This guide is your key to finding Vermont’s certified organic, locally grown bounty. We are fortunate, in Vermont, to be able to eat local and organic food—you don’t have to choose! Inside, you will find all of the certified organic producers in your community and the farmers markets, farm stands, and Community Supported Agriculture (CSA) farms closest to your home—you can find everything from maple syrup to raspberries, fresh peas to chicken.

The organic seal ensures that your food is grown by farmers who are working to build the health of their soil, crops and animals. Organic producers follow strict production practices including growing crops without the use of synthetic pesticides and fertilizers, and raising livestock that are raised humanely and have access to the outdoors. Did you also know that certified organic foods are always GMO-free?

The number of organic farms and processors continues to increase in Vermont, so there are many farms and businesses to explore—in 2017, there were 719 certified organic farms and processors producing organic food on 159,496 acres in Vermont, and over 25% of the dairy farms in Vermont are certified organic! Those certified organic producers are participating in local and regional markets, maintaining working landscapes, and contributing to the success of other local businesses.

You can find certified organic products at farm stands, stores, restaurants, through mail order, or you can “pick your own” at the farm—there are so many opportunities to support Vermont’s producers.

More information is always available on our website, www.nofavt.org. So, take some time to wind your way around Vermont and engage in gustatory pleasure—each part of Vermont celebrates different tastes, and tells a different food story.

Vermont Organic Farmers (VOF), the certification program of NOFA Vermont, was created in 1985 to help producers and concerned consumers define what it meant to farm organically. These standards for organic production in Vermont were created by the farmers who were dedicated to practices that used a holistic approach to soil fertility, pest control, and plant and animal health.

In 2002, with input from the organic community, the United States Department of Agriculture (USDA) implemented the National Organic Program (NOP), which created national standards for organic food.

The role of VOF is to certify farmers and processors to the NOP standards, which ensures that producers are achieving the necessary requirements.

Our purpose is to provide a highly credible program for independent third-party verification of organic food production, and to assist Vermont farmers and processors of all types to achieve the highest possible organic standards.

Livestock are fed 100% organic feed. They do not receive conventional, genetically modified corn and soybeans, hormones or antibiotics. They also must obtain a significant portion of their diet from certified organic pasture grasses during the grazing season.

Meat from animals treated with hormones, antibiotics, or synthetic parasiticides cannot be sold as organic. Farmers use preventive healthcare practices and only approved treatments when necessary.

Processed foods (such as cheese, bread, or jam) are produced with certified organic ingredients. Artificial colors and flavors, preservatives such as nitrates, and other synthetic additives are prohibited.

Certified organic products are randomly subject to pesticide residue tests. The allowable limit of pesticide residue on organic food is just 5% of what the EPA allows on conventional produce.

Organic certification is the only label backed by clear legal definitions and independent third-party verification. All certified operations participate in an annual inspection of their premises, purchases, and practices to ensure the integrity of the organic seal.

Farmers use land management practices that protect natural resources, conserve biodiversity, and improve the health of their soil.

Farmers maximize animal welfare by raising livestock in an environment where stress is minimized and where they are able to exhibit their natural behaviors such as grazing, rooting, and scratching. Animals are given daily access to the outdoors, year round.

For maple syrup production, sap is collected using practices that ensure the long-term sustainable management of the sugarbush and promote forest ecosystem health. Maple syrup is tested for lead levels, and synthetic defoamers may not be used when boiling.

Prohibited pesticides, herbicides, and synthetic fertilizers cannot be used in crop production. Furthermore, producers must maintain buffers that prevent contamination drift from prohibited substances and neighboring GMO crops.

Organic production prohibits GMOs, including seeds, livestock feeds, and ingredients used in processed products.

The proliferation

of various claims

on food packages

today can be

dizzying. So, what

exactly do these

other labels mean?

Non-GMO The “Non-GMO Project” label verifies that a product doesn’t contain genetically modified (GMO) ingredients (or, technically, not more than 0.9% GMOs). However, a non-GMO label does not itself indicate that a product was produced organically or without the use of substances or practices prohibited in organic such as irradiation, toxic pesticides, or synthetic fertilizers.

Natural When shopping for food, do some research before buying “natural” products - the label isn’t verified and each company can use its own definition. “Natural” foods can be made with artificial and genetically engineered ingredients. Produce can be grown with pesticides and meat can be raised with antibiotics and synthetic animal feed.

Free Range Free range is a claim that implies a meat or poultry product comes from an animal that was raised in the open air. However, the only requirement is that an animal can access the outdoors- which doesn’t mean it actually does. The USDA regulates this label for poultry only; there are no legal standards for “free range” egg production, and it doesn’t limit the use of antibiotics, hormones, or pesticides.

Cage-Free Cage-free is often confused with free range. While hens laying eggs labeled as cage-free are uncaged inside barns, they may or may not have any access to the outdoors. There are no consistent standards or mandatory third-party auditing for this label and it doesn’t limit the use of antibiotics, hormones, or pesticides.

Grass-Fed The USDA has a good definition for grass-fed that requires 100% grass-based feed over an animal’s lifetime. However, the USDA stated in 2007 that it would not limit the use of the “grass-fed” claim to producers who meet their 100% standard. Because there is no verification, the label can’t tell you if the animal was actually raised on pasture, and it doesn’t limit the use of antibiotics, hormones, or pesticides.

Pasture Raised There is currently no legal definition for the term “pasture raised”. While the phrase might evoke bucolic images, and could accurately describe how an animal is raised, the label can actually mean whatever the producer wants it to mean. “Pasture-raised” has no formal definition or regulation, which means there is no enforcement behind it.

Local The state of Vermont defines “local” products as those that originated in Vermont or within 30 miles of the place where they are sold. However, the state does not conduct inspections or actively enforce this definition.

Regenerative (general claim) The term “regenerative” is a newer label claim and is generally understood to describe farming practices that (much like organic farming) promote soil health and reduce the impacts of climate change by rebuilding soil organic matter and restoring soil biodiversity. There is no consistent standard for the term “regenerative” and use of this claim does not necessarily limit usage of synthetic fertilizers, herbicides or pesticides.

Regenerative Organic Certified (“add-on” to organic certification) Regenerative Organic Certification builds upon the near 100-year legacy of the organic movement but includes additional “regenerative” requirements. Producers must first obtain organic certification and then meet additional standards that include pasture-based animal welfare, fairness for farmers and workers, and robust requirements for soil health and land management. This certification is in the pilot phase and is not yet in mainstream use. A first draft of the standards was published in September 2017 and feedback is being reviewed with the intent of publishing updated standards and launching pilot programs with producers, brands and certifying bodies for the 2018 growing season.

Seal of Quality The certified organic seal guarantees certain safeguards to your customer, verified by a third party, including no GMOs. The regulations also require annual compliance inspections, have a strict list of approved materials, require documentation of organic practices, and provide guidelines for protecting the soil ecology and water quality. For consumers concerned about this level of traceability in their food, certified organic provides that important assurance.

Access to Markets As a certified organic grower you have many choices about where to sell your product. Many buyers, including many supermarkets and distributors and most cooperatives, seek out and promote organic products because of the increasing demand for organic foods. Local Recipe

Serves 6 to 8

The DeVos family uses Vermont Smoke and Cure bacon and their own milk and butter in this hearty chowder. Find their milk, butter and other dairy products at many local grocery stores and markets!

Kimball Brook Farm Corn Chowder

1. Heat the oil in a large stockpot over medium-high heat. Add the bacon and cook until crisp, about 5 minutes. Using a slotted spoon, transfer to paper towels and drain. Leave the bacon drippings in the pot. Reduce the heat to medium and add the butter, onion, and celery; cook until the onion is soft and translucent, about 10 minutes. Add the garlic and cook for 1 minute.

2. Reduce the heat to medium-low and sprinkle the flour, celery salt, 1 teaspoon salt, and white pepper over the vegetables. Cook, stirring frequently, for 3 minutes. Slowly whisk in the chicken stock. Increase heat to medium-high, add the potatoes and bay leaf, and bring to a boil. Reduce the heat to a simmer and cook until the potatoes are almost tender, about 8 minutes.

3. Add the corn kernels, milk, basil, and dill and return to a simmer. Continue cooking until the corn is just tender, about 5 minutes. Discard the bay leaf and season with salt and pepper to taste. Sprinkle with the diced bacon, and extra basil or dill, if desired, and serve.

1 tablespoon olive oil

4 slices thick-cut bacon, chopped

1 tablespoon unsalted butter

1 medium sweet onion, diced

1 cup diced celery

1 garlic clove, minced

1/3 cup all-purpose flour

½ teaspoon celery salt

Kosher salt

1 teaspoon white pepper

5 cups low-sodium chicken stock, plus extra as needed

3 medium red potatoes, scrubbed and cut into 1/4-inch cubes

1 bay leaf

6 cups fresh corn kernels (cut from 6–7 ears of corn)

4 cups whole milk

2 teaspoons fresh chopped basil, plus extra for garnish

¼ teaspoon fresh chopped dill, plus extra for garnish
