If you ask us, San Francisco is the greatest place to eat and drink in the entire world.

We are happy to live, work and play here. We’re beyond grateful to have the diverse

bounty of mountains, fertile valleys, the ocean and the forest all available to us, and to

have world-class wine regions like Napa, Sonoma, Mendocino and the Central Coast at our

selections from our peers and inspirations throughout Europe and around the world. We

are all equals at a big, beautiful and convivial table crowded with wonderful wine, food

and friends. All we ask is that you relax, laugh and have a great time sharing in the

abundance. We are honored to have you as our guest and look forward to introducing

you to something delicious and memorable.

Although infrequent, our vintages are subject to change.

TAKE A FLIGHT TO PORTUGAL

Although Portugal’s fame in the world of wine rests squarely on the shoulders of two great

fortified wines, the country is rapidly developing an arsenal of modern table wines. We have

crafted a wine flight of dry wines to take you on a fun trip through the wine regions of Portugal.

A flight of three wines (2.5oz each) 15 Vértice, Sparkling Rosé, Douro 2013 José Maria da Fonseca, Verdelho, Península de Setúbal 2017 Quinta da Pellada, Touriga Nacional blend, Dão, Quinta de Saes 2016

From Algarve beaches to the breathtaking mountains of the north, Portugal is a land of contrasts.

In between lie verdant floodplains, rolling plains and cork forests, wetland reserves… Portugal’s

grape varieties are unique, with thrillingly different flavours. Terroir is so diverse. From north to

south, from east to west, from mountain to maritime vineyards, hot and dry or cool and green. In

every style, from fizz to port, crisp dry whites to elegant reds, in so many diverse ways,

Portuguese wines are unique.

Our sommelier team has carefuly selected a variety of wines from diverse regions of Portugal to

showcase its depth of winemaking.

Saúde!

Vértice, Sparkling Rosé, Douro 2013 (touriga franca, gouveio, malvasia fina) 64

It is in the early 80’s João Carvalho Maia, a passionate wine producer from the Douro region, traveled

to distant Napa Valley to better learn the production methods used in this historic wine region of the

United States. During his visit, he worked in the harvest and production of the world renowned -

Schramsberg Vineyards. This Napa Valley symbol of excellence has dedicated its existence to the

creation and development of quality sparkling wines according to the most rigorous traditions of the

Champagne region. At the end of the harvest season, the Portuguese producer invited the owner, Jack

Davies, to visit Portugal and study the Douro region’s potential. In June 1989, this project were born.

José Maria da Fonseca, Península de Setúbal 2017 (verdelho) 52

A family business with almost two centuries of history, and one that has known how to stay up-to-date

without ever sitting back on its laurels. José Maria da Fonseca has been making wines since 1834,

resulting from the shared passion of a family that has known how to preserve and project the memory

and the prestige of its founder.Verdelho came to fame on Portugal's islands - Madeira and the Azores-

as a base wine for fortified wines. From there it made its way to Australia, where it makes rich,

aromatic dry whites. Domingos Soares Franco is the younger brother in the sixth generation of the

family. He presents again the Colecção Privada Verdelho 2012 much in the style of what he has

tasted in his trips to Australia.

Cartuxa, Alentejo, Évora 2015 (alicante bouschet, trincadeira) 80

The wines take their name from the Carthusian monks, who since 1598 have lived a life of solitude and

prayer in the Monastery of Santa Maria Scala Coeli. The reds are a blend of the Alentejo’s most

traditional grape varieties.

Esporão, Alentejo, Reserva 2014 (alicante bouschet, aragonez, trincadeira) 77

Herdade do Esporão has 194 grape varieties planted, 37 of which are in full production. These key

varieties are the ones best suited to the Alentejo region, many of which have been used in the region

for many years. Esporão was a pioneer in introducing certain grape varieties, which, over time, have

become a trademark of the Alentejo, such as Touriga Nacional, Verdelho and Semillon, which lend

greater identity and quality to Alentejo wines. Some of these vines can be classified as old vines,

nearing 40 years of age.

Luis Pato, Beiras, Quinta do Moinho 2000 (baga) 140

If this wine hailed from somewhere in France or Italy it’d be gobbled up eagerly by collectors, likely at a

much higher price because Portugal still struggles to gain recognition for its wines other than Port. As

Eric Asimov of the New York Times noted in a recent article about Bairrada, Portuguese producers

(like Pato) have relied on local grapes to craft dry whites and reds. “Although some international

varieties can be found,” Asimov writes, “most regions stayed true to their own grapes, which perhaps

hampered efforts to market Portuguese wines outside of the country.” One exception, thanks in large

part to Pato, is Bairrada’s Baga variety, described by many as “the Nebbiolo of Portugal.”

Passadouro, Douro 2014 (touriga nacional) 85

The Quinta do Passadouro dates back to the 18th century and was always famous for its port wines.

The domain is located in the sub region of Cima Corgo near the village of Pinhão. The Passadouro

vineyard has roots with the Niepoort Port house, where it used to supply grapes for their renowned

Quinta do Passadouro Niepoort Vintage Port. Today, winemaker/owner Jorge Serôdio Borges focuses

on making top-level dry and unfortified wines from the same vineyard. Natural farming is prioritized,

and no chemical fertilizers, pesticides, or herbicides are used. Irrigation is minimal and performed only

by hand, and indigenous yeasts are used for almost all fermentation.

Quinta da Pellada, Dão, Quinta de Saes 2016 (touriga nacional, tinta roriz) 52

In the middle ages, the vineyard was essentially developed by the clergy. They knew most of the

agricultural practices and, as they had much influence upon the population, they manage to occupy a

lot of land with vines and increase the wine production. However, only after de 19th century, after the

plagues of mildew and phylloxera, the region began its true development (the Dão wine was extremely

well known by the Europeans at the time when the phyfloxera decimated the European vineyards). In

1908, the wine production area was delimited, becoming the second demarcated region in Portugal.

Viúva Gomez da Silva & Filhos, Colares 2009 (ramisco) 500ml 90

The vineyards of Collares are among the world’s most unusual in the world. The ‘estates’ are

essentially bushes of wild vines planted in pits dug out of the sand dunes of a beach near Lisbon. The

red varietal of Collares, Ramisco, must be planted, by law, in pure ocean beach sand with no more

than 10% clay content within 4 meters of the surface. The vines here are literally hundreds of years old

and produce miniscule amounts of a ravishing red that can age in the bottle nearly as long. Alas, these

amazing vines are rapidly disappearing. What was once over 10,000 hectares of vineyard land is now

down to under 100.

NAPA VALLEY

A portfolio of wines that are diverse in their geographic representation and 'Grand Cru' in quality,

all under the umbrella of one philosophy, one team, one mark. BOND became a covenant and

shared commitment to produce only the best expression of the land.

Since its debut with the 1999 vintage, the consistent hallmarks of Melbury have been plush red

fruits (currants, bing cherries), redolent with spice and the scent of violets. Elegance and a supple

texture define the structure of this wine.

Bond, Melbury 2013 1200

Bond, Melbury 2014 1200

Quella displays an almost ethereal quality of blue fruits, graphite, and a vibrant, subtle finish.

Making its debut with the 2006 vintage, the name is derived from the German word for a pristine

source or an artesian aquifer.

Bond, Quella 2013 1200

Vecina, which appeared with the 1999 vintage in the inaugural BOND release, is always powerful,

intense and savory. Vecina's other hallmarks are blackberry fruit, with wild forest floor and mineral

associated overtones.
