Wente “Riva Ranch” Chardonnay, Arroyo Seco, Monterey CA 2014 Rich golden color with aromas of ripe apple, vanilla, butter and pear. Luscious mouthfeel with flavors of guava,

butterscotch, and vanilla all followed with a long lasting finish. This is the oldest family run winery in CA founded

over 125 years ago, now run by 5th generation and soon to be 6 generations.

DaVinci Chianti, Tuscany 2014 Chianti must be at least 75% Sangiovese blended with other varietals such as Trebbiano, Canaiolo, and

Malvasia and Aromas of ripe fruit, plums, cherries, red fruits, strawberries, finishes with soft round tannins.

Castello Banfi, “Cum Laude” Tuscany 2011 Sangiovese, Cabernet, Merlot, Syrah, rich color, soft ripe fruit flavors, complex aromas of juicy berries and spicy

cherries as well as clove, anise, black pepper, full bodied with dense tannins, marries well with all red meats, hearty

dishes, pasta dishes and cheeses

Brunello di Montalcino, Il Colle Tuscany 2009 100% Sangiovese- Intense ruby red color with complex fragrances of berries and flowers, concentrated, tobacco,

Pellegrini “Estate” Vineyards Cabernet Franc, North Fork Long Island 2008 100% Cabernet Franc, similar in structure and flavor to Cabernet but not as full bodied, showing fewer tannins and

less acid. Beautiful aromatics, beautiful color, intense aromatic nose of violets, ripe raspberry, menthol, fleshy

mouthfeel that finishes with silky tannins.

Twenty Rows Cabernet, Napa Valley 2014 Grapes are sourced from several vineyard sites in Napa Valley including Howell Mountain, Pope Valley, and St.

Helena. This wine is primarily Cabernet with small amounts of Merlot and Cabernet Franc blended. Powerful, yet

elegant, beautiful color, aromas of black currant, graphite, hints of earth and expresso, black cherry, currant, licorice,

chocolate and smoke flavors are all neatly layered for complexity.

Faust Cabernet, Quintessa Vineyards, Rutherford, Napa Valley 2013 Made by Quintessa Vineyards, this wine has a burst of intense ripe fruit on the nose of black currant, blackberry,

chocolate, showing bold flavors yet elegant and concentrated with a long lasting finish.

Don David Reserve Tannat, Michel Torino Estate, Cafayate Valley, Argentina 2013 Full bodied, dry red wine with firm tannins, with high concentration of color, aromas and flavors, minerals, cloves,

white chocolate, Amaro (Italian Chocolate.). An unusual red grape historically grown in South West France in the

Madiran AOC, this is now the most prominent grape in Uruguay where it is considered the “National Grape”

Tamarack Cellars “Firehouse Red” Columbia Valley 2014 25% Cab, 24% Syrah 22% Merlot, 12% Cab Franc, 7% Sangiovese, 3% Greanche, 3% Petit Verdot, 1% Counoise,

1% Mourvedre, 1% Malbec, 1% Cinsault

Deceptively sweet aromas of strawberries, raspberries and rose petals. The flavors are dark, rich, lusciously

mouthwatering, with cherries, boysenberries, tart plum skins, hints of leather, sweet pipe tobacco, and coffee beans.

The tannins are firm, but not a bit edgy and the finish lingers with just a touch of anise. The wine label signifies a

Tamarack Pine tree that sheds its needles.

Foppiano Vineyards Petit Sirah, Russian River Valley 2012 100% Petit Sirah also known as Durif in other parts of the world. A Frenchman named Durif crossed pollinated Rhone

Valley’s Syrah with an obscure French peasant grape called Peloursin to create Petit Sirah. Full bodied, robust, rich,

blackberry, dark chocolate, anise, white pepper, blueberry, black cherry, leading to a sweet vanilla and long silky

finish.

Madeira receives Portugal’s highest quality ranking of DOC. Madeira is one of the three

best known fortified wines, the other two being Port and Sherry.

From Portugal’s Madeira Island. Portuguese founded this heavily forested island thus

named it Madeira which means wood or timber. Madeira is a very volcanic island in the

Atlantic Ocean 400 miles off the North African coast.

By law 85% of grape listed on label must be used. If label states Sercial Style or Boal

Style it can contain less than 85% and it will most likely be blended with Tinta Negra

Mole

Madeira is unique that it gains flavor from elements that ruin most other wines (heat &

oxidation)

Estufagem: This is the process where wines are placed in heated rooms or heated tanks

(estufas) for a minimum of 90 days where they bake slowly. Finer madeiras are aged in

wooden casks and left in attics or extremely warm areas for years. The wood aging

develops tangy burnt caramel slightly bitter flavor.

Madeira ranges in color from pale blonde (Sercial) to deep tawny (Malmsey).

Fortified with usually 18% - 20% alcohol

There are four different white grapes that are used for making Madeira each with a very

different style.

1. Sercial (ser shuh) pale, golden color, perfumy, lightest and driest

2. Verdelho (verh deh yoh) This is the most widely planted grape on Madeira.

Medium dry, sweeter and stronger than sercial. This grape is also used in the

production of white port. Rainwater is a soft medium dry verdelho. This achieved

its name from the barrels of madeira waiting on the island beach for pick up being

diluted from rainwater, thus diluting the alcohol making this less potent.

3. Boal (Boo ahl) Fuller, sweeter, richer, typically used as dessert wine

4. Malmsey (mahm zee) also referred to as Malvasia. Richest, darkest, sweetest.

Alvada is named after irrigation system channels which islanders built to tap fresh

mountain water.

This is made from both the Malmsey and Boal white grapes.

Tasting Notes: Rich delicate, fresh, zesty, sweet toffee. Matured in oak for 5 years and it

is ready to drink upon release.

Food Pairing: crème caramel, crème brulée or drink alone
