Tomato Soup4 cups crushed tomatoes 4 cups tomato juice or veggie BrothSimmer these together over medium heat for 30 min. Puree in small batches in blender or food processor with 14 basil leaves. (this is important - you're after smooth soup)Add:1 cup Unflavored Soy Milk or Silken tofu 1/4 lb buttersalt and pepper to tasteHeat through, being careful not to boil.
