Chicken Vegetable Soup with Kale Packed with vitamins A & C, this delicious soup is both hearty and healthy! Prep Time: 10 minutes Cook Time: 15 minutes Number of Servings: 3 Serving Size: 1 cup Ingredients 2 teaspoons olive oil ½ cup onions, chopped ½ cup carrots, chopped 2 teaspoons Italian Seasoning 2 cloves garlic, minced ¾ cup tomatoes, diced 1 cup shredded chicken, cooked or canned ½ cup brown (or white) rice, cooked 1 cup kale, chopped 2 cups low-sodium chicken broth or water Directions 1. Heat olive oil in a medium sauce pan over medium-high heat. Add onions and carrots. Sauté vegetables until they are tender; about 5-8 minutes. 2. Add thyme and garlic. Sauté mixture for 1-2 minutes longer. 3. Next, stir in the water or broth along with the tomatoes, cooked rice, chicken and kale. 4.
