Stir the bacon into the salad just before serving to keep the bacon crisp. If you use precooked bacon, crisp it in the microwave according to the package instructions.
CHARRED TOMATOSALAD8 large tomatoes2 T. olive oil1/3 cup sliced fresh basil1/2 cup olive oil3 T. red wine vinegar1 tsp. kosher salt1/2 tsp. freshly ground
pepperGarnish: fresh basil
leavesCut tomatoes into quar-
ters; remove and discard seeds. Pat dry, and brush cut sides evenly with 2 table-spoons olive oil. Cook tomato quarters, in batches, in a hot cast-iron skillet over high heat 1 1/2 to 2 minutes on each side or until blackened. Re-move from skillet, and cool, reserve juice from skillet.
Toss tomato with re-served juice, basil and next 4 ingredients in a large bowl. Cover and let stand, stirring occasionally, 1 hour. Garnish, if desired. Makes 6 to 8 serv-ings.
Kosher salt is chunkier than table salt. To substitute table salt, use half the amount you’d use of kosher.
FRIED GREENTOMATO SALAD1/2 cup cornmeal1/2 cup buttermilk1 tsp. dried mint1 tsp. ground cumin1/2 tsp. salt3 large tomatoes, cut into
1/4 inch thick slicesVegetable or peanut oil2 large heads Bibb let-
tuce, rinsed and torn 1/2 cup toasted walnutsRose vinaigretteGarnish with chopped
green, red, and yellow bell peppers; chopped red onions.
Whisk together first 5 ingredients in a bowl until smooth; dip tomato slices evenly in batter. For extra crispy fried green tomatoes, dip the tomatoes in the batter twice.
Pour oil to a depth of 2 inches into a large heavy skil-let. Fry tomato slices in batch-es, in hot oil over medium-high heat 4 minutes on each side or until slices are golden. Arrange lettuce on 6 plates, top each with 2 tomato slice. Sprinkle evenlywith walnuts; drizzle with Rose Vinaigrette. Garnish if desired. Makes 6 servings.
ROSE VINAIGRETTE3 large shallots, finely
chopped1/3 cup red wine vinegar1 T. honey 1/4 tsp. salt1/3 cup vegetable oil
3 T. walnut oilStir together fist 4 ingre-
dients; whisk in oils. 3 T. veg-etable oil may be substituted for walnut oil.
ITALIAN BREAD SALADThis recipe puts a spin
on traditional Southern corn-bread salad in this main -dish salad. Leftovers lose texture so prepare the amount you’ll enjoy in a single meal.
4 cups cubed French bread
6 T. olive oil3 T. red wine vinegar2 garlic cloves, minced1 tsp. salt1 tsp. dried oregano3/4 tsp. freshly ground
black pepper 1/8 to 1/4 tsp dried
crushed red pepper1 large head romaine let-
tuce, chopped4 to 5 large plum toma-
toes, chopped2 cups chopped smoked
ham1 (8 oz.) package fresh
mozzarella cheese, cubed3 green onions, choppedPlace bread cubes on a
baking sheet. Bake at 325 de-grees for 15 minutes or until lightly browned. Set bread cubes aside. Whisk together olive oil and next 6 ingredi-ents.
Reserve 1 cup bread cubes. Scatter remaining cubes on a large serving plat-ter. Top with lettuce and next 3 ingredients. Drizzle with dressing and toss. Let stand 15 minutes before serving. Sprinkle with reserved bread cubes and green onions.
