fearless Head Judge who would not take “no” for an answer. Jaime (“Riff Raff”) Robles – “fearless” doesn’t describe the Head Steward who would soon-er shove a case box up your [Dolly Parton] before you ever told him “no.” Kyle (“Brad”) Jones – who made damned sure something came out of that tap table for your sorry ass. Paul (“Eddie”) Smith – who spent more time and mileage on this Dixie Cup than anyone else to make sure that Kyle had something to pour and that someone had something shiny on the raffle table. Nena (“Janet”) Lamb – You enjoyed (or will enjoy) the Fred Tasting. Hush, puppy. Sly Bastards (“Bridesmaids (Uncredited)”) – I hope you came back on the Pub Crawl bus. Ralph Cox (“That’s What She Said”) – who made sure you got something to eat Friday night. Matt (“Rocky”) Crankabitch – because you wouldn’t be reading this, otherwise Sean (“Frank ‘n’ Furter”) – Our Grandest Wazoo who had done more than he should have.

All of you, I cannot, ever, thank you enough (so don’t ask me to, mofo). And, if you don’t seem to qualify in any of those, then fix that next year. Laissez les bonnes bières couler!

Fred Eckhardtis an American brewer, homebrewing advocate and publicist. He writes about brewed beverages—beer and sake, and wrote the 1989 book, The Essentials of Beer Style. He is identified as a “beer writer,” a “beer historian,” and as a “beer critic.” He’s a local celebrity in Portland, Oregon, which Eckhardt describes as “the brewing capital of the world.” Fred’s knowledge of beer made him the ideal candidate to host a beer pairing session at Dixie Cup: The Fred Tasting. Starting in 1989 with Beer and Chocolate, themes have also ranged into the unusual, such as Junk Food.After years of dedication, the 2009 Dixie Cup marked Fred’s retirement. Despite not host-ing the event itself, his tireless participation for many years and influence on both the Foam Rangers and the homebrewing community have had a lasting impact on the event. To honor this dedication, we have named the event after him. Recent tasting themes have included Bread, Umami, Molecular Gas-tronomy, and this year’s “Tastes of New Orleans”

Bio: Kevin Floyd

In the short time since native Houstonian and local beer nerd Kevin Floyd opened Hay Merchant, the highly-successful Montrose venture has raked in national accolades and consumer kudos for its craft beer program. The bar, which was named one of the top 100 beer bars in the country by Draft magazine, has quickly established itself as the go-to destination for beer aficionados, thanks to its 80 expertly-selected beers on draft. Kevin and business partner Bobby Heugel opened their first venture, Anvil Bar & Refuge, in 2009, which was also recognized nationally for its beer selections, in addition to its renowned cocktail program. In addition to an extensive knowledge of brew, Kevin also brings operations expertise to the table, having worked previously as a manager of Logan’s Roadhouse, opening 25 restaurants throughout the Midwest. Kevin manages the operations of both Hay Merchant and sister restaurant Underbelly.

Milli Conference Speakers

Ted Hausotter operates Hop Heaven Hop Sales out of Baker City, OR. He has had a tremendous impact in the homebrew community, including leading the Oregon Home Brewers Alliance effort since the beginning. A member of the Good Libations brew club in Baker City, he was one of the first homebrewers to recognize the need to rewrite Oregon’s homebrew law.

Michael Tonsmeire is an award-winning homebrewer and certified beer judge, and has written on sour beers for various magazines. He most recently developed the recipes and grew the microbes for the sour beer program at San

In addition to being a Grand Master BJCP Judge, he has served with the BJCP as an Assistant CEP Director and also as the Mountain/Northwest regional rep from 2007-2013; in 2012 he was the Judge Coordinator for the NHC Final Round in Seattle

Peter Caddoo is the Brewmaster at NOLA brewing.The highly skilled and well respected former brewmaster of Dixie Beer, Peter has over 30 years of brewing experience. The Lone Star Circuit is a year long competition that determines the Lone Star Homebrewer of the Year, the Lone Star Homebrew Team of the Year, and the Lone Star Homebrew Club of the Year, It is awarded annually at the Dixie Cup, the last event of the circuit.

Points are awarded by each comptition for medals earned and the final total determines the winning Brewer, Team, and Club.

Beer Styles of the 31st Dixie CupThis year, the Dixie Cup will continue to judge all BJCP beer, mead, and cider styles using the 2008 BJCP style guidelines. However, some BJCP categories have been split, allowing us to award medals in more than the standard twenty eight BJCP categories. Two Dixie Cup-only categories will also be judged. Dixie Cup Awards

Individual MedalsMedals will be awarded to the first, second, and third place winner of each category. The judges have sole responsibility for determining if all of the medals in a particular category should be awarded, or if there are ties for a particular medal.

First Time Entrant AwardThe First Time Entrant Award is open to new entrants to the Dixie Cup. This award is offered as an encouragement to new brewers to “get their feet wet” in competition and get some quality feedback on their brewing efforts.The BJCP category and subcategory must be designated for proper judging. Medallions will be awarded but this category does not count towards brewer or club points and does not qualify for Best-of-Show (therefore only two bottles are required).

Best of Show AwardsBest of Show for both Beer and Mead/Cider will be awarded from the judging of all of the first place winners of each category except for the Brew Me Like a Hurricane and First-Time En-trant categories.

Mike Templeton AwardThis award, presented in memory of one of the original Foam Rangers, is given to the indi-vidual brewer who accumulates the most points at the Dixie Cup, awarded as follows:First Place in each category 3 points Second Place in each category 2 points Third Place in each category 1 point No points are awarded from the Beermageddon and First-Time Entrant categories.

The Dixie Cup TrophyGiven for the most points garnered by a club, based on the same scale as the Templeton award.

Lone Star Circuit Homebrewer of the YearThe Dixie Cup is the final contest of the Lone Star Circuit competitions where one can earn points towards becoming the Lone Star Circuit Homebrewer of the Year. Points are awarded for placing in a participating contest (3 points for first place, 2 points for second place, and 1 point for third place).

Lone Star Circuit Homebrew Team of the YearGiven for the most points garnered by a team, based on the same scale as the Templeton and Lone Star Circuit Homebrewer of the Year awards.

MCAB Qualifying StylesThe Dixie Cup is a qualifying event for the Masters Cham-pionship of Amateur Brewing (MCAB). The top-ranked beer in each MCAB qualifying style (QS) will be invited to compete in the championship finals, to be held in 2014.In order to maintain the Dixie Cup tradition of awarding more medals than the major BJCP categories, thus splitting some of the larger BJCP categories such as American Ale, some of the MCAB QSs are split across multiple medal categories. In these instances, the first-place winner in each split category will qualify for the MCAB cham-pionship finals.
