You ARE invited on a culinary journey WHICH WILL CHALLENGE the way you PRECEIVE TRADITIONAL CHINESE CUISINE.
Internationally trained Executive Chef of Asian Cuisine – Chef Song Yao Su heads up Imperial at The Star, developing a menu which draws from his decades of experience overseas, and his flair for combining traditional ingredients producing inspired interpretations of Asian classics.
Chef Song’s extensive experience in specific Chinese cuisines has led to an all-inclusive menu with an eclectic mix of flavours and fusion style dishes, as well as region specific items from Canton, Beijing, Szechuan, Shanghai, Hunan and national native specialties.
The splitting of Chinese cuisines is reflective by the different flavours and ingredients that feature across the diverse regions of China. Cantonese cooking mainly features live seafood and light flavours to preserve the original taste of the ingredients used. Northern Chinese style, namely Beijing cuisine features strong, bold flavours, while Shanghai cuisine flavours are slightly sweeter compared to others. Szechuan cuisine uses chilli infused oil and fresh chilli, while Hunan cuisine heavily features various dried spices.
