    A love letter to

    TallahasseeTo my darling town,

When I first met you, allahassee, I must admit I was lost. Te collegiate gothicarchitecture of the universities was stunning but wholly unfamiliar. You were200 miles inland, a fact I wasnt fond of.

Now that Ive been here for three years, I see such beauty in you, allahassee. Iquickly learned of your stories and your history from the charming people ofthis place. Tey are giddy to share how you make them feel in April, when thecool breeze lightly brushes their skin. Its lovely to hear how much affection they

have for you here.Your mossy oak t rees are always comforting, draping their branches overus like arms lending shelter from the sweltering sun. And the way the redbricks of campus will kiss the entire night sky that turns a stunning coral,as if blushing.

Our symbiotic love grew as the years passed. I found my niche within your bus-tling streets, and I am so thankful you allowed a place for me here. Te peopleIve grown so fond of have forever ingrained themselves into who I am. Youvebecome my home, and whenever I leave I know youll always be here, patientlyawaiting my return.

I know I wont be here forever. You have a tender way of nurturing us, shapingus into who we are and sending us off to different landscapes with different, unfamiliar architecturesand well use our experience here to make the worldbetter. But I will take a piece of you with me wherever I go, and I hope thosereading this will do the same.

We created this magazine to share our love for you, allahassee, with thoselucky enough to end up here. Each crevice of town has a story, and each part ofour journey here will be dear. Every one of us has their own reasons for lovingyou, and within this magazine we share the characteristic pieces that make ourbeloved town beautiful.

But flipping through these pages wont be enoughthe allure must be experi-

enced firsthand to understand what I mean.I am so fortunate to have met you, my dearest allahassee. May all who makeyour acquaintance find warmth in your embrace.

    With love,

    Boys of fall:A towns lifeblood

Football ows through the veins of everyone in Tallahassee, like a familial bloodline that relates all who inhabit it.Words Perry Kostidakis

Football lords over Tallahassee the same way a benevolent king would: all-powerful, capable of inflicting terrible pain but usuallygenerous. Florida State football is the lifeblood of the communitythe secret force that keeps all the other parts of the town alive andflowing.

There are so many facets of Tallahassee other than football: it serves as a typical college town, it is the state capitol and it is part ofthe border of Florida and Georgia. There are many sides to the southern town, but football is the common core, the binding materialthat makes everything possible.

    ***

It had been 20 years since the states capital has been able to celebrate a national championship20 years too long for a football-hungry town. Florida State had fallen off in the 2000s after being the top program in the country a decade earlier, taking the backseatto the University of Floridas resurgence under Urban Meyer. Florida State fell behind while the Southeastern Conference took over thecollege football world.

    PERRY KOSTIDAKIS

Bobby Bowden hadtaken the program toanother level in hisheyday, but in the lastfew years of his career,

the program lost itsluster. He retired in2008, stepping down toallow Jimbo Fisher, theoffensive coordinatorby way of LSU and headcoach-in-waiting, to takeover.

I feel like I am theluckiest. I feel like I amlucky as any guy whoever lived, Bowden saidwhen he returned toFlorida State for the firsttime in five years last

October. God has beengood to me. 57 yearsof coaching, I survivedit, and right now I feelgood. When you getold, if your health isgood, it dont make nodifference. Ive been very

    fortunate for my health.

His statue still sitsoutside Doak CampbellStadium, his figureeternally pointing atanybody who walks

past him. His influence, great enough to makeFSU one of the premieruniversities in the state, still looms over theprogram. He stayed awayfor the last five yearsso Fisher would notbe leading in Bowdensshadow. This was thecase for Bowden whenhe first started coachingat West Virginia, and hedid not want the samefate for his successor.

What happened nextwas poetic. The yearBowden finally returnedback to the program, first in October forBobby Bowden Day andlater that year when the1993 championship team

was honored at halftime,Florida State finallyreturned to the glory ofits yesteryears.

It means a lotbecause I saw a lot of

kids I havent seen inyears, Bowden said. Itmakes you feel good. Itsfunny folks, coaching57 years like I did. I get

a letter occasionallyfrom a boy I coached 40years ago, 50 years ago,30 years ago. None ofthem mention football.None of them say, Boy,remember when I didthis? Or remember whenyou did this? They dontmention it.

    They tell me about

their families, they tellme about their childrenand they tell me howmuch they appreciatewhat they learned atFlorida State.

almost one monthafter the Seminoles pulled off amiraculous comeback in a titlegame. The town joined togetherto celebrate the championshipreclaimed, the third nationalvictor y for the Seminoles.

The scene was similar tothe intense passion brought byfootball season. People weretailgating and garnet and goldadorned the city, rekindlingthe type of joy and sense oftogetherness brought by footballseason.

From the time I first hadmy press conference, when Itook my position [as athleticdirector], to the time I was onthe sidelines out in Pasadena, watching the fans celebrate onthe Seminole side and watchingthe Auburn fans fill out, theyall would ask me, How doyou feel? Athletic DirectorStan Wilcox said in f ront ofthe crowd. I would say, Its allsurreal. It was surreal then, andits surreal now. But this trophy, these trophies, these guystheyare for real.

Fans were treated tovideos of reac tions to KelvinBenjamins last-secondtouchdown reception, tospeeches and Q & As withthe heroes of the game.

Quarterback Jameis Winston, whose fame exemplifies theimportance of college footballin Tallahasseespoke candidlyof his confidence in the team, which was merely a dark horsepick when the season began.

    Although relatively new

in comparison to the othermonuments, Heritage Tow-er has a rich history andis strikingly beautiful. Out-side of University C enterA sits a huge fountain withthe three torches of t heFSU seal on the top. Thefountain was construct-ed in 1998 and is namedthe Heritage Tower torepresent the passing ofthe torches from one classto another. The torchesthemselves were a gift f rom

the classes of 1946, 1947and 1948, which are spe cialbecause these are the yearsFSU transformed from anall-womens college to aco-educational universi-ty. On school days, youwill usually see studentsstudying at the benchesnearby or cooling off in t hefountain on hot days.

    Located outside University

Center B on Langford Green, theUnconquered Statue is absolutelybreathtaking, and the sheer enormityof it isnt really noticeable until yousee it in person. The statue representseverything it means to be a Seminole:pride, tradition, a fighting spiritand perseverance. Built in 2003and standing 31 feet tall, the statuedepicts Chief Osceola, FSUs mascot, riding his horse, Renegade. Think itcouldnt get any co oler? It can. T hespear gets lit on fire. Yes, Osceolawould not be complete without aflaming spear, which is ignited on

the Friday before every FSU footballhome game, and remains lit until themorning after the game. It is also litduring graduations, convocations, every ACC or NCAA championshipin any sport and during specialoccasions, like winning the Heismanor Rhodes Scholarship.

    Proof BrewingCompany

In 2007, Byron and Angela Burroughs opened LiquorLoft, a Tennessee Street liquor store that

gained notoriety for its beer selection. Since then, the business, now called Proof Brewing Co., hasspawned a full service pub, Tallahassees rst production brewery and some of the best beer in the

    state. Words K. Maxwell Greenwood

On the surace, the story oProo Brewing Company soundslike a well thought out businessplan: Recognizing demandwhere supply is low, and creatinga product to fill the void.allahassee lagged behind in an

ever-growing craf beer industry, and recognizing this, Prooappeared to supply an increasingdemand.

But the real story o Proo isone o natural expansiona sorto ermented maniest destiny.

Under husband and wie teamByron and Angela Burroughs, the operation began in 2007with LiquorLof a convertedblood bank carved into theside o a small ennessee Streetbuilding. Te store, now known

as the Proo Bottle Shop, is onlya raction o the size o manycommercial liquor retailors, but earned a reputation amongallahasseeans and the cityscollege students as a bastiono selection

and quality that ar surpassed itscompetitors.

In act, the Bottle Shop stands out, not onlyamong allahassee establishments, but also amongliquor stores throughout North Florida. Te Shop, still in its original location, offers the largest selectiono craf and import beers in the region. With acollection o 600-plus beers and a variety o high-quality liquors, including small-batch bourbons

and a wide array o flavored vodkas, it is a haven orallahassees over-21 crowd.

I you get the impression that the Bottle Shop isan establishment that truly prizes quality beer andseeks to go beyond the norms o mass-producedalcohol, youre right. But it wasnt until 2008 thatProo came into its own, when the Burroughsopened their landmark bar, Proo, adjacent to theBottle Shop. Dubbed a Modern American Pub,Proo was a locale created out o necessity, what

seemed to be an effort to take theexperience o the Bottle Shop a stepurther.

Proo and the Bottle Shop do not

unction as separate businesses, butare seen instead as a single entitya

tandem experience where you can trybeore you buy. Tats because Proo,

like the Bottle Shop, offers quality andselection, serving many o the same brews

and liquors sold in the retail store. Te pubeatures 50 taps o top-rated craf brews

on any given night, and a selectiono 200 bottled beers, most o whichcan be ound next door or patronsto take home afer a night at Proo.

But the selection o alcohol isnt theonly area in which Proo stands outthedcor is modern, the design is clean andthe pub emanates an aura reminiscento a New York City lounge, rather thana college town bar. Te look and eel oProo is the work o Angela Burroughs, who designed the store, pushing it tolive up to its Modern American Pubepithet.

In 2012, Proo took itscommitment to quality a step urther

when it introduced its own beers to the menu. Teproject began in the buildings basement with Proospilot brewerya small operation not large enough tobe considered a microbrewery. But within months otheir release, Proo s house beers became a staple at

the pub and some o the most popular drinks on itsmenu. Its Guru India Pale Ale has since been namedFloridas best IPA.

wo years later, Proo expanded even morewhen the Burroughs opened allahassees firstproduction brewery in the citys Railroad SquareArt Park. Te brewerys creation was the next movein the companys ceaseless march toward achievinghegemony over allahassees craf beer scene.Among a collection o abandoned warehouses, thrifshops and trendy artist collectives, Proo createda 10,000-square-oot plant, complete

And while theRailroad Squarebrewery is still in itsinancy, it has attractedthe patronage ocollege students andallahassee residentsalike, who flock to theaddress on the two daysa week (Friday andSaturday) its open tothe public.

In spite o Proo srapid and continuing

expansion, the companyhas maintained theeeling o a small,amily-owned, close-knit operation. Itsnot uncommon tosee Byron Burroughsroaming through thepub or the brewery;Proo team membersare quick to introducethemselves andbartenders make aclear effort to learn andremember the names o

customers, humanizinga company whosestory, at times, seemssuperhuman. It servesas a constant reminderthat Proo is not adetached behemoth, butinstead a member o theallahassee community.

Its not yet clearwhats next or Proo. For the company, expansion seemsnatural; its destiny isset, as i it has beenwritten in the stars. Teowners have expressedinterest in openingsister stores in otherareas, which means thesuccess the companyhas experienced overthe past seven yearsmight only be thebeginning or Proo.

    TO TRY

    PROOF BREWING CO.PRICE RANGE: $$

Since its advent in 2007, Proo hasearned the well-deserved reputation as theepicenter o Tallahassees (and arguablynorth Floridas) craf brewing scene. At anygiven time, the pub has literally hundreds obeers available, ranging rom big-name sta-ples to obscure craf brews. But where Prooreally stands out is in its selection o housebeers. With a selection ranging rom corebeers, like Mango Wit, to specialties, like anoak-aged Guru IPA, Proo offers what justmight be ermented gold.

    MADISON SOCIALPRICE RANGE: $$

Madison Social opened shop in mid-2013 and within months established itsel asthe heart o Tallahassees College Town. Therestaurant is a combination o restaurant, lounge and bar that lives up to the So-cial title in its name. While the emphasisremains on sociability, MadSos drinks are aperect accompaniment to the restaurantslaid-back atmosphere. The cocktails maybe topnotch, but MadSo is a reminder thatwhats more important than what youredrinking is whom youre drinking with.

    BULLWINKLES SALOONPRICE RANGE: $

Theres a saying among Tallahasseescollege student population: Everybodyloves Bulls. Its a mantra that largely holdstrueno matter who you are, what you do orwhere youre rom, theres a place or you atBullwinkles. With specials like all-you-can-drink or $10, its an aordable night outwithout the threat o snobbery that charac-terizes some o the citys over-21 bars.

    A SpiritualCleanse

Before Bill Tice was an herbalist, he was just a nurse. With Athenas Garden, Tice continues to promote

healing for the soul with herbal cures, spiritual remediesand above all: human solidarity.

    AthenasGarden

Bill Tice sits at ease on a bench outsideof Athenas Garden, holding a smallpuppya pitbull mix. He just got it today.

    How are you? I ask.

    He looks at the dog.

Im happy because I just got her.

    ***

Inside Athenas Garden in RailroadSquare Art Park, hundreds of herbalremedies, loose-leaf tea blends fromdarjeeling to sniffle tea, line the walls ofthe establishment, which serves to providenatural, herbal and spiritual remedies topatrons.

Through a small frame in the wallwith a beaded door curtain, visitors can

continue their journey to the backroom. The walls are adorned with tapestrieseverything from Wiccan statues toBuddhist artwork decorates the peculiarlittle shop.

Along the back wall sits a portrait of aglowing little girl with strawberry blonde

hair and piercing eyesshe sits like asmall fairy in the wilderness, with pinkwings adorning her charming pink dressand flowers in her hair, watching over theplace: Tices niece, Athena.

Tice was a former nurse in Coloradobefore he came to Tallahassee and openedAthenas Garden. Before that, Tice hadowned a consignment shop with a friendin his home state of New York, but that

shut down after two years due to the badlocation.

Tice began to get constant, irritatingheadaches, so his friends recommendedherbal remedies for his ailment, whichworked better than the medications hewould take for them. He began feelingdeeply passionate about studying

different herbs and natural remedies. Notlong after, Tice retired f rom nursing andwent to school to become a professionalherbalist. He moved to Tallahasseeto be closer to familyhis sister andbrother-in-law are professors at FSU,and his mother and son both moved toTallahassee as well.

Before long, Tice and his wife openedtheir personal oasis, and Athenas Gardenwas born.

    ***

Tice says his goal with the store is

to educate people of natural remediesinstead of harsh, chemically mademedicines for ail ments that dontnecessarily need it. With the store,Tice aims to promote the messageof coexistingliving together andsupporting each other in harmony.

The different religions, they have a lotmore in common than they do different,Tice said. Its using the earth to help healus instead of getting chemically made[remedies] all the time. Its all earth-basedwith the message to co-exist.

The front of the store is where over390 herbs and remedies are sold, alongwith about 80 combinations of tea blends, from fruit teas to cold remedies. Herbsoffering antianxiety properties likeKava Kava remain the most popularespecially during finals week.

A segue into the backroom throughthe beaded curtain is a bit of a changein atmosphere, offering several spiritualremedies from different spiritualdisciplines, broken up into differentsections. The first section of the store isthe earthbound belief systemsNativeAmerican spirtuality, pagan religions andWicca. The second section offers artifacts

of eastern belief systems like Buddhismand Hinduism. In the back sits theAbrahamic section, with items from theChristian, Jewish and Islamic faiths.

Dont get me wrong, I believe inmodern medicine, but I think we tendto overdo things and treat illnesses to oharshly with drugs that have more sideeffects, Tice said. Most herbs dont havethese side effects. I will try

I you ask ice what he holds dear to him, his response will beamily and community. Te amily holds close relationships with

the neighboring businesses in Railroad Square, holding benefits andevents with Te Other Side Vintage and other businesses nearby.

I had aboutnot exaggeratingabout 20 people come in andtell me, You guys should be in Railroad Square. I had never heardo it beore. So we drove down here one day, walked around onceand we just knew. Te amily originally opened in Havana, about 30minutes north o allahassee.

Te strong amilial nature o the community is what drew iceand his amily in. His avorite memory o the store is when his sonbuilt the stage that sits across rom Athenas Gardenan area thatmany local musicians use to perorm during First Friday, a monthlyblock party which takes place the first Friday o every month, with local art, music, street vendors and ood trucks. Te entireneighborhood joined to help, and it ostered a sense o camaraderie

within the town.Being able to help people with natural remedies brings a deeper

ulfillment to ice than nursing ever did.

I am much more ulfilled, and I am much more relaxed here, ice said. I still have the ulfillment o being able to help people, butI dont have agencies breathing down my neck and my supervisoralways looking over my shoulders. Im doing my own thing.

His strong connection with amily and his community seems tobring a comorting sense o ulfillment to ice, but it has not alwaysbeen easy. wo months ago, his niece Athena, the little girl the store

was named afer, passed rom a congenital heart deect. 22 monthsago his son also passed and his mother died a week beore ourinterview.

Its been crazy. Some days I dont want to come in. I want to stayon my couch. But I mean, this does give you meaning to lie.

Te ethereal portrait o Athena still remains hanging on the backwall, her wings and radiant glow making her an angelic, celestial

presence in the rooman entrancing and beautiul testament toultimate spiritual transcendence.

    ***

ices newest addition to the amily runs around Athenas Garden, jovially sniffing all o the incense and exploring through hiddencrevices in the shop. Just a puppy, ice got her only 30 minutes ago.For now, she remains nameless. But soon enough, she will becomepart o a loving amily, existing side by side with one another and therest o the world.

    And thats spiritual remedy enough.
