Lay out a sheet of parchment paper and grease liberally with olive oil. Break egg into a bowl and lightly beat. Allow to sit, as it needs to be room temp. Break Cauli apart and cut into pieces small enough to fit into juicer. Wash thoroughly, and separate into 2 colanders. Allow to sit and dry out for at least an hour. Run cauli through juicer. Take the pulp and one handful at a time, place into cheesecloth or a thin dishtowel and wring and squeeze out as much moisture as possible. In a mixing bowl, combine cauli pulp, egg, and seasonings to taste – I use a generous dash of each. Gently mix, and add almond flour until moisture content is reduced enough to allow mixture to hold together. Place cookie sheet or pizza pan in oven and allow to heat for 5 minutes Spread mixture onto parchment paper, and cover with a paper towel. Use the paper towel to absorb excess moisture as you mold the crust. Shape crust to desired thickness, approx.. ¼ inch works well. Optional - Sprinkle dough with a light dust of grated Parmesan cheese.

Ingredients:

1 large head of cauliflower1 egg1-2 tbs Almond flourGarlic powder, oregano, basil, s&pPizza Sauce (I love Organicville brand)Fresh Mozzarella cheese

Preheat Oven to 425.

Place cookie sheet or pizza pan in oven and allow to heat for 5 minutes

Spread mixture onto parchment paper, and cover with a paper towel. Use the paper towel to absorb excess moisture as you mold the crust. Shape crust to desired thickness, approx.. ¼ inch works well. Optional - Sprinkle dough with a light dust of grated Parmesan cheese.

Lay parchment paper with the crust onto the warm cookie sheet. Bake 15-20 minutes or until the crust becomes golden brown around the edges and the crust retains its form. (Test by sticking a fork under crust and slightly lifting up)

Add sauce and cheese, be careful not to overload with toppings as this creates extra moisture, which will prevent the crust from cooking properly. Top with basil.

Return to oven and bake for 10 minutes. Reduce temperature to 375 and continue to bake until crust is bubbly brown, approx. 15-25 min. depending on your oven. To

Allow to cool, and enjoy!
