    Vale Freida Mary Nomchong

Freida Mary Nomchong a long time resident of Irvine St Watson passed away on the 26th

November 2009. This is what Freida left as a message:

Id like the memory of me to be

A happy oneId like to leave an afterglow of smiles

    When life is done

Id like to leave an echo whispering

    Softly down the ways,

Of happy times, and laughing times

    And bright and sunny days

Frieda was to many that knew her the essence of what Canberra is, her independent attitude,

her bold and stalwart ways, her sweet and lovely nature; she is missed and not forgotten.

    A TASTE OF WATSON

Watzon celebrates the diversity of Watson residents through the wonderfulfamily recipes that are cooked every night in the kitchens of our beautifulsuburb. Some of these recipes are decades old, from cuisines from all

around the world. This edition of Watzon brings a slice of the history ofSwedish cooking to your kitchen. It may be a while since you got your handsimmersed in mince, forming little balls and frying them, but I encourage youto try this great recipe.

In Sweden, there is a proverb, nothing beats Mums meatballs and Lisa ofMolesworth Street, can attest to that. So much so that she regularly featuresSwedish meatballs on the menu for meals and family festivities at home.

There are a number of subtle variations, for example, you might like to usemashed potato instead of breadcrumbs, or keep the meat mixture to just porkand beef, rather than the three meats used in this recipe. Whatever the varia-tion, these meatballs are fantastic, and easily prepared at home using ingre-dients in the fridge and freezer.

They are often served as part of a smorgasbord or for a family meal, with lotsof gravy and a lovely salad of cucumber, with boiled peppered beetroot and

some mashed potato. Lisa says that this recipe was passed on by hermother. Traditionally, mashed potato, boiled fresh beetroot and a greenvegie accompanies the meatballs. Lingon berry sauce as an accompanimentis also key and uniquely Scandinavian. Lisas recalls her grandfather having5 litre tubs of it in the larder. It can be bought at Fyshwick or Belconnen mar-kets. If you have a jar of cranberry sauce in the fridge though, that will do.

Swedish Meatballs serves sixIngredients500 grams beef mince250 grams pork mince250 grams veal mince1 cup breadcrumbs

1 small onion finely diced2/3 cup milk/cream (half-half) for soaking1/ cup milk- for gravy1 teaspoon cornflour25 grams butterSalt and pepper to taste

Soak the breadcrumbs in the milk/cream. Line a baking tray with greaseproofpaper. Fry onions gently until soft. Combine the fried onions, breadcrumbs,

minced meats and salt and pepper thoroughly. Form walnut sized meatballs

with your hands. Put the meatballs in the fridge for an hour. This recipe

the juices from the meatball frying and thicken with the cornflour. Add extrawater if too thick. Put all the meatballs back into the frying pan and simmer

for around 15 minutes. When cooked through, serve with Lingon berry sauce
