Chicken, Apple and Cheddar Tartlets Serves 8 Ingredients 1 green apple cut into ¼ inch pieces 1 tablespoon lemon juice 1 Tablespoon butter 1 small red onion finely chopped 2 garlic cloves minced 18 ounces boneless skinless chicken breast, diced 2 teaspoons finely chopped fresh rosemary 1 teaspoon finely chopped fresh sage 2 ½ ounces white cheddar cheese grated large to yield 2/3 cup Kosher Salt and Black Pepper to taste 1 large egg 1 Tablespoon milk 2 box Filo Tartlet Shells Directions 1. Toss apples in lemon juice, set aside 2. Cook butter, onion, garlic until soft, add apples and lemon juice. Cook for 10 minutes until apples begin to soften. 3. Increase heat and add chicken pieces. Cook until chicken is cooked through. Remove from heat. 4. When cool enough to handle, stir in rosemary, sage, and cheese. Add salt and pepper to taste.
