Although we cannot be together at the Royal Windsor Horse Show this year, we are delighted to present this handy guide to mark the occasion with your family and friends. We felt it was apropos for AMAALA, as a sponsor of the 77th Royal Windsor Horse Show, to share some of our
event planning and entertaining insights.

Start by selecting your favourite video conference platform. There are many options to choose from
including FaceTime, Zoom, Skype, Google Hangouts, etc. Make sure you are familiar with the platform you’ve
selected before your party.
Send invitations to your guests and include the Royal Windsor Horse Show Virtual Guide with your invitation.

Encourage your guests at home, and your virtual invitees, to dress up for the occasion. You can go with a smart casual theme, which means tailored
jacket and tie for the men and skirts, summer dresses or well-cut trousers for the ladies.
If your crowd includes the serious horse set, then consider making it riding attire only – boots, coat,
riding pants and your best hat or helmet.

According to Director of Food and Beverage Anthony Darroman atAMAALA, selecting a signature drink to mark the occasion is
important. Find one with your favourite ingredients or one thatincludes seasonal fruits or garnishes. We’ve included six
refreshing mocktails that are just as good, maybe even better, with a dash of your favourite tipple.
It’s vital to be very selective about the food you serve. We’veall been practicing social distancing and felt a bit locked up being
confined to our homes over the last few weeks. Use this opportunityto present flavourful and healthy dishes that include garden fresh,
sustainable produce. Try a simple approach to your foodpreparation. Focus on quality, and try to make everything using raw ingredients. For AMAALA, it is all about using natural ingredients.
Here are a few of the team’s favourite recipes.
DRINKS
Ingredients
1.5 oz club soda
4 to 5 slices of muddled cucumber
1 oz fresh lime juice
1 oz simple syrup
Instructions
Combine all ingredients and
shake with ice. Serve in
a rocks glass over crushed ice.
Garnish with rolled
cucumber slice.
Virgin Cucumber Gimlet
Ingredients
1/2 medium lemon - thinly sliced
2 cups sparkling lemonade
(or sparkling water)
1 small handful fresh mint leaves
Honey
1 cup blueberry juice (to create ice balls)
Instructions
Place lemon slices against the
interior of the glass. Add mint leaves.
Pour in the sparkling lemonade
(or sparkling water).
Top with a blueberry ice ball.
Mix in some honey, if desired.
Minty Blueberry Lemonade
Ingredients
4 watermelon chunks
4 mint leaves
1/2 shot fresh lime juice
1/4 shot elderflower syrup
1 shot cloudy apple juice
Top with ginger beer
1 mint sprig and 1 lime wedge for garnish
Instructions
Muddle watermelon chunks and mint
leaves in a Boston shaker. Add juice and
syrup. Shake and strain into an ice-filled
collins glass. Top with ginger beer.
Add the garnishes.
Nacho Figueras Polo PunchPresented by AMAALA Brand Ambassador
Mockito (Virgin Mojito)
Ingredients
4 lime wedges
8 fresh mint leaves
2 shots cloudy apple juice
2 teaspoons granulated sugar
Top with club soda
3 mint sprigs for garnish
Instructions
Muddle the lime wedges with the granulated
sugar in the bottom of a collins glass. Clap the
mint leaves then add them to the glass with the
cloudy apple juice. Fill with crushed ice and stir
thoroughly. You want the mint leaves scattered
throughout the glass so it’s more visually
appealing. Top with soda water. Crown with
crushed ice. Slap the mint sprigs on the side of
your hand and add them as the garnish.
Ingredients
Dry ginger ale and lemonade
Fruit such as oranges or strawberries
Sliced cucumber
1/8 cup fresh shredded ginger
Fresh mint
Instructions
Fill a jug with ice and add fruit, cucumber,
mint and ginger.
Add equal parts dry ginger ale and
lemonade.
Garnish with fresh mint.
Lemon Zinger
Ingredients
9 oz carrot juice
15 oz apple juice
2.25 oz ginger syrup
(1:1 ratio ginger juice/sugar)
.75 oz lime juice
Instructions
Combine ingredients
and shake with ice.
Strain into glasses.
Equestrian Elixir
HORS D’OEUVRES
Pear and Pistachio Guacamole
Ingredients
3 avocados, halved, pitted and cubed
3 firm ripe pears, cored and finely diced
2 tablespoons fresh chopped cilantro
1.5 tablespoons fresh lime juice
3/4 teaspoon ground coriander
Kosher salt
1 clove garlic, finely chopped
1 small jalapeno, minced with some seeds
Freshly ground black pepper
3 tablespoons chopped roasted pistachios
Lime wedges for serving
Assortment of fresh veggies for dipping
Instructions
Toss together the avocados and pears in a
medium bowl. Stir in the cilantro, lime
juice, coriander, ½ teaspoon salt, garlic
and jalapeno until combined. Add
additional salt and pepper to taste.
Transfer to a serving bowl, sprinkle with
the pistachios and serve with lime wedges.
Blue corn tortilla chips can be substituted
for the veggies if you want something
more indulgent.
Heavenly Hummus
Ingredients
30 oz canned chickpeas
(garbanzo beans),
drained with liquid reserved
1/3 cup chickpea liquid
1/2 cup tahini
1/4 cup olive oil
2 lemons, juiced
2 garlic cloves
1 teaspoon cumin
1/2 teaspoon salt
Garnish
Olive oil
Paprika
Fresh parsley
Instructions
Add all the ingredients to your
blender and secure the lid. Turn
the blender on high for 30 seconds
(or more for a creamier texture)
and use the tamper to push the
hummus into the blades. Add
more chickpea liquid, if desired, for
a softer hummus.
Add the hummus to a serving plate
and garnish with olive oil, paprika
and fresh parsley.
Classic Shakshuka
Ingredients
2 tablespoons olive oil
1 red bell pepper seeded and diced
1 white onion diced
1 jalapeno minced
4 cloves garlic minced
1 teaspoon ground cumin
1 teaspoon paprika
30 oz canned diced tomatoes
3/4 teaspoon salt
1/4 teaspoon black pepper
6 large eggs
3 tablespoons fresh cilantro roughly chopped
Instructions
Heat olive oil in a large oven-safe heavy skillet over
medium-high heat. Add in onion, bell pepper, and
jalapeno and sauté 5 to 7 minutes until onions are
translucent. Add in garlic, cumin, and paprika and
toast for 1 minute. Stir in diced tomatoes, salt, and
black pepper. Bring to a simmer and reduce heat
to low. Continue at a simmer for 15 minutes.
Preheat oven to 375 degrees while you wait.
Create 6 little nests in the tomato mixture to hold
the eggs. Crack eggs into prepared holes.
Transfer the skillet to the preheated oven and
cook until egg white is set, 8 to 10 minutes.
Sprinkle with fresh cilantro before serving. Serve
hot with sliced bread or flatbread.
Kale and farro salad with almonds & pomegranate
Ingredients
2 cup cooked farro (or quinoa, or other grain)
2 bunches lacinato kale ( 8-10 oz) finely chopped
8 tablespoons olive oil
2 garlic cloves, finely minced
2 tablespoons lemon zest
1 teaspoon salt
2 bunches flat leaf parsley, very finely chopped
1/2 cup red onion, finely chopped
2 cups pomegranate seeds
1 cup toasted almonds, chopped,
slivered, or sliced
2 tablespoons lemon juice, and more to taste
1 teaspoon allspice, more to taste
1 teaspoon cinnamon (optional)
Instructions
Place ½ cup of farro in a pot of salted water and bring
to a boil. Then lower heat, cover, and simmer gently
until tender for 30 to 40 minutes. Drain. Chop kale
finely and place in a large bowl. Add oil, salt,
garlic and lemon zest. Massage the kale with clean
hands until kale becomes tenderized, 4 to 5 minutes.
Add parsley, onion, pomegranate, almonds and farro.
Toss to combine and add lemon juice, allspice and
cinnamon. Mix and taste, adding more salt, allspice and
lemon to taste. If preparing in advance, taste right
before serving, the farro will soak up much of the salt
and lemon, so additional quantities of seasoning may
be required. For extra richness, add slices of avocado
right before serving.

Décor and games are an integral part of any successful party. Pull out your saddles, boots and equestrian art, and
use these props to set the mood.
You can also go with a white, red and blue theme. Drape a Union Jack in the background and celebrate the official
colours of Royal Windsor Horse Show.
