l Slurry

Combine2Tbsp.ofcornstarchand2Tbsp.ofwaterinasmallbowl,andmixwell.

l PrepareEggWrapper

Whisk8eggs,¼tsp.ofsaltand2Tbsp.oftheslurryinabowl.

Heat1Tbsp.ofvegetableoilinapan.Addabout50mloftheeggmixtureandcookaverythinlayeroffriedeggovermedium-lowheat.Repeatwiththeremainingeggmixtureandmake8piecesoffriedegg.Setaside.

[TIP]Thickfriedeggmakesitdifficulttorollup.Pourtheeggmixturejustenoughtocoverthesurfaceofthe

pan.Ifyoucanseeexcesseggmixturewhenyoupourinthepan,pourtheexcessmixturebackintothebowl.

l Filling

Sliceapeeledonion.Shredapeeledcarrotwithapeeler.Mince8piecesofwashedmushrooms.Cut8leavesofwashedNapacabbageintofinelystrips.

Heat1Tbsp.ofVegetableoilinthepanwhichyouusedforthefriedeggsandcooktheonion,thecarrot,themushroomandtheNapacabbageovermedium-lowheatfor10minutesuntilthevegetablesbecometender.

Whenthevegetablesaretender,add1Tbsp.ofcookingSake2Tbsp.ofsoysauce¼tsp.ofsalt¼tsp.ofpepper1Tbsp.ofsesameoil1Tbsp.oftheslurrytothepan.Sautéovermediumheatfor5minutes.Setaside.

l Batter

Inabowl,combine4Tbsp.offlour,1Tbsp.ofcornstarchand½cupofwaterandwhiskwell.Setaside.

l Wrap

①Place1Tbsp.(dependsonthewrapper’ssize)ofthefillingnearthecenter.②Foldthewrapperawayfromyourself.③Foldtherightsideofthewrappertothecenter.④Rollawayfromyourself.⑤Foldtheleftsideofthewrappertothecenter.⑥Brushtheedgeofthewrapperwiththeslurry.⑦Rollupawayfromyourself.⑧Placetheeggrollsseamsidedown.Repeatwiththeremainingfriedeggs.

Inaskillet,heat½cupofvegetableoiland1Tbsp.ofsesameoilovermedium-lowheat.(Adjusttheoilamountdependingontheskilletsize--justenoughtocoverhalftheheightoftheeggroll.)Coattheeggrollsinthebatter.Whentheoilishot,fryfor6minutesovermedium-lowheat.Fliphalfway.Drainonametalrack.(Thismakestheroll’stexturecrunchy.)

Dropasmallsolidbitofbatterintotheoiltocheckthattheoilishotenough.Whenthebatterfloatswithbubbles,theoilisready.
